SWISS VEGETABLE CASSEROLE
Served hot and bubbly from the oven, this colorful and cheese-topped veggie casserole is good enough to steal the limelight from your favorite main dishes.

Steps:
- Stir the soup, sour cream, black pepper, vegetables, 2/3 cup onions and 1/4 cup cheese in a 2-quart casserole. Cover the casserole.
- Bake at 350 degrees F. for 40 minutes or until the vegetables are tender. Stir the vegetable mixture. Top with the remaining onions and cheese.
- Bake for 5 minutes or until the cheese is melted.
CREAMY ONION CHEESE CASSEROLE
Here's another side dish that can double as a meal. This onion casserole is loaded with flavor, crunch and gobs of Swiss cheese!

- *Cream of mushroom may be substituted to make the dish vegetarian.
- Preheat oven to 350 degrees F.
- In a large sauce pan or saute pan, melt the 3 tbs butter over medium-low heat. Add onions and saute until onions are limp and turn translucent (they will look pearly).
- Place onions in an ungreased 1.5-2 quart shallow baking pan.
- In the same pot used to saute the onions, add the soup, soy sauce, water and evaporated milk, adding the milk slowly, while stirring to avoid lumps. Heat through. Add any additional salt & pepper to taste at this point.
- Pour soup mixture over onions in baking dish. Add 1/3 of the shredded cheese; stir and spread onion mixture evenly over bottom of the pan.
- Top with the sliced bread. Brush tops of bread with the 1 tbs of melted butter.
- Bake at 350 degrees F for 15-25 minutes or until bread is a nicely toasted golden brown.
- Slightly press toasted bread slices down in the sauce, but do not let them get covered in the sauce! Top casserole with remaining cheese and bake for an additional 5-10 minutes or until cheese is melted and is beginning to bubble.
- Makes 6-8 side-dish servings.

- Preheat oven to 375 degrees.
- Melt butter over medium heat and saute onions and mushrooms until soft.
- Place in 12x7 baking dish.
- Sprinkle shredded swiss cheese on top.
- Combine soup, evaporated milk and soy sauce mixing well.
- Pour over cheese and onions.
- Place french bread on top and cover with swiss cheese slices.
- Cover and refrigerate 4 hours or overnight.
- Bake loosely covered for 30 minutes then uncover and bake another 15-20 minutes.
- Let stand for 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
- Bring water to a boil in a large saucepan, and sprinkle in the rice. Stir, reduce heat to low, and simmer the rice until it is half-cooked, about 5 minutes. Drain the rice, and set aside.
- Melt the butter in a large skillet over medium heat, and cook and stir the onions until translucent but not browned, about 8 minutes. Mix the cooked onions and the butter from the skillet with the rice, and stir in the half-and-half, salt, and 1 3/4 cup of the Swiss cheese. Transfer the mixture to the prepared baking dish, and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
- Bake uncovered in the preheated oven until the rice is tender and the top is lightly browned, about 1 hour.

"SWISS" ROUND STEAK WITH ONION GRAVY

Steps:
- Cut round steak into 6 serving size pieces.
- On a cutting board, dredge pieces with flour, salt and pepper.
- Pound flour into the meat with a meat mallet.
- Turn pieces, dredge, and pound until they can't hold any more flour.
- (This can be a messy process, so be warned!).
- In a large non-stick skillet, heat oil and brown steak pieces on both sides.
- Place in a covered casserole.
- Add onions and garlic to the skillet.
- Saute until onions are limp (5 minutes).
- Place onions and garlic over steak pieces in casserole dish.
- Add enough beef broth to barely cover meat.
- The flour from the meat will thicken the broth as it bakes and will make its own gravy.
- Bake at 300F for 2 hours or until fork-tender.
- Serve over noodles or mashed potatoes.

I found this recipe somewhere on the Internet a few years ago and sent it to my mom. She made it and it was very good, so it has become a staple for family dinners. It's a great accompaniment to plain roasted, baked, or grilled meats or fish, and it's just as good reheated as leftovers as it is when first made.

- Spray a large casserole dish with Pam. Set it aside.
- Slice onions into rings and separate them.
- Bring 2 cups of water and 1/2 cup of rice to a boil. Let it boil for 5 minutes; remove from heat and drain water.
- Heat 1/2 stick of butter in large skillet and add onions. Let onions sauté until translucent -- not browned.
- Turn off heat. Stir in rice and mix well. Add cheese and mix well. Add milk and stir mixture.
- Pour into baking casserole dish. Top with additional cheese if you like. Bake at 350°F for about 45 minutes.

- Peel and cut the onions in half and then quarter the halves. Slice the quarters in food processor fitted with slicing disc.
- Preheat oven to 350 degrees.
- Melt 1/4 cup butter in a large skillet and saute onions over medium heat until tender.
- Place half the onion mixture into a 1 1/2-quart oven-proof casserole.
- Sprinkle 1 cup of Swiss cheese and 1/2 cup cracker crumbs over onions. Repeat layers of onions and cheese.
