Ingredients

1 lb corkscrew macaroni (I use Medium Shells) or 1 lb medium pasta shell (I use Medium Shells)
coarse salt
1 cup prepared pesto sauce, from the refrigerated case in the supermarket
1 lemon, juice and zest of
1/4 cup fresh flat leaf parsley, chopped
1 cup grape tomatoes, halved
4 scallions, chopped
3/4 lb ricotta salata, chopped and crumbled (I use Perlini, pearl size) or 1 lb bocconcini, mini pieces fresh mozzarella cheese, drained, pieces halved (I use Perlini, pearl size)
black pepper

Steps:

Bring a large pot of water to a boil and salt it.
Place pesto, lemon zest, lemon juice, parsely, tomatoes, scallions and cheese in a large bowl.
Cook pasta to al dente then cold shock it and chill it down under cold running water. Drain well. Add to mixing bowl. Combine salad and season with salt and pepper, to taste.

1 pound cavatappi, corkscrew pasta, or medium shells
Coarse salt
1 cup prepared pesto sauce from refrigerated case in supermarket
1 lemon, juiced and zested
1/4 cup chopped flat-leaf parsley
1 cup grape tomatoes, halved
4 scallions, chopped
3/4 pound ricotta salata, chopped and crumbled, in specialty cheese case of market or 1 pound tub bocconcini mini pieces of mozzarella, drained, pieces halved

Steps:

Based on a recipe from Bon Appetit--I added the herbs I've been growing. Nice side dish for a hot summer day.

Ingredients

7 tablespoons olive oil
4 tablespoons lemon juice
3 tablespoons Dijon mustard
2 garlic cloves, minced
2 lemons, zest of, grated
salt and pepper
12 ounces penne pasta, cooked
2 cups cherry tomatoes, halved
1 1/2 cups chopped red peppers
1 1/2 cups crumbled feta cheese
1 cup chopped scallion
1/4 cup torn fresh basil
1/4 cup chopped fresh parsley

Steps:

Cook pasta al dente according to package directions; drain, rinse in cold water, drain again and place in a large bowl.
Whisk oil, lemon juice, mustard, zest and garlic in a small bowl. Season with salt & pepper to taste. Add chopped peppers, feta, scallions, and tomatoes to the pasta.
Pour dressing over and toss.
Add basil and parsley and toss.
Season with salt & pepper.

Steps:

Boil water and salt to cook pasta al dente, cold shock after cooking. Place pesto, lemon zest, lemon juice, basil, tomatoes, scallions, and cheese in large bowl. Add pasta to seasoning and salt & pepper to taste. Add EVOO if dry. May add extra tomato and/or pesto.
