And this recipe is the moment to splurge on the best-quality tuna (we love Ortiz brand) you can afford-it makes all the difference in a simple preparation like this. The meaty, sustainably caught Spanish tuna packed in buttery olive oil is worth the splurge.

4 large eggs
Juice from 1 lemon
1 lb. tomatoes, cut into bite-size pieces
1 medium shallot, thinly sliced
A pinch of sugar
Kosher salt
1/2 cup mayonnaise
1 small garlic clove, finely grated
1 1/2 tsp. sherry vinegar or red wine vinegar
1/2 tsp. hot smoked Spanish paprika
4 Tbsp. extra-virgin olive oil, plus more for drizzling
4 slices sourdough bread
2 (6-7-oz.) jars oil-packed tuna, drained
Flaky sea salt
Freshly ground black pepper
1/2 cup torn mixed tender herbs (such as dill, parsley, basil, and/or tarragon)
1/4 cup oil-cured black olives, pitted, flesh torn

Steps:

  • Bring a medium saucepan of water to a boil. Gently lower eggs into pot with a slotted spoon and cook 8 minutes. Transfer to a bowl of ice water and let cool. Peel eggs; set aside.
  • Toss lemon juice, tomatoes, shallot, sugar, and a pinch of kosher salt in a medium bowl.
  • Whisk mayonnaise, garlic, vinegar, and paprika in a small bowl; season with kosher salt.
  • Heat 2 Tbsp. oil in a large skillet over medium until shimmering. Add 2 slices of bread and cook, adjusting heat as needed, until bottoms are deeply browned, about 3 minutes. Transfer to a platter and sprinkle fried side with kosher salt. Repeat with another 2 Tbsp. oil and remaining slices of bread.
  • Spread mayonnaise over toasted side of bread. Top with tuna and tomato mixture; spoon some of the juices over. Tear each egg into 3 or 4 pieces and arrange on top; season with sea salt and pepper. Scatter herbs and olives over; drizzle with oil.

  • Paprika mayonnaise can be made 2 days ahead. Cover and chill.

PISSALADIèRE (FRENCH PIZZA)



Pissaladière (French Pizza) image

Pissaladière is the ultimate in French street food; crispy crust, caramelized onions, anchovies and salty, oil-cured olives. Because it is wonderful served both warm and at room temperature, it makes perfect picnic fare. La bonne vie is sitting on a blanket with a slice of Pissaladière and a glass of chilled, crisp white wine.

Number Of Ingredients 10

1 pound pizza dough
3 pounds onions (peeled, halved and cut into thin half-moon shapes then roughly chopped)
1/4 cup olive oil
1/4 teaspoon dried thyme or 1/2 teaspoon fresh thyme
3 garlic cloves (peeled and sliced)
1/2 teaspoon kosher salt
black pepper to taste
8-10 oil packed flat anchovy fillets (patted dry, or more to taste. See notes.)
16 Niçoise olives
1 roasted red bell pepper (stem and seeds removed, thinly sliced into strips)

Steps:

  • Preheat your oven and a pizza stone to 500°F (or up to 550°F if your oven can go higher.)
  • While the oven preheats, gently heat the olive oil in a heavy-bottomed skillet. Add the onions, thyme, bay leaf, garlic, salt and pepper, stirring to evenly coat with oil, and cook gently over medium low to low heat (lowering if necessary to prevent over-browning) for about 20 minutes, until the onions are softened and just lightly browning around the edges. Do not caramelize the onions completely or they will scorch in the oven giving a burned taste to the final product. Remove the bay leaf from the caramelized onions.
  • Dust your work surface with flour and gently stretch your pizza dough into a circle. Use a floured rolling pin to stretch the dough out until it is about 1/8-inch thick. Generously cover a pizza peel with semolina or cornmeal.
  • Spread the onion mixture (including the oil) to within 1/4-inch of the edges of the crust. Arrange the anchovies and olive halves over the top of the onions. If you're using the red bell pepper strips, arrange those artfully among the anchovies. Give the peel a gentle shake to be sure the dough isn't sticking. If it is, carefully lift that area and sprinkle more semolina or cornmeal underneath to fix it.
  • Slide the dressed dough onto the hot stone and bake for between 8 and 15 minutes, depending on the heat of your oven, or until it is evenly browned and crisp underneath. Use the peel to transfer the Pissaladière to a cutting board.
  • Cool for five minutes, cut into wedges and serve warm or at room temperature.

Use ciabatta bread mix to make this easy pizza dough, then top with red pesto, green beans, melted brie, tangy anchovies and olives

500g pack ciabatta bread mix
4 tbsp red pesto
½ red onion , thinly sliced
50g green beans , trimmed and halved
100g brie , sliced into strips
6 anchovies
8 black pitted olives , halved
handful basil leaves

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put a large baking sheet, about 38 x 28cm, in the oven to heat up. Make up the bread mix following pack instructions. Roll out the dough on a large sheet of baking parchment to a rough rectangle of about 35 x 25cm.
  • Spread the pesto over the dough, then scatter on the red onions. In a chevron pattern, arrange the beans and cheese over the top. Add the anchovies along the middle and dot with the olives. Put the pizza, on the baking parchment, onto the hot baking sheet. Turn the oven down to 200C/180C fan/gas 6 and bake for 15-18 mins. Scatter with basil leaves just before serving.

6 tablespoons salted butter, melted
1 teaspoon Italian seasoning
3 cloves garlic, pressed
1 French loaf, halved lengthwise
1/3 cup marinara sauce
1 cup grated mozzarella
4 ounces pepperoni
1 green bell pepper, sliced into rings
1/3 cup prepared sausage crumbles
1/3 cup black olives
1/3 cup jarred jalapeno slices
1/3 cup grated Parmesan
1/2 cup ricotta
3 tablespoons prepared pesto
1 lemon, zested
1 small zucchini, sliced thin
1/2 cup jarred roasted pepper slices
4 asparagus spears, sliced into 1/2-inch segments
1 cup frozen roasted corn
1 cup goat cheese, crumbled
5 to 6 fresh basil leaves, torn

Steps:

  • For the base sauce: Place an oven rack in the center of the oven and preheat to 425 degrees F. Line a sheet pan with parchment paper.
  • Mix together the melted butter, Italian seasoning and garlic in a small bowl. Place the French bread on the prepared sheet pan cut-side up. Brush the butter mixture over the bread.
  • For the fully loaded pizza: Spread the marinara sauce over one half of the French bread. Sprinkle over the mozzarella, then top with the pepperoni, green pepper, sausage crumbles, black olives and jalapenos.
  • For the garden pesto pizza: Mix together the ricotta, pesto and lemon zest in a small bowl. Spread over the other half of the French bread. Lay on the zucchini slices, peppers, asparagus, corn and finally the goat cheese.
  • Bake until the cheeses melt and become bubbly, 12 to 14 minutes. Garnish the fully loaded pizza with the Parmesan and the garden pesto pizza with the basil. Slice and serve.

One 24-ounce jar marinara sauce
1 jar prepared pesto, optional
Five 8-ounce packages fresh mozzarella, sliced
5 ounces Canadian bacon slices, halved
8 ounces canned pineapple chunks
5 tablespoons olive oil
Salt and freshly ground black pepper
One 12-ounce jar Kalamata olives, chopped
8 ounces crumbled feta
4 ripe tomatoes, diced rough
1/2 English cucumber, seeded and diced
1/2 bunch fresh parsley, chopped
1 cup sliced pepperoni
6 to 7 jalapenos, sliced
Sliced Roma tomatoes, for topping
2 tablespoons olive oil
Salt and freshly ground black pepper
1/2 bunch fresh basil
Olive oil, for sauteing
1 pound ground beef
1 teaspoon red pepper flakes
Salt and freshly ground black pepper
8 ounces grated Cheddar
1 pound browned ground beef
Chopped romaine lettuce, for topping
Diced tomatoes, for topping

Steps:

  • For the pizza base: Preheat the oven to 375 degrees F.
  • Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.
  • Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.
  • Pizza Varieties:
  • For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.
  • For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.
  • While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.
  • For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.
  • For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with basil leaves.
  • For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.
  • For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.
