ROAST PUMPKIN, SPINACH AND FETA SALAD



Roast Pumpkin, Spinach and Feta Salad image

Recipe video above. Try this Roast Pumpkin, Spinach and Feta Salad for your next Sunday lunch! Drizzled with a Honey Balsamic Dressing, this is a magical combination of ingredients. I usually serve this at room temperature but it's also great warm. Serves 2 - 3 as a meal, 4 - 5 as a side.

Number Of Ingredients 10

600 g / 1.2 lb pumpkin ((after peeling), cut into 3cm / 1.25" cubes (Note 1))
1 1/2 tbsp olive oil
Salt and pepper
2.5 tbsp / 50 ml extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp honey
Salt and pepper
1/4 cup / 35g pine nuts ((Note 2))
150 g / 5 oz baby spinach leaves (4 handfuls)
60 g / 2 oz feta (, crumbled (or more!!))

Steps:

  • Preheat oven to 220C/430F (standard) or 200C/390F (fan/convection).
  • Toss pumpkin with olive oil, salt and pepper. Spread on baking tray, bake for 20 minutes. Remove from oven, flip, then bake for a further 7 - 10 minutes until golden but not mushy. (Note 3) Loosen pumpkin with egg flip (it can adhere as it cools), then if serving salad at room temperature, leave to cool.
  • Shake Dressing in a jar. Taste and adjust to taste. I like it a bit sharp because it balances out the flavours in this salad.
  • Toast pine nuts in a dry skillet over medium heat until light golden and it smells nutty. Remove pine nuts from skillet as soon as it's ready.
  • Place Spinach in a bowl. Drizzle with a bit of dressing then toss.
  • Add pumpkin, just a bit of feta and pine nuts, then GENTLY BRIEFLY toss just to disperse the feta. (If you toss vigorously, the feta can make it look messy).
  • Transfer to serving plate. Sprinkle over remaining feta and pine nuts. Just before serving, drizzle with remaining dressing (dressing doesn't stay on baby spinach well, so worth drizzling at end). Serve!

This rich and creamy Pumpkin Ricotta Pasta Bake is a cozy baked dish with pumpkin, ricotta, spinach and rounded out with a touch of oregano. Takes minutes to prep and can easily be prepped ahead of time. Great comfort food for a warm, fall family dinner.

8 oz. rigatoni or short pasta
2 c fresh baby spinach
1 egg, beaten
1 c pumpkin purée
1 c ricotta cheese
1 ½ c shredded mozzarella
½ c parmesan cheese
½ c heavy cream (half and half or milk will work)
⅓ c vegetable broth
1 shallot, diced very small
2 - 3 garlic cloves, minced
1 tsp oregano
1/4 tsp crushed red pepper
1/2 tsp black pepper
½ tsp sea salt
Pinch of nutmeg

Steps:

  • Preheat oven to 375°F.
  • Cook pasta according to box directions.
  • While pasta is cooking, add ricotta, egg, 1 cup of the mozzarella, parmesan, broth, cream and pumpkin to a medium bowl and stir until smooth and creamy. If it is thicker than desired, you can thin it out slightly with more cream or broth.
  • Add in shallot, garlic and spices and stir to combine.
  • When pasta is cooked, drain and then toss with the spinach to wilt.
  • Add pasta to the pumpkin ricotta mixture and stir well to coat all of the rotini. Pour into a small to medium greased casserole dish or a 9x9 greased pan and bake for about 15 minutes or until slight bubbling.
  • Sprinkle with the rest of the mozzarella and bake another 5-10 minutes or until cheese is melted.
  • Cool for several minutes before serving. Store in the refrigerator in an airtight container for about 5 days.

This recipe is beautifully simple, low-fat and very good for you! It is perfect as a main course filler or a side dish wth your roast dinner, or just as a light lunch. The ingredients give it a full flavour and optimum health too!

14 ounces frozen spinach (or canned)
3 cups pumpkin, chopped into large cubes
2 stalks celery, chopped
4 carrots, peeled and chopped
2 tablespoons gourmet instant bouillon granules
2 tablespoons low-fat sour cream
2 cups water
1/2 teaspoon herbs, whatever desired

Steps:

  • Place chopped pumpkin in an oven proof dish with 1/2 a cup of water and bake on 375 for 20-25 minutes.
  • Boil remaining water in a pot with chopped carrots, celery and stock powder for 20 minutes or until soft.
  • Cook frozen spinach in a microwave safe dish for 5 minutes on high or on a stove top until warmed through - stir through the sour cream and set aside.
  • Drain the carrot/celery mixture and add it to the pumpkin dish. Using a spatula, press the vegetable ingredients down into the dish to make it like a flan.
  • Spread the spinach mixture over the vegetables. Place it back in the oven and cook on a medium temp for 15 minutes.
  • Serve with a roast or salad if desired!

  • Bring a large pot of water to a boil. Cook the lasagna noodles for 5-6 minutes, then drain.
