1 Tbsp peanut oil
1 package frozen Di Giorno Tortellini (any type)
1 package frozen stir fry vegetables
1 Tbsp soy sauce
1 Tbsp rice wine vinegar
Dash of hot chili oil
1 tsp sesame oil

Steps:

  • Heat peanut oil in hot wok. Stir fry Di Giorno tortellini until golden brown.
  • Add frozen vegetables. Add all other ingredients and stir fry until hot.

1 tablespoon vegetable oil
1 (16 ounce) package loose-pack frozen stir fry vegetables
1/3 cup stir-fry sauce (peanut or garlic flavored)
2 tablespoons water
1/8 teaspoon crushed red pepper flakes (optional)
2 tablespoons chopped unsalted cashews or 2 tablespoons peanuts

Steps:

  • HEAT oil in large skillet over medium-high heat. Add vegetables; cook, stirring occasionally, for 7 to 8 minutes or until crisp-tender.
  • STIR in cooked pasta, stir-fry sauce, water, and crushed red pepper; cook for 1 to 2 minutes or until mixture is heated through. Sprinkle with nuts just before serving.

Trying to figure what to have for dinner today that would use some on-hand ingredients...this is what transpired. It hits all the marks. Inexpensive and delicious! Hubby liked flavors, but wasn't happy with the tender crispness of the veggies. :)

¼ pound refrigerated cheese tortellini
1 tablespoon sesame oil
1 (12 ounce) package teriyaki ginger chicken meatballs
½ cup pineapple chunks, drained
1 tablespoon hoisin sauce
2 tablespoons extra-virgin olive oil
1 cup chopped broccoli florets
1 cup chopped cauliflower florets
2 carrots, chopped
½ green bell pepper, chopped
½ red bell pepper, chopped
½ small zucchini, peeled and sliced
½ cup chopped celery
4 green onions, chopped
⅛ teaspoon sea salt
⅛ teaspoon ground black pepper
1 tablespoon chopped fresh parsley
1 tablespoon grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the tortellini and return to a boil. Cook until the pasta floats to the top, 1 to 2 minutes; drain.
  • Heat sesame oil in a large skillet or wok over medium-high heat; cook and stir meatballs, pineapple chunks, and hoisin sauce until meatballs are heated through, 7 to 10 minutes. Transfer meatball mixture to a bowl and set aside.
  • Heat olive oil in the same skillet until oil begins to shimmer. Add broccoli, cauliflower, carrots, green bell pepper, red bell pepper, zucchini, celery, and green onions. Season with salt and pepper. Cook and stir until vegetables are just tender, about 5 minutes. Stir tortellini and meatball mixture into vegetable mixture until hot. Sprinkle with parsley and Parmesan cheese to serve.

4 cups venison tenderloins
3 tablespoons oil
2 cups sliced onions
1 cup sliced red pepper
1 cup sliced green pepper
2 cups sliced mushrooms
2 tablespoons finely chopped garlic
4 tablespoons soy sauce
2 tablespoons dry red wine

Steps:

  • please have all ingredients prepped before cooking; Tastes best with fresh Venison tenderloins, same day type of fresh. And as fresh as you can get with the other ingredients as well, except the wine and soysuace for obvious reasons.
  • trim the silver skin off the venison and cut into half inch thick slices.
  • I said vegetable oil but peanut or olive oil works better and grab some pepper too.
  • Preheat your large skillet or wok to smoking hot.
  • Add the oil and spread meat over the bottom in one layer without crowding.
  • You may have to do that last part in two or more batches, if you do reheat the pan EVERYTIME before adding the meat.
  • Sear the meat over high heat on one side, turn and brown on the other. This should not take more than 20 second and the meat MUST remain rare.
  • Remove the meat and add more oil if necessary, put in vegetables, mushrooms, and garlic. Sauté till heated through.
  • Season with your taste amount of pepper, wine, and the soy sauce.
  • Return meat to the skillet, stir up, and serve Immediately accompanied by rice, noodles, or bread.
  • Super awesome for outdoor or indoor cooking. Hope you guys like it!

This recipe appeared in our local paper. An unusual stir fry I haven't tried yet but plan on doing so soon. You can find more of her recipes at greenvilleonline.com at the Supper Swap blog. I think you could probably substitute boneless chicken breasts or smoked sausage for the pork. If you don't have sweet and sour sauce you could you use the packets of duck sauce you get with Chinese take-out.

1 1/2 lbs boneless pork sirloin, sliced
1 (16 ounce) bag frozen cheese tortellini
1 yellow bell pepper, seeded, halved and sliced
1 red bell pepper, seeded, halved and sliced
8 ounces baby carrots, quartered
1 sweet onion, sliced
1 (8 ounce) can pineapple chunks, drain and reserve juice
4 tablespoons sweet and sour sauce
8 counts teriyaki sauce
olive oil
salt
hot sauce (like sriracha)
pepper

Steps:

  • Fill a large pot with water to cook the pasta. Bring to a boil but do not salt.
  • Meanwhile, heat a wok or large frying on high heat. When hot add 2 tablespoons of olive oil. The oil will get hot fast. Lightly salt the pork and brown in two batches. Place in an oven-proof glass dish and set aside.
  • When water has come to a boil add the tortellini and cook for 5 minutes with 1 tablespoons olive oil. Drain pasta.
  • In the wok saute onion and carrots for two minutes. Add bell peppers and pineapple chunks (without the juice) and cook two minutes more. Add half the pineapple juice and let it reduce for two minutes. Add eight counts of teriyaki sauce and 4 tablespoons sweet and sour sauce. Stir to combine and let cook for two more minutes.
  • Add the pork back to the wok with any residual drippings and the drained tortellini. Stir to combine. Add a few twists of pepper on top.
  • Serve. You can also pass the Srirachi sauce(hot sauce) for diners which will help balance out the sweetness in the dish.

My family *LOVES* this salad, I make often in the summer with sweet cherry tomatoes from my garden, feel free to adjust all ingredient amounts and add in other ingeredints also, you can sub feta for Parmesan, use your favorite Caesar dressing or use my recipe#116849. Prep time does not include cooking the tortellini.

1 (9 ounce) package cheese tortellini (cooked and rinsed under cold water)
1 head romaine lettuce (torn into small pieces)
1 cup prepared creamy caesar salad dressing (can use less, I use Kittencal's Famous Caesar Salad)
1/4 cup grated parmesan cheese (or to taste)
10 large cherry tomatoes (cut in half)
2 cups caesar-flavor croutons (see my Kittencal's Garlic Croutons)
black pepper (to taste)
salt (optional and to taste)

Steps:

  • In a medium bowl combine the cooked tortellini with chopped lettuce, Caesar dressing and Parmesan cheese; toss well to coat.
  • Season with black pepper to taste and salt if desired.
  • Top with sliced cherry tomatoes and croutons.
  • Serve immediately.
  • Delicious!
