HEALTHIER NO-BAKE CHOCOLATE OATMEAL COOKIES
This is a healthier version of the no-bake cookies we all know and love. Lots of cocoa, more oatmeal (we use regular instead of the quick-cook kind for even more oaty texture), and less sugar and butter make us feel a little less guilty for indulging!

Steps:
- Mix sugar, cocoa, milk and salt in saucepan; boil for one minute.
- Add peanut butter, butter, and vanilla to hot mixture; stir until combined.
- Stir in oats thoroughly and drop by spoonfuls (I use a small cookie scoop) onto waxed paper. Cool thoroughly before removing from paper.
- (Note: the new nasty-tasting flaxseed peanut butters taste just fine in this recipe; add that and increase the healthiness even more!).

HEALTHY CHOCOLATE NO BAKE OATMEAL COOKIES
I altered a family favorite to give it more protien and nutrition for my diabetic husband. Spirulina and carob powder can be found at almost any health food store and bulk sections of some grocery stores.

- Prepare oats, flax, coconut, nutritional yeast, and spirulina in a large (preferably metal) bowl, mix well. Prepare flat surface equal to 2 large cookie sheets with wax paper.
- Place sugar, carob powder, butter and milk in 2 or 3 quart heavy pan on medium heat, stirring frequently to mix and help melt ingredients together.
- When mixture comes to a rolling boil, let boil 3 minutes, without stirring, take off heat, add vanilla and peanut butter and mix well.
- Add to prepared oat mixture and place on wax paper by teaspoonful. Mixture may take several hours to dry solid depending on humidity.
