1 pound fresh asparagus, trimmed and peeled (see Cook's Note)
4 tablespoons olive oil
1 teaspoon salt

Steps:

  • Preheat a grill.
  • Place asparagus on a plate. Drizzle oil over the asparagus and turn spears until they are coated. Sprinkle with salt and turn again.
  • Grill asparagus for 5 minutes over a hot grill. Each minute or so, roll each spear 1/4 turn. Asparagus should begin to brown in spots (indicating that the natural sugars are caramelizing) but should it not be allowed to char. Dripping oil may cause flare-ups. Keep a glass, or spray bottle of water handy to spritz on coals, if necessary.
  • Remove from grill and serve immediately (eating spears with your fingers enhances the experience).

3 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 tablespoon low sodium soy sauce
1/8 teaspoon black pepper

Steps:

  • Cut off tough ends of asparagus.
  • Combine all ingredients in a large zip-top plastic bag.
  • Seal and marinate for 30 minutes.
  • Remove asparagus from bag, and discard marinade.
  • Place asparagus on grill rack or grill pan coated with cooking spray.
  • Grill at medium to medium-high temperature for 5 minutes on each side or until asparagus is done.

1 lb fresh asparagus
2 tablespoons olive oil
sea salt
1/4 cup fresh parmesan cheese, grated

Steps:

  • Trim off the tough bottom of the spear by grasping each end and bending it gently until it snaps at its natural point of tenderness - usually two thirds of the way down the spear.
  • Place asparagus on a plate and drizzle oil over spears. Sprinkle with salt and then mix spears with your hands to coat.
  • Place aspargus on medium-hot grill, horizontally so they won't fall through the grates. Occasionally roll spears with the back of a spatula so they rotate and cook all around.
  • As they caramelize, asparagus should begin to brown in spots but should not be allowed to blacken or char. They are done when slightly wilted.
  • Remove from grill and sprinkle with parmesan. Serve immediately.

1/2 lb asparagus spear (estimate 12 spears)
1/3 cup parmesan cheese, freshly grated
1 whole lemon
4 garlic cloves, minced
3 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes (optional)
1 pinch black pepper, to taste
1 pinch sea salt, to taste

Steps:

  • Pre-heat barbecue on medium.
  • Cut bottom of asparagus spears until you see the bright green ends. (approximately 1/4-1/2 an inch off).
  • Place asparagus on a platter & pour olive oil over the top.
  • Cut lemon in half then squeeze lemon juice evenly over asparagus.
  • Spread garlic on top.
  • Roll asparagus around with your hands to coat evenly.
  • Sprinkle w/ salt & pepper.
  • Add Parmesan & crushed pepper.
  • Remove asparagus from platter & using tongs place them side by side on the grill.
  • Cook for 4-5 minutes on each side. (Depending on how well done you prefer it.).
  • Meanwhile cut other half of lemon into thin slices then set aside.
  • Remove asparagus from grill & place on platter.
  • Place lemon wedges around the edge of the platter surrounding the asparagus.
  • With each serving place one or two lemon slices on top of the asparagus.

Olive oil, for brushing asparagus
Salt and freshly ground pepper
4 hard-cooked eggs, yolks only
1 tablespoon finely chopped fresh tarragon leaves
2 tablespoons capers, drained
6 cornichons, diced
1 1/4 cups extra-virgin olive oil
1/4 cup white wine vinegar

Steps:

  • Preheat the grill to medium. Brush the asparagus with oil and season with salt and pepper, to taste. Grill for 2 to 3 minutes on each side, or until just cooked through. Remove from the grill and place on a serving platter.
  • Place the cooked egg yolks, tarragon, capers, cornichons, salt, and pepper in the work bowl of a food processor and pulse until just combined. With the processor running, slowly add the oil until emulsified. Add enough white wine vinegar to make the sauce thin enough to drizzle. Taste for seasoning and add more salt and pepper, if necessary. Drizzle the sauce over the asparagus and serve immediately.

Olive oil as needed, about 2 tablespoons

Juice of 3 lemons
2 tablespoons minced shallots or scallions
1/4 cup minced fresh parsley leaves

  • Snap off the woody ends of the asparagus; most spears will break an inch or two from the bottom. Peel the stalks up to the flower bud. Meanwhile, start a charcoal fire or heat a gas grill; if you're cooking indoors, heat a cast-iron or other heavy skillet over medium-high heat until it smokes.
  • To grill the asparagus spears, toss them with about a tablespoon of oil, mixing with your hands until spears are coated. Season well with salt and pepper. Grill until tender and browned in spots, turning once or twice, in all 5 to 10 minutes.
  • To pan grill the asparagus, do not oil or season them. Just toss them in the hot skillet, and cook, turning the spears individually as they brown, until tender, 5 to 10 minutes. Remove as they finish, and season with salt and pepper.

4 boneless skinless chicken breasts
2 garlic cloves, minced
12 asparagus spears
1 teaspoon olive oil
1/2 cup dry white wine (can be non-alcoholic)
1 (10 ounce) can chicken broth
3 egg yolks
2 teaspoons lemon juice
1/2 teaspoon dry mustard
1 teaspoon Tabasco sauce
1/2 cup butter, melted
1/2 cup 1% low-fat milk

Steps:

  • Asparagus Stuffed Chicken: Smear 1/2 teaspoon garlic on rough side of each chicken breast.
  • Lay 3 spears of asparagus on top of garlic, roll the breast around the asparagus and secure with toothpicks.
  • Heat oil in a large flat frying pan at medium-high heat. Brown all sides of the rolled chicken.
  • Add wine and chicken broth to pan after all the breasts have browned. Let simmer at medium heat, turning once, until liquid evaporates. Remove toothpicks!
  • Hollandaise: Beat egg yolks with a whisk in a small stove top pot (no heat yet). Add lemon juice, dry mustard and Tabasco to yolks. Whisk together to combine.
  • Melt butter until liquid, about 10 seconds. Very slowly drizzle the butter into egg yolks while whisking. Now place on medium-low heat.
  • Slowly whisk in milk until smooth. Heat through while whisking. Remove from heat. Add a little more milk if you want it thinner.
  • Serve chicken with Hollandaise sauce drizzled over top.

1 lb asparagus, fresh, thinner spears
3 tablespoons toasted sesame oil
3 tablespoons soy sauce
1/4 teaspoon black pepper
sesame seeds (optional)

Steps:

  • Soak 2-3 bamboo skewers in water for 30 minutes or more.
  • Wash asparagus and snap the ends off. *Note: Snapping the ends off with your fingers rather than cutting will prevent the asparagus from being stringy.
  • Thread the asparagus spears onto the bamboo skewers.
  • Spoon or brush the toasted sesame oil onto the asparagus.
  • Spoon or brush the soy sauce onto the asparagus.
  • Sprinkle with pepper.
  • Place on BBQ grill and cook for 3-4 minutes until tender-crisp.
  • Sesame seeds can be added after cooking or before, whichever you like better.
  • Any extra soy sauce-oil mixture can either be used for dipping or basting during cooking.
