Chicken Stew with Potatoes, it doesn't get more comforting than this! Succulent Chicken thighs and drumsticks with cripsy skin, combine with baby potatoes and a host of herbs to create a delicious one pot meal.

2 chicken thighs
2 chicken drumsticks
3 tablespoons butter
10 shallots
10-12 baby potatoes
2 garlic cloves
2 carrots
1 tsp all-purpose flour
4 thyme stems
1 tbsp tomato paste
1 cup chicken broth

Steps:

  • Peel shallots, garlic cloves, carrots and potatoes
  • Chop carrots into bite size pieces
  • In a large pot melt 1.5 tablespoons of the butter on medium heat
  • Add shallots, garlic cloves and carrots
  • Saute for 5 minutes on medium-low heat
  • Add all-purpose flour and saute for another 2 minutes
  • Remove veggies from pot and set aside
  • Melt remaining butter in same pan
  • Add chicken thighs and drumsticks and saute for 4 minutes on each side until golden brown on medium heat
  • Add in veggies, chicken broth, tomato paste, thyme stems and peeled potatoes
  • Close pot with lid and cook on medium heat until everything is tender for 25-30 minutes

1 tbsp olive oil
6 bone-in chicken thighs, skin removed
12 rashers smoked streaky bacon, chopped
200g shallot
350g baby new potato, larger ones halved
few thyme sprigs
200ml white wine
500ml hot chicken stock
280ml pot buttermilk (optional)
squeeze lemon juice
2 tbsp tarragon, chopped

Steps:

  • Heat the oil in a large saucepan, or if your slow cooker has a browning function, then use this. Brown the chicken thighs for about 10 mins, until they have a nice golden colour, then remove and set aside. Tip in the bacon and shallots, and brown these, too.
  • Tip everything apart from the buttermilk, lemon juice and 1 tbsp tarragon into your slow cooker. Simmer on High for 4-6 hrs, until the chicken is really tender and falling off the bone.
  • Check the sauce; if you like it a little thicker, strain liquid into a pan and boil until thickened. Pour in the buttermilk, if using, and whisk until smooth. Sprinkle in the lemon juice and remaining tarragon, season, then return chicken, bacon and veg if you need to.

1 1/2 lbs. chicken thighs, boneless, skinless, cut into 2-inch chunks
2 Tbsp. avocado oil, divided
3 medium carrots, peeled and sliced diagonally into 1/2-inch pieces
1 medium sweet onion, cut into 12 wedges
6 garlic cloves, chopped
5 cups chicken broth or stock, divided
2 Tbsp. all-purpose flour
1 dried bay leaf
12 oz. baby white potatoes, scrubbed and quartered
1/4 cup fresh chopped parsley
Kosher salt and freshly ground black pepper

Steps:

  • Pat dry the chicken with a few sheets of paper towel and season thoroughly with salt and pepper, to taste.
  • Heat 1 tablespoon of oil in a heavy-bottom dutch oven or a soup pot over high heat. When oil is hot, add chicken and cook, stirring occasionally, until brown on all sides, about 5-6 minutes total. The goal here is to simply brown the chicken on the outside and extract some of its flavor. Make sure to use high heat, otherwise, the chicken will steam out and not brown. Transfer to a plate.
  • Reduce heat to a medium and add the remaining 1 tablespoon of oil. Add carrots and onions. Cook, stirring often until onions begin to soften and tips turn golden, about 4-5 minutes. Add garlic and cook for about 30 seconds or until fragrant, while stirring nonstop. Add 1/2 cup chicken broth while stirring and scraping to loosen browned bits from the bottom of the dutch oven.
  • In a small bowl, whisk together flour and 1/2 cup broth; add to the dutch oven. Stir in chicken and remaining 4 cups of chicken broth. Add bay leaf and season with salt and pepper, to taste. Bring back to a boil, reduce heat to medium-low and simmer for 25 minutes, partially covered.
  • Add potatoes and cook uncovered until potatoes are tender, about 18-20 minutes. If needed, increase the heat so the stew is at a gentle simmer. Also taste the broth for salt and pepper and add more if needed. Stir in parsley and discard bay leaf before serving.

1 1/2 pounds boneless skinless chicken thighs
1 tesapoon salt
1/2 teaspoon pepper
2 Tablespoon unsalted butter
1 large onion, large dice
3 medium carrots, sliced into 1/2 inch slices
3 ribs celery, large dice
1/2 cup dry sherry
1 teaspoon fresh thyme
2 teaspoon fresh sage
3 whole bay leaves
1 1/2 pounds mini tri-color potatoes, cut in half
4 cups chicken stock
2 Tablespoon cornstarch
parsley for serving, if desired

Steps:

  • Preheat oven to 350 degrees. Season chicken on both sides with salt and pepper.
  • Heat butter in a large dutch oven over medium high heat. Add in chicken and sear on both sides until golden brown, 2-3 minutes a side. (You just want to get color on the chicken it won't be fully cooked). Remove the chicken from the pan and set aside.
  • Add in the carrots, onion and celery to the pan and saute for 5 minutes.
  • Add in the sherry to deglaze the pan. Scrap the brown bites off the bottom of the pan.
  • Return the chicken to the pan along with the chicken broth, thyme, sage, and bay leaves. Cover and place in the oven for 1 hour.
  • Carefully remove the pot from the oven and add in the potatoes. Return back to the oven and cook for 30 more minutes or until the potatoes are tender.
  • To thicken the stew remove 1/4 cup of the chicken broth liquid to a small bowl and whisk in 2 tablespoons of cornstarch. Add the mixture to the pot and bring to a rolling simmer on the stove. Cook for 1-2 minutes or until the sauce is thickened.
  • Remove bay leaves and top with fresh parsley and serve immediately with crusty bread for serving!

2 tablespoons cornstarch (optional)

Steps:

  • Clean and cut up all the ingredients.
  • Place in your soup pot.
  • Add the chicken stock and enough water so there is an inch of fluid above the vegetables.
  • Bring to the boil, then reduce the heat to medium and cook for 20 minutes.
  • Turn the heat down to low and simmer till the green beans are tender.
  • Add a little more broth or water if this gets too dry.
  • Add the cornstarch/water mixture if you want it a little thicker.
  • Serve with cornbread - Yummy!
  • Note: What I mean by ham steak is those one big slice of ham packages.
  • You won't need to add salt - the ham has enough for the dish.
  • This also works in the crockpot.
  • Boil the potatoes, then add everything to the crockpot 6 - 8 hours on low.

Stir in 1 1/2 cups water and next 4 ingredients (through thyme). Stir in puréed corn mixture, remaining 2 1/2 cups broth, and remaining 1 cup corn. Return chicken thighs to cooker. Turn cooker off.
  • Close and lock the lid of the Instant Pot®. Turn the steam release handle to "Sealing" position. Press [Manual]; select "High Pressure," and use [-] or [+] to choose 23 minutes pressure cooking time. When time is up, open the cooker using Quick Pressure Release (page 4). Remove chicken from cooker; cool slightly.
