- Cook in broth 20 minutes.
NEVER FAIL (HOMEMADE) NOODLES
This is the homemade noodles Mom always made when I was growing up. For our family she had to double this.

Steps:
- Mix well and add enough sifted flour to make a soft dough that doesn't stick when you roll it out.
- Roll very thin.
- Dust with flour.
- Roll up and cut into noodles.
- Unroll cut noodles.
- Sprinkle a little flour over noodles before putting them into broth to cook.

- Spread (or hang on noodle dryer) out to dry; store in air tight container.
- Check for doneness by testing a noodle to see if the center is cooked completely through. There should be no dryness in the center of the noodles.
OLD-FASHIONED HOMEMADE NOODLES
This is another old family recipe that I grew up eating and love to cook now. I began working at a grocery store when I was 16 (many, many years ago :-) ) That was the first that I ever knew you could buy noodles! My mom had always made them from scratch! These are a great side dish simply cooked in the boullion or broth or a great meal when cooked with cooked chicken, turkey, or beef. (Note: Preparation time does not include drying time).

Steps:
- Measure flour into bowl and make a "well" in the flour.
- Drop the remaining ingredients into that "well."
- Work dough until it is stiff.
- Roll very thin.
- Let dry a minimum of two hours then cut into strips (I use a pizza cutter to cut the strips). You may dry longer.
- Bring boullion to a boil. If you are cooking the noodles with meat, you will want to bring the cooked meat to a boil with the broth.
- Add noodles and bring back to full boil. Lower heat to low-medium and cover pan.
- Cook covered for 18 - 20 minutes.

NEVER FAIL EGG NOODLES
These are very tender noodles, I usually double the recipe and freeze the ones I don't cook right away.

- 1. Beat egg and yolks until light and fluffy. Add water and salt mix. Stir in flour then turn out onto a lightly floured counter and knead until smooth. This could take up to 5 minutes, don't give up it will be worth it. Cover the dough with a damp towel and let rest for 10 minutes
- 2. Roll out the dough to about 1/8th inch thick or however you like them. Cut your noodles to desired size. If you don't have a pasta machine just use your pizza cutter. At this point you can cook the noodles, or let them dry over night and then put them in plastic bags and freeze for up to one month.
- 3. In a large pot bring your water to a boil, add some salt to the water. Boil the noodles for 3 to 5 minutes. Then serve with butter or your favorite sauce. If you want chicken and noodles boil in the chicken broth.

- In a small bowl, combine the flour and salt. Make a well in the center. In another bowl, beat the egg yolks, egg, water and oil; pour into well. Stir to form a stiff dough., Turn dough onto a well-floured surface; knead 8-10 times. Divide into thirds. Roll each portion to 1/8-in. thickness. Cut noodles into 1/4-in. strips; cut the strips into 2-in. lengths. Cook immediately in boiling broth for 5-7 minutes or until tender; drain.

- Mix eggs, milk and salt together until smooth. Stir in one cup of flour until smooth. Add additional flour, just a small spoonful at a time, until the dough comes together in a ball, but is still slightly sticky.
- Dump dough out onto a floured surface. Use well floured hands to knead the dough with your hands, until it's no longer sticky, about 3-5 minutes.
- Use a sharp knife or pizza cutting wheel to cut the noodles into long strips, however narrow or wide you like. I like to roughly gather them with my fingers into a pile to make them more shapely, and not so flat. You could even twist some with your fingers to make them prettier.
