This is my version of Ben & Jerry's Chunky Monkey Ice Cream (my favorite!) in a cake. The hardest part is waiting for it to cool. -Barbara Pryor, Milford, Massachusetts

1 package yellow cake mix (regular size)
1-1/4 cups water
3 large eggs
1/2 cup unsweetened applesauce
2 medium bananas, mashed
1 cup miniature semisweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the cake mix, water, eggs and applesauce; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in the bananas, chips and walnuts. , Transfer to a 10-in. fluted tube pan coated with cooking spray and sprinkled with flour. Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

This banana cake is delectably moist, perfectly sweet and easy to make. Dark brown sugar and sour cream add depth to the batter, and we added melted butter instead of vegetable oil for a flavor boost. Fluffy cream cheese frosting and swirls of dulce de leche will make you go back for seconds. We also upped the ante by using bananas in two ways -- fresh bananas are mixed into the cake while maple-candied banana chips create a crunchy topping.

Nonstick cooking spray
6 very ripe bananas
2 1/2 cups packed dark brown sugar
2 sticks (1 cup) unsalted butter, melted
1 cup sour cream
4 large eggs
1 tablespoon pure vanilla extract
4 cups all-purpose flour (see Cook's Note)
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
6 ounces cream cheese, at room temperature
1/4 teaspoon kosher salt
2 cups confectioners' sugar
1 teaspoon pure vanilla extract
1 1/2 tablespoons dulce de leche
1 1/2 tablespoons maple syrup
1 cup banana chips

Steps:

  • Preheat the oven to 350 degrees F and line a 9-by-13-inch baking pan (see Cook's Note) with aluminum foil, leaving a 2-inch overhang on the two longer sides. Lightly spray the foil with nonstick cooking spray.
  • For the cake, mash the bananas in a large bowl with a fork or potato masher until very smooth. Whisk in the dark brown sugar, melted butter, sour cream, eggs and vanilla until smooth and combined. In a separate large bowl, whisk together the flour, cinnamon, baking soda and salt.
  • Fold the dry ingredients into the banana mixture in thirds until just combined. Pour into the prepared baking pan and smooth the top. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour. Leave the cake in the pan to cool slightly, about 30 minutes. Use the foil overhang to remove the cake from the pan, then transfer to a wire rack to cool completely.
  • Meanwhile, beat the butter, cream cheese and salt in a large bowl with an electric mixer on medium speed until smooth. Reduce to low speed, then add the powdered sugar a cup at a time until smooth. Increase the speed to medium-high and beat until fluffy, 1 to 2 minutes. Beat in the vanilla extract.
  • Transfer 1/2 cup of the frosting to a small bowl and stir in the dulce de leche until smooth. Cover both frostings with plastic wrap and keep at room temperature until ready to assemble the cake.
  • For the candied banana chips, warm the maple syrup in a medium nonstick skillet over medium heat until it just starts bubbling. Add the banana chips and cook, tossing and stirring frequently with a rubber spatula, until the chips have absorbed almost all the maple syrup and are browned in spots, 3 to 4 minutes. Immediately transfer the banana chips to a baking sheet, spread in an even layer and cool completely. Once cool, roughly chop.
  • Transfer the cake to a serving platter. Spread about 3/4 cup plain cream cheese frosting all over the top of the cake.
  • Dollop the dulce de leche frosting and remaining plain frosting on top, then use a small offset spatula to swirl both frostings together in a swooping design, making sure the frosting goes all the way to the edges of the cake. Top with the chopped candied banana chips.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, mix flour, sugar, baking powder and salt.
  • In a separate bowl, combine bananas, egg, melted butter and milk.
  • Stir banana mixture into flour mixture until blended. Be careful not to over mix.
  • Stir in chocolate chips.
  • Pour batter into 9x13 inch pan. Bake at 350 degrees F (175 degrees C) 30 to 35 minutes, or until a toothpick inserted into center of cake comes out clean. (It will have some melted chocolate, but no crumbs.)

4 bananas (organic, which tend t be smaller)
2 eggs
3/4 cup sugar (try turbinado, which has molasses)
1/2 cup applesauce (flavored OK)
1 teaspoon vanilla
1/2 teaspoon salt
1 1/3 cups whole wheat pastry flour (all-purpose OK)
1 teaspoon baking soda
1/4 cup mini chocolate chip
2/3 cup walnuts, chopped

Steps:

  • Mash bananas; push to side, leaving a space along bowl's side.
  • Beat eggs along empty side of bowl, then combine with bananas.
  • Stir in sugar, applesauce, vanilla and salt.
  • Shake lightly and evenly across surface of batter, the flour and soda; mix just enough to incorporate.
  • Stir in chocolate chips and walnuts. Go easy on chocolate chips because they can overwhelm the cake.
  • Pour into greased and floured 7"x11" pyrex glass baking dish (or muffin tins, bundt rounds, etc).
  • Bake 40 minutes at 350-degrees (less for muffins, etc.).
  • Frosting is unnecessary but cream cheese (8 oz) & butter (4 Tb) with any flavoring (any syrup, orange concentrate) is yummy.

1/2 cup butter or 1/2 cup margarine, cut in 1/4 chunks
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 large bananas (very ripe)
1 teaspoon baking soda
3/4 cup plain yogurt or 3/4 cup sour cream
1 teaspoon baking powder
2 cups flour
1 cup chocolate chips
3/4 cup chopped pecans (optional)

Steps:

  • Process butter, sugar, eggs and vanilla for 2 minutes, scraping down bowl once or twice.
  • While machine is running, drop chunks of bananas through the feed tube. Process until blended ( I mash my bananas before hand).
  • Meanwhile, dissolve baking soda in yoghurt or sour cream. Let is stand for l to two minutes Yoghurt will nearly double in size, so use a 2 Celsius measuring cup.
  • Add to batter and process for 3 seconds.
  • Add flour and baking powder.
  • Process with 4 quick on/off turns, just until flour mixture disappears.
  • Add remaining ingredients.
  • Bake in 2 greased and floured 8 inches pans for 25-30 minutes at 350°F
  • (I also use waxed paper on the bottom of the pans - just cut a circle for the bottom - it makes it easier to take the cake out ) or until cake tester come out clean.
  • Cool for 10 minute
  • Remove from pan.
  • Cool before icing.
  • Butter Icing.

  • 1/4 cup butter.
  • dash of salt.
  • 2 cups icing sugar.
  • 2-3 tablespoons hot milk or cream.
  • 1 teaspoons vanilla.
  • 2/3 cup cocoa plus 4 more tablespoons butter.
  • Combine all ingred. and process until smooth and blended Ice the cool cakes.

1 2/3 cups sugar (or more or less to suit taste)

1 cup mashed banana (about 3 medium)
2 cups cake flour

Steps:

  • Set oven to 350 degrees F.
  • Grease a 9 x 5-inch loaf pan OR 3 mini loaf pans.
  • In a bowl, cream together the butter or margarine and the sugar, until light and fluffy.
  • Add in the eggs and the salt; beat until well mixed.
  • In a small bowl, dissolve the baking powder and the baking soda in the sour cream, and add to the creamed mixture; mix well until blended.
  • With a wooden spoon, stir in the banana pulp.
  • Gradually, add in the flour mixture, vanilla; mix well with a wooden spoon, until well combined.
  • Add in the chocolate chips, and the chopped nuts (if using).
  • Transfer the batter into a prepared baking pan.

CHOCOLATE BANANA CHOCOLATE CHIP BUNDT CAKE

After first trying this years ago my 2nd son declared -who needs banana bread?! - and this became our favorite choice for doing away with overripe bananas. The recipe originally had an optional chocolate glaze, I've always skipped it and just added a light dusting of confectionary sugar. This is a pretty sturdy cake which makes it great for picnics, potlucks and lunch bags - the same son recently took 1/2 a cake with him for the drive back to S.CA! An extra note - seeing some of the comments - this is not a tall cake it only rises a littel more than half way up the pan. Ovens are different - go with a shorter cooking time and check to see if needs more.

Steps:

  • Preheat oven to 350 degrees, grease or spray a bundt pan and lightly dust with cocoa powder.
  • Mix together dry ingredients, set aside.
  • Cream butter, add sugar and eggs, mix well,then add bananas and mix briefly.
  • Mix in dry ingredients until incorporated, don't over mix, stir in chocolate chips.
  • Pour into prepared pan and bake 50- 60 minutes until it tests done, cake will just start to pull away from edges.
  • Cool slightly then remove from pan.
  • Your supposed to let it cool all the way then dust with confectionary sugar, but my kids always slice it warm, which is good with vanilla ice cream .
  • Note:.
  • I always use a pan release spray and dust with the cocoa, and have almost never had a problem with the cake sticking. If greasing the pan - do it well and use a bit more cocoa as you would flour.

This cake is so good it should be illegal! It's very easy to make, just throw all the ingredients into the mixing bowl and let the beaters do the work. I got this from Betty Crocker's Cookbook 1978, my husband's kitchen bible from his bachelor days.

2 1/3 cups all-purpose flour
1 1/3 cups sugar
1 1/4 cups bananas, fully ripe, mashed (about 3 medium)
2/3 cup butter
2/3 cup buttermilk (I use soured milk)
3 eggs
1 1/4 teaspoons baking powder
1 1/4 teaspoons baking soda
1 teaspoon salt
1 cup semi-sweet chocolate chips
3 cups powdered sugar
1/3 cup butter, Softened
1 1/2 teaspoons pure vanilla extract
2 -3 tablespoons milk or 2 -3 tablespoons half-and-half

Steps:

  • Heat oven to 350 degrees. Grease and flour oblong pan, 9x13x2 inches.
  • Beat all ingredients, except chocolate chips, in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes.
  • Stir in chocolate chips by hand.
  • Pour batter into prepared pan.
  • Bake until toothpick or cake tester inserted in center comes out clean, approximately 45 minutes.
  • Cool cake completely and frost with Vanilla Butter Frosting.
  • To make VANILLA BUTTER FROSTING:.
  • Blend powdered sugar into butter.
  • Stir in vanilla and milk.
  • Beat until frosting is smooth and of spreading consistency.
  • Hint #1. For best results, be sure the bananas you use for cakes are fully ripened. If you use firm bananas, the cake will not have the fragrance or the flavor.
  • Hint #2. To sour milk: Add 1 tablespoon white vinegar or lemon juice to 1 cup of milk. For this recipe, use 2 teaspoons vinegar or lemon juice for 2/3 cup milk.
  • Hint #3. When it comes to homemade frosting, I usually increase the recipe by one-half; so in this case, I used 4 ½ cups powdered sugar, 7 ½ tablespoons butter, and 2 ¼ teaspoons vanilla (using the same measuring spoons, 1 ½ teaspoons first, and then ½ and ¼ teaspoons vanilla).
