Steps:
- Make the pickle mustard sauce by combining the mayonnaise, mustard and cornichons in a bowl. Chill until needed.
- Heat the barbecue and wait until the coals turn ashen. Alternatively, heat a griddle pan over a high heat. Cook the sausages for 7-8 mins, turning regularly until evenly browned and cooked through, then push the sausages together on the grill or in the pan and scatter with the grated mozzarella. Cook undisturbed for 2 mins more, or until the cheese has melted.
- Split the hot dog buns open and stuff each one with a cheese-topped sausage. Drizzle over the pickle mustard sauce and top with crispy onions and ketchup, if you like.

- Put 1 cup of the flour in a shallow bowl and set aside. In another bowl, whisk together the remaining 1 cup flour, the beer and Cajun seasoning. Let the batter sit for 5 minutes.
- Pour enough oil into a 3- to 4-quart saucepan to reach a depth of 2 inches. Heat the oil over medium-high heat until a deep frying/candy thermometer clipped to the side of the pan without touching the bottom registers 350 degrees F.
- Dredge the pickles and peppers in the flour, shaking off any excess. Dip into the batter and coat completely, then transfer to the oil. Fry, turning with tongs, until golden brown on all sides, 2 to 3 minutes total. Drain on paper towels and serve.
CHEESY PIZZA HOT DOGS

- Preheat the oven to 450˚ F. Coat a baking sheet with cooking spray. Divide the pizza dough into 6 equal pieces. Roll each piece of dough into a long, thin rope about four times the length of a hot dog.
- Slice each piece of string cheese in half lengthwise. Slice each hot dog lengthwise, making sure not to cut all the way through. Place 1 piece of cheese in each sliced hot dog.
- Wind a rope of pizza dough around a hot dog from one end to the other. Repeat with the remaining hot dogs and pizza dough.
- Place the wrapped hot dogs on the prepared pan. Bake until the dough is golden brown, 15 to 18 minutes.
NINJA PEPPER RELISH
Steps:
- Coarsely chop the sweet, serrano and habanero peppers. Add them to a food processor, along with the garlic, cilantro, vinegar, agave, lime juice, black pepper, coriander and salt. Pulse until nicely chopped. Add more lime juice or agave to taste.

- Light a grill or preheat a grill pan. Grill the pickle slices over high heat, turning once, until lightly charred on both sides, 3 to 5 minutes. Transfer to a work surface to cool, then finely chop.
- In a medium saucepan, heat the oil. Add the onion and a generous pinch of salt. Cook over moderate heat, stirring occasionally, until softened, 5 minutes. Add the vinegar, sugar and mustard seeds and simmer for 5 minutes. Remove from the heat and stir in the pickles; let cool completely. Fold in the parsley and season with salt.
- Relight your grill or heat the grill pan. Grill the hot dogs over moderate heat, turning occasionally, until cooked through, about 5 minutes. Serve the hot dogs in the buns with the relish.
