My boys LOVE this soup! It's a 'stick to your ribs' soup that everyone will enjoy. Sherry helps to deepen the flavor while half-and-half cream gives an added richness to the soup.

3 pounds butternut squash, halved and seeded
2 tablespoons butter
1 medium onion, sliced
1 leek, sliced
2 cloves garlic, sliced
2 (49.5 fluid ounce) cans chicken broth
2 large russet potatoes, peeled and quartered
⅛ teaspoon cayenne pepper
⅛ teaspoon ground allspice
⅛ teaspoon ground nutmeg
⅛ teaspoon ground ginger
salt and pepper to taste
½ cup sherry wine
1 cup half-and-half cream
½ cup sour cream

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Pour a thin layer of water in a baking dish, or a cookie sheet with sides. Place the squash halves cut side down on the dish. Bake for about 40 minutes, or until a fork can easily pierce the flesh. Cool slightly, then remove the peel. Set aside.
  • Melt the butter in a large pot over medium heat. Add the onion, leek and garlic, and saute for a few minutes, until tender. Pour the chicken broth into the pot. Add the potatoes, and bring to a boil. Cook for about 20 minutes, or until soft. Add the squash, and mash with the potatoes until chunks are small. Use an immersible hand blender to puree the soup, or transfer to a blender or food processor in batches, and puree until smooth. Return to the pot.
  • Season the soup with cayenne pepper, allspice, nutmeg, ginger, salt and pepper, then stir in the sherry and half-and-half cream. Heat through, but do not boil. Ladle into bowls, and top with a dollop of sour cream.

I use pre-cut, cubed squash when I can find it. You can also use fresh butternut squash. (The prep time assumes you are using pre-cut squash.) I use almond milk in this recipe (I like Almond Breeze) instead of cream or half and half. You can save a little time by roughly chopping the onion and garlic, because the soup will be pureed later.

24 ounces peeled and cubed raw butternut squash (weighed after peeling)
1 medium red bell pepper, cut into strips
3 small carrots, sliced
1 medium stalk zucchini, peeled and thickly sliced
1 -2 tablespoon oil
1/2 large onion, chopped
2 -3 garlic cloves, minced
4 cups chicken broth (I use organic low-sodium)
1 -2 teaspoon cumin (or to taste)
1 -2 teaspoon sweet Hungarian paprika (or to taste)
almond milk (I use Almond Breeze original)
fresh ground pepper
salt
2 -4 teaspoons red wine vinegar (optional)
cayenne pepper (optional)

Steps:

  • 1. If you are using a fresh butternut squash, cut it in half lengthwise and scoop out the seeds. Peel it and cut it into 1-inch chunks.
  • 2. Heat the oil in a large soup pot over medium heat. Add the onion and red pepper. Cook until it softens, stirring occasionally, about 5 minutes. Add the garlic and cook for about 3 minutes. Regulate the heat and do not let the vegetables brown.
  • 3. While the onions are cooking, peel and cube the zucchini.
  • 4. Add the cubed squash, carrots, zucchini and broth and bring to a boil. Lower heat and cook at a gentle boil until the squash is fork-tender, about 25 minutes (but this depends on the size of your veggie cubes).
  • 5. Puree the soup in several stages in a blender. For safety's sake, since the soup is hot, do not fill the jar more than about 1/4 full each time, and blend on a low speed, covering the lid with an oven mitt. The soup should be completely smooth and a little thicker than heavy cream.
  • 6. Rinse your soup pot to remove any small chunks of food and strain it if you like (I do not strain).
  • 7. Heat the soup through again and season to taste with cumin, paprika, pepper and salt.
  • 8. Add the vinegar and/or cayenne pepper, if desired.
  • 9. Add some almond milk, a little at a time, to give soup a creamier consistency. (Instead of almond milk or Almond Breeze, you could probably use soy or rice milk or half and half).
  • 10. This soup tastes fine when it has been reheated. The soup will thicken as it chills, so you may want to add extra spice right at the start, if you know you will be re-heating some later. You will need extra Almond Breeze to thin it out after it has been refrigerated. I have kept it in the fridge for as long as 4 days and it was fine.
  • 11. Because the veggies make the broth very flavorful, you can also use half chicken broth and half water (2 cups of each) with good results.

I wanted to make a soup at Thanksgiving which celebrated my Indian Heritage as well as my life in America. Being a vegetarian myself, I know how hard it is to find soups which are friendly to vegetarians and vegans. This is a great soup for Vegans as it uses coconut milk instead of cream. It is a sweet and spicy soup.

3 tablespoons grapeseed oil or 3 tablespoons canola oil
1 medium butternut squash, peeled, seeded and cubed
1 1/4 cups onions, chopped
1 1/4 cups carrots, chopped
4 celery ribs, peeled and chopped
2 garlic cloves, minced
3 scallions, chopped
32 ounces vegetable stock (unsalted)
2/3 cup coconut milk
1 teaspoon turmeric
1/2 teaspoon ground cumin
1/2 teaspoon cumin seed, Toasted and ground
1/2 teaspoon cayenne (add more or less depending on spice preference)
1 teaspoon ground coriander
1/3 teaspoon garam masala
salt
pepper

Steps:

  • Heat oven to 400 degrees.
  • Place butternut squash in a cookie sheet, drizzle with 2 tbsp of oil, sprinkle 1/4 tsp of salt and pepper. Roast until squash is tender but not mushy. Stir the squash during the roasting process for even cooking.
  • While the squash is roasting, heat 1 tbsp of oil in a large pot over medium heat. Add onion, carrots and celery. Once the onion is translucent, add garlic and green onion, stir and cook for 1 minute. Turn the heat on low, add all the spices to the pot, stir and cook for 2 minutes. Add roasted squash and stock. Cover and simmer for 15 to 20 minutes. Turn off heat. Puree soup using a stick blender or in a blender (If using a blender, pour soup back in pot). Stir in coconut milk. Salt and pepper to taste. Turn heat on low and warm through.

My Spiced Butternut Squash, Sweet Potato, Carrot and Orange Soup image

This was inspired by my other butternut squash soup recipe (#402703). The orange flavoring is optional. I use pre-cut, cubed squash when I can find it or frozen squash. You can also use a small fresh butternut squash. (The prep time assumes you are using pre-cut or frozen squash.) I use almond milk in this recipe (I like Almond Breeze) instead of cream or half and half. You can save a little time by roughly chopping the onion and garlic, because the soup will be pureed later. I do chop the ginger rather finely because it is so fibrous, and I don't want lumps in the soup that didn't get pureed.

1 large sweet potato, peeled and cut in 1/2 inch dice (I used one that weighed almost a pound before peeling)
3 small carrots, sliced
1 -2 tablespoon oil
1/2 large onion, chopped
2 -3 garlic cloves, minced
1 1/2 tablespoons minced fresh gingerroot
4 cups chicken broth (I use organic low-sodium)
1/4 teaspoon cinnamon (or more to taste)
1/4 teaspoon nutmeg (or more to taste)
almond milk (I use Almond Breeze unsweetened original or unsweetened vanilla)
fresh ground pepper
salt
fresh orange juice (optional)

Steps:

1 cup peeled diced sweet onion
2 medium carrots, peeled and chopped
4 fresh garlic cloves, finely chopped
2 tablespoons cayenne pepper
3 (14 ounce) cans fat free chicken broth
2 tablespoons fat free butter substitute (no trans fat)
2 tablespoons salt
1/2 cup fat-free sweetened condensed milk
light sour cream, a dollop as a garnish (fat free or light) (optional)

Steps:

  • Peel and seed the squash and cut into small chunks.
  • Place the squash, chopped onion, and carrots into a large pot with the cayenne pepper,salt, garlic, and chicken broth.
  • Cook on medium heat until the soup comes to a rapid boil. Turn heat to low and let simmer uncovered for 35-45 minutes until the squash is soft.
  • Place the soup into a food processor or blender and puree until smooth and creamy.
  • Return the soup to the pot and whisk in the butter and the condensed milk until fully mixed.
  • Add sour cream dollop if desired.
  • Serve warm to hot in medium sized soup bowls.
  • This soup can be frozen and reheated as well.

1 medium onion, sliced
2 tablespoons dried shallots
2 garlic cloves, sliced

10 cups low sodium chicken broth
1/4 teaspoon cayenne pepper
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg

1/8 cup apple cider vinegar
2 tablespoons white wine
1/8 cup water

Steps:

  • Preheat oven to 375 degrees. pour a thin layer of water not the bottom of cookie sheet with sides or jelly roll pan. Place the squash cut-side down. Bake 40 minutes.
  • Cook squash and remove peel. Cut into large squares. Set aside.
  • Melt butter in large stock pot over medium heat. Add onion, shallots, and garlic and sauté 5 minutes or until tender. Pour the low sodium chicken broth into the pot. Add potatoes and increase heat to bring to a boil. Reduce heat to medium-high and boil for 20 minutes.
  • Add the squash, stirring until well mixed.
  • Using a handheld blender, puree the soup until smooth. OR, cool slightly and transfer in batches to food processor and blend until smooth. Return to large pot.
  • Season the soup with the cayenne pepper, allspice, nutmeg, ginger, and pepper. Add apple cider vinegar, splash of white wine or cooking white wine and water. Stir well and ladle into bowls.

  • In a large, heavy pot, toss the onion with the olive oil and 1 teaspoon of salt. Cover and cook over moderately low heat, stirring occasionally, until the onion is very soft, about 10 minutes. Stir in the squash, cover with a round of parchment paper and the lid and cook for 20 minutes.
  • Add the tomato paste, 1 teaspoon of the spice blend and the water to the pot and bring to a boil. Reduce the heat and simmer until the squash is tender, 20 minutes. Let cool.
  • Working in batches, puree the soup in a blender; add the crème fraîche, three-fourths of the cheese and 1 teaspoon of harissa to the last batch. Return all of the soup to the pot and season with salt and black pepper. Serve the soup, passing the remaining cheese and more harissa at the table.
