MY NANA'S FAMOUS GREEN BEANS
My Nana's Famous Green Beans! One of the most requested recipes from my family - year-round! Made with just a handful of ingredients, this easy green bean recipe make a delicious addition to any meal!

Steps:
- Cut the bacon into small pieces and cook over medium heat in a heavy 3 qt saucepan until the bacon is fully rendered.
- DO NOT remove any of the bacon grease - it's what makes these green beans so amazing!
- Add the onions and saute with bacon until transparent.
- Add green beans and pepper and stir making sure the bacon drippings are getting mixed in well.
- Add chicken broth and reduce heat to low.
- Cover and continue cooking the green beans for 30 minutes up to two hours, stirring occasionally. Make sure there is liquid in the bottom of your pot so that the beans don't get scorched.
- Check for seasoning levels and add salt and pepper if necessary.
- Enjoy!

"MY MOTHER was from North Carolina, and she preferred green pole beans to green snap beans. I've found that either is delicious in this recipe, as long as long as the beans are fresh. Mother also brought with her from North Carolina the custom of chopping and 'mounding' the beans before serving-a touch that makes them even more special."

- In a covered saucepan, cook beans in a small amount of water for 20-25 minutes or until tender. Drain. Meanwhile, in a skillet, cook bacon until crisp. Remove bacon, reserving drippings. Crumble bacon and set aside. Add beans to drippings; sprinkle with pepper and seasoned salt. Heat through. Add crumbled bacon and toss.

- Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
- Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.

MY MOTHER'S GREEN BEANS WITH BACON
Decades ago, when I was a young girl, my mother cooked green beans with bacon. Here is my similar version of her recipe. For a vegetarian version, leave out the bacon.

Steps:
- Rinse the green beans with water and cut off the ends. Cut the green beans into smaller pieces. Set aside.
- Dice the onion and the bacon.
- In a largish saucepan or small dutch oven put 2 Tablespoons oil, and the diced onion and bacon. Stir-fry until the bacon is light brown.
- Add the garlic and stir for 30 seconds.
- Add the green beans, water (add enough to cover), salt, pepper, and vinegar (if using). Bring the liquid to a boil, reduce heat to medium, and cook about 20 minutes.
- Check seasonings.
