1 cup butter, softened
2 cups packed brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups quick-cooking oats
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
FUDGE FILLING
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
2 tablespoons butter
1/2 teaspoon salt
1 cup chopped walnuts
2 teaspoons vanilla extract

Steps:

  • In a bowl, cream butter and brown sugar until light and fluffy. Add eggs and vanilla; mix well. Combine oats, flour, baking soda and salt; add to the creamed mixture. Spread two-thirds into an ungreased 15x10x1-in. baking pan; set aside. , For filling, heat the milk, chocolate chips, butter and salt in a microwave-safe bowl until chips are melted. Remove from the heat; stir in walnuts and vanilla. Spread over top. Drop remaining oat mixture by tablespoonfuls over chocolate. , Bake at 350° for 20 to 25 minutes. Cool on a wire rack.

I've had this recipe over 50 years, and it is still my favorite. It isn't too sweet, and best of all, no cooking! Keeps well when wrapped and placed in refrigerator. I make this for Christmas giving.

½ cup sour cream
¾ cup confectioners' sugar
¼ teaspoon salt
2 cups finely crushed vanilla wafer crumbs
½ cup broken walnuts

Steps:

  • Line an 8x8-inch baking pan with aluminum foil.
  • Melt chocolate chips in a large, heavy pan over low heat, stirring constantly to avoid scorching, until melted and smooth, about 10 minutes. Stir sour cream, confectioners' sugar, and salt into the chocolate. Mix the vanilla wafer crumbs into the chocolate mixture and stir in broken walnut pieces. Spread fudge into the prepared pan, refrigerate until firm, and cut into squares.

1 1/2 cups whole milk, divided
1 1/3 cups heavy cream
1/2 cup sugar
1/2 cup unsweetened cocoa powder
1/4 teaspoon fine salt
2 teaspoons pure vanilla extract

Steps:

  • In a medium saucepan, whisk together cornstarch and 2 tablespoons milk until smooth; whisk in remaining milk, cream, sugar, cocoa, and salt. Bring to a boil over medium-high, stirring constantly, and cook 1 minute.
  • Transfer to a large liquid-measuring cup and stir in vanilla. Pour into 10 3-ounce ice-pop molds and insert ice-pop sticks. Freeze until pops are solid, about 6 hours (or up to 1 week). Just before serving, briefly run molds under hot water to release pops.

What a superb piece of heaven... These bars are one of many sweet treats I am serving for Thanksgiving, they will be put in the freezer and brought out the morning of. They do freeze well. Oh, and if you decide to try these on guests, be prepared to hand out the recipe...as I am always asked for it...lol! Just out of the oven....

1 c butter, softened
2 c brown sugar, lightly packed
2 eggs
4 tsp vanilla, divided
2 1/2 c flour
1 tsp baking soda
1 tsp salt, divided
3 c oatmeal
2 c semi - sweet chocolate chips
1 can(s) sweetened condensed milk ( 14 ounce )
2 Tbsp butter
1 c chopped, nuts

Steps:

  • 1. Preheat your oven to 350 degrees F. These can be made in a jelly roll pan or I used a 9 x 13 baking dish.
  • 2. Cream butter and sugar.
  • 3. Add flour, soda, and 1/2 teaspoon salt until well mixed; stir in oatmeal. ( Batter will be stiff.)
  • 4. Spread 2/3 mixture onto 10x15x1 inch pan. ( I used a 9 x 13...will just be a thicker bar.)
  • 5. For filling, melt chocolate chips, milk, 2 tablespoons butter, and remaining 1/2 teaspoon salt in small saucepan on medium heat until smooth. Stir in nuts and remaining 2 teaspoons vanilla.
  • 6. Pour over mixture in pan. Spread evenly. Dot with remaining oatmeal mixture.
  • 7. Bake for 20 minutes, or until topping begins to brown. I baked mine 25 minutes, due to using a smaller pan.

2 cups semisweet chocolate chips
1 jar (7 ounces) marshmallow creme

1 can (12 ounces) evaporated milk
2 cups pecans or walnuts, chopped

Steps:

  • Line a 13x9-in. pan with foil; butter the foil with 1 tablespoon butter and set aside. Break German chocolate into 1-in. pieces; place in a bowl. Add the chocolate chips and marshmallow creme; set aside., In a large saucepan, bring the sugar, milk and remaining butter to a boil over medium heat, stirring often. Reduce heat; simmer, uncovered, 6 minutes, stirring occasionally. Slowly pour over chocolate mixture; stir until mixture is smooth and blended. Stir in nuts., Pour into prepared pan. Let stand at room temperature until cool. Cut into 1-in. squares. Store in an airtight container in the refrigerator.

  • For fudge filling: in a saucepan over boiling water, mix chocolate chips, sweetened condensed milk, margarine and salt.

  • Spread about 2/3 of the dough in bottom of greased 15x10 inch jelly roll pan (or one 9x13 and one 9x9 inch pan).
  • Cover with fudge filling.
