Steps:
- Cook and drain pasta as directed on package.
- Place broccoli in boiling water.
- Cover and cook 1 minute; drain.
- Immediately rinse with cold water; drain.
- While pasta is cooking, layer tomatoes, broccoli, bell pepper and onion in 2-quart glass serving bowl.
- Mix mayonnaise, yogurt, sugar and curry powder in medium bowl.
- Stir in pasta.
- Layer pasta evenly over onion in serving bowl.
- Sprinkle with cheese.
- Top with bacon bits and parsley.
- Cover and refrigerate at least 8 hours before serving.

Steps:
- Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
- Drain pasta; rinse with cold water. Shake to drain well.
- Meanwhile, in 4-quart glass salad bowl or 13x9-inch glass baking dish, layer salad greens, carrots, peas and tomatoes.
- In large bowl, stir together seasoning mix, mayonnaise and curry powder; stir in pasta. Spread pasta mixture over vegetables in salad bowl. Just before serving, sprinkle with almonds. Serve immediately, or refrigerate up to 2 hours before serving.

Steps:
- Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente; drain and toss with the milk in a large bowl.
- Meanwhile, toast the curry powder in a small dry skillet over medium heat until fragrant, about 1 minute. Whisk in the peanut oil and cook until the oil is curry-colored; let cool. Whisk the mayonnaise, chutney and curry oil in a large bowl, then whisk in the vinegar to make a smooth dressing. Season with 1/4 teaspoon salt, and pepper to taste.
- Add the broccoli slaw mix, scallions and cilantro to the dressing and toss until combined. Stir in the pasta and toss to coat. Cover and refrigerate until serving.

- Dry roast the Spice Mix spices, except for the ginger powder and the paprika. Whizz it to a powder in your coffee grinder, then mix in the ginger powder and paprika. Set aside.
- Cook the pasta until it is done but still somewhat firm. Rinse with cold water.
- Combine the pasta with the vegetables in a large bowl. Stir in the salad dressing. Add salt and 1 1/2 Tb of the spice mix.
- In a small skillet, heat a dab of oil until it is sizzle-hot. Add the black mustard seeds. As soon as they have quit popping, dump them in the pasta bowl.
- Mix everything together. Cover and refrigerate. It's best to let it chill at least an hour before chow time, if you can stand it.

CURRIED PASTA SALAD
This recipe came from a Family Circle publication "Quick and Easy Meals-Jan 1979". I have listed the ingredients as published but the amount of curry dressing given in the recipe makes the salad a little too creamy for my taste. I usually add about 2/3 of it to the salad and save the rest to use as a sauce for other things. It is very good with omelets or chicken tenders. Cook time is refrigeration time.

- Cook and drain pasta according to package directions.
- Pour into a large bowl (see note) and toss with vinagrette dressing.
- Add apple, cucumber and onion and mix well.
- Combine mayonnaise, sour cream and curry powder in a small bowl.
- Add to other ingredients and mix gently to combine.
- Cover and refrigerate several hours to chill and blend flavors.
- To serve, line a glass salad bowl with lettuce and spoon salad on top.
- I like to garnish with a sprinkle of paprika.
- *Note:if you mix in a plastic bowl, the curry powder may stain it.
CURRIED PASTA SALAD WITH CHICKEN
This is a lovely, flavourful but light dish that can be easily adapted for a diet with low fat ingredients. You can't get crushed pineapple where I live so I use pineapple chunks and chop them very finely. Cooking time includes half an hour of chill time.

- Cook the pasta according to the directions on the package (if you like, continue with step 2 while the pasta cooks). When cooked, drain thoroughly and rinse under cold running water until the pasta has cooled. Drain and put in a large serving bowl.
- Spray a non-stick skillet with cooking spray or melt a little butter if you prefer. Add the onion and cook for 5 minutes until softened.
- Add the korma paste and cook, stirring, for 2 more minutes.
- Stir in the apricots, tomato paste and water and cook for 1 minute. Remove from the heat and allow to cool.
- Stir together the mayonnaise and mango chutney in a bowl until blended. Drain the crushed pineapple, adding 2 tablespoons of the pineapple juice to the mayonnaise mixture. (If using pineapple chunks, chop them finely now).
- Stir the pineapple, mayonnaise mixture, onions with korma paste and cooked chicken pieces into the pasta in the serving bowl. Toss together to coat the pasta.
- Cover and chill for 30 minutes to allow the flavours to blend.
- Serve cold and enjoy!
