LEMON MUSTARD CHICKEN
This Lemon Mustard Chicken is an easy 7 ingredient recipe that can be made ahead of time!

Steps:
- Preheat oven to 350*F
- Place chicken in a large heavy bottom skillet or casserole dish.
- In a bowl add melted butter, mustard, lemon juice, tarragon and salt. Mix well.
- Pour mixture over chicken.
- Bake uncovered for 30 - 40 minutes or until internal temperature of chicken reaches 165*F
- Baste chicken 1/2 way through.
- Baste chicken when you remove it from oven.
- If using a large skillet to cook chicken, remove chicken and leave liquids in skillet. If using a casserole dish, remove chicken and pour liquid into a pot. Set casserole dish aside.
- In a small bowl mix 1 teaspoon cornstarch and 2 teaspoons water. Pour into lemon mustard sauce.
- Bring to a boil and cook until mixture thickens. Put chicken back into skillet and baste with thickened sauce or add chicken back into casserole dish and pour sauce over chicken.
- Serve immediately with rice, noodles or your favorite vegetables.

- To a large skillet, add the olive oil, pounded chicken, evenly season with 21 Salute, salt, pepper, and cook over medium-high heat for 5 minutes. Do not touch, move, or disturb the chicken while it is searing. After 5 minutes, flip chicken over. It should have a medium golden color. For thicker/bigger chicken breasts, sear for 6-7 minutes.
- Allow chicken to cook on the second side for about 5 minutes, or until done and cooked through. Again, do not disturb the chicken while it's searing.
- Remove chicken with a slotted spatula and place it on a plate to rest.
- Using caution, deglaze your skillet by adding wine (or broth) and allow the liquid to bubble up and steam violently for a few seconds.
- Add the Dijon mustard, butter, lemon juice, and allow the butter to melt, about 1 minute; stir continuously until melted and the sauce has combined.
- Turn the heat off, taste the sauce, and if you want it a bit sweeter, optionally add honey, to taste, and stir to combine.
- Add the chicken back into the skillet, flip it around in the lemon butter sauce, and spoon the sauce over the chicken.
- Optionally garnish with lemon slices, parsley, and serve immediately.

Steps:
- Simmer wine and lemon zest in medium saucepan.
- Add scallops and cook and stir for 1 minute.
- Take out scallops, raise heat and reduce wine to about 1/4 cup.
- Reduce heat to low, whisk in mustard, then butter, in small pieces.
- Add scallops and any juice and heat through.
- Season with salt and pepper.
- Put sauce over cooked pasta-angel hair is good, and sprinkle on chives.

- Place chicken in single layer in non-aluminum baking dish. Pour lemon-mustard marinade over chicken. Turn to coat.

- Heat the oil and butter in a large frypan or skillet over a medium heat.
- Add the salmon and cook 3-4 minutes on each side, or until barely cooked through.
- Meanwhile, Mix the cornstarch and water to a paste, set aside.

- In a food processor or in a bowl with a whisk blend together the butter, the mustard, the lemon juice, the Worcestershire sauce, the cayenne, and salt to taste until the mixture is smooth. They can be topped with either the Blackberry Mustard, my personal favorite, or Lemon-Herb Butter. For the biscuits, she used Mary B's and you can also use thin slices of deli ham if you would like. The amount of ham I have listed is an estimate. The amount needed will depend on how much ham you want to fill the biscuits with. Recipe is from Southern Living.

- Bake the tea biscuits according to the directions on the package.
- Brown the ham in a hot skillet 1-2 minutes on each side. Cut into small pieces (about the size of the biscuits).
- Split the biscuits in half and fill with the hot ham.

- In a heavy-based medium saucepan, melt butter.
- Add flour all at once.
- Cook, stirring constantly, for 3 minutes.
- Add stock all at once.
