1 pound butter
1/4 cup minced garlic
1 cup whole grain mustard
1/4 cup chopped fresh thyme
2 lemons, juiced
2 tablespoons Old Bay seasoning
2 tablespoons salt
2 teaspoons freshly ground black pepper
3 cups panko bread crumbs (Japanese bread crumbs) Do not substitute regular bread crumbs
1 (3 to 4 pound) side of salmon, skin on, pin bones removed

Steps:

  • Whip butter with an electric mixer until fluffy. Add the garlic, mustard, thyme, lemon juice, Old Bay, salt, pepper, and panko, and mix well. Line a small sheet pan with parchment paper or waxed paper and lay salmon, skin side down, on pan. Blot salmon with paper towels to remove any moisture. "Crust" the salmon while the butter is still soft, allowing a 1/4-inch crust. At this point, the salmon may be refrigerated (cover with plastic wrap after butter has hardened).
  • Preheat the oven to 425 degrees F.
  • Bake for approximately 10 minutes for a still slightly pink fish. Use 2 long flat spatulas, coming in from either end, to lift the salmon off the paper and transfer to a serving platter.

1 bunch thin asparagus (about 1 pound), trimmed
3 tablespoons olive oil, divided
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
4 (6-ounce) skin-on salmon fillets
8 teaspoons country-style or whole-grain Dijon mustard
3 tablespoons panko (Japanese breadcrumbs)
1/4 teaspoon smoked paprika
2 tablespoons chopped fresh tarragon

Steps:

  • Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper. Toss asparagus with 2 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on one half of baking sheet. Bake asparagus 5 minutes.
  • Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. Toss panko with remaining 1 Tbsp. oil in a small bowl. Sprinkle panko mixture evenly onto salmon fillets, then dust with smoked paprika.
  • After asparagus has baked for 5 minutes, remove baking sheet from oven. Place prepared salmon fillets skin side down on empty half of baking sheet. Return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14-16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates and top with tarragon.

  • Preheat oven to 400°F. Lightly oil baking sheet. Place salmon, skin side down, on prepared sheet. Sprinkle with garlic, salt and pepper; spread with 1/3 cup sauce. Bake salmon until just opaque in center, about 20 minutes. Serve with remaining sauce.

Now that's a spectacular side of salmon! The fish gets its jewel-like color and deep flavor from a marinade of grated beets, fresh dill, horseradish, and lemon zest. It's roasted in the same dish as the crispy potatoes nestled underneath.

1 small red beet, peeled and coarsely grated (1/2 cup)
1 cup dill fronds, chopped, plus more for serving
1/4 cup freshly grated horseradish (from a 2-inch piece), or 2 tablespoons prepared horseradish
Grated zest of 1 lemon, plus lemon half for serving
1/4 cup extra-virgin olive oil, plus more for drizzling
1 side wild salmon (1 3/4 to 2 pounds; about 1 inch thick at thickest part), skin removed
Kosher salt and freshly ground pepper
2 pounds Yukon Gold potatoes, peeled and cut into 1/4-inch slices

Steps:

  • Combine beet, dill, horseradish, zest, and 2 tablespoons oil in a bowl. Line a rimmed baking sheet with parchment. Season both sides of salmon generously with salt and pepper; transfer to sheet. Spread beet mixture on top. Let stand 30 minutes.
  • Meanwhile, preheat oven to 425 degrees. Toss potatoes with remaining 2 tablespoons oil; season generously with salt and pepper. Shingle potatoes in a 9-by-13-inch baking dish, in a single layer. Bake until tender, about 35 minutes; remove from oven.
  • Remove beet mixture from top of salmon with a spoon; spread over center of potatoes. Top beet mixture with fish (you may need to tuck part of tail end under fish to fit in pan), drizzle with oil, and bake until salmon is medium-rare, 10 to 12 minutes. Squeeze with lemon, garnish with dill fronds, and serve.

1 slice sandwich bread, high quality, crusts removed
1 ounce potato chips, crushed into rough 1/8 inch pieces, about 1/4 cup (thick-cut and kettle-cooked preferred, ridged chips in a pinch)
1 1/2 tablespoons fresh dill leaves, chopped
2 salmon fillets, skin-on, each about 8 oz, and 1 1/4 inches thick
1/2 teaspoon olive oil
1/4 teaspoon table salt
ground black pepper
1 tablespoon Dijon mustard

Steps:

  • Adjust one oven rack to uppermost position (about 3-inches from heat source) and second rack to upper-middle position; heat oven to 400°F.
  • Pulse bread in workbowl of food processor fitted with steel blade until processed into fairly even 1/4 inch pieces about the size of Grape-Nut cereal (you should have about 1/3 cup), about 10 one-second pulses. Spread crumbs evenly on rimmed baking sheet; toast on lower rack, shaking pan once or twice, until golden brown and crisp, 4-5 minutes. Toss together bread crumbs, crushed potato chips, and dill in small bowl, set aside.
  • Increase oven setting to broil. Line baking sheet with foil and place salmon on foil. Rub each fillet evenly with 1/4 teaspoons oil; sprinkle with salt and pepper. Broil salmon on upper rack until surface is spotty brown and outer 1/2 inch of thick end is opaque when gently flaked with paring knife, 7-9 minutes. Remove fish from oven, spread each fillet evenly with mustard and press bread crumb mixture onto fillets. Return to lower rack and continue broiling until crust is deep golden brown, about 1 minute longer. use spatula to transfer salmon to serving plates, leaving skin behind on foil.
