36 1/3-inch-thick baguette slices
2 tablespoons olive oil
1/3 cup chopped shallots
2 1/4 cups chopped oyster mushrooms
2 1/4 cups chopped stemmed shiitake mushrooms (about 6 ounces)
1 1/4 cups chopped chanterelle mushrooms (about 4 ounces)
1 garlic clove, minced
1/4 cup whipping cream
1 teaspoon minced fresh rosemary
1/2 teaspoon grated lemon peel
1 cup grated Fontina cheese
1/2 cup freshly grated Parmesan cheese (about 1 3/4 ounces)

Steps:

  • Preheat oven to 375°F. Arrange baguette slices on rimmed baking sheet. Toast in oven until golden, about 9 minutes. Cool. (Can be prepared 2 days ahead. Store in airtight container at room temperature.)
  • Heat oil in large skillet over medium-high heat. Add shallots; sauté 1 minute. Add all mushrooms; sauté until beginning to brown, about 6 minutes. Stir in garlic; sauté 1 minute. Remove from heat. Stir in cream, rosemary, and lemon peel. Season with salt and pepper. Cool. Mix in both cheeses. (Can be made 2 days ahead. Cover and refrigerate.)
  • Preheat broiler. Top each toast with about 1 tablespoon mushroom topping. Place on 2 rimmed baking sheets. Working in batches, broil until cheese is melted and begins to brown, watching closely to prevent burning, about 3 minutes. Transfer to serving platter. Serve warm.

4 Portobello mushrooms, stems and gills removed
2 tbsp canola oil
¾ cup chopped fresh parsley
¼ cup fresh lemon juice
¼ cup extra-virgin olive oil
1 tbsp chopped fresh thyme
4 cloves garlic, chopped
2 tbsp fresh oregano leaves, chopped or 1 tsp dried oregano, crumbled
1 tsp grated lemon peel
1 tsp liquid honey
¼ tsp red pepper flakes
¼ tsp salt
⅛ tsp freshly ground pepper
22 Crostini Toasts

Steps:

  • ​Cut mushroom caps into ½ inch cubes. There should be about 6 cups.
  • Heat canola oil in a large frypan over high heat. Add mushrooms and sauté until softened, about 3 - 4 minutes. Transfer to a heatproof bowl and cool completely.
  • Using a hand blender or a mini food processor, purée parsley, lemon juice, olive oil, thyme, garlic, oregano, lemon peel, honey, red pepper flakes, salt and pepper until smooth.
  • When cool enough to handle, coarsely chop mushrooms. Pour herb mixture over mushrooms and stir to combine. Refrigerate for at least 30 minutes or up to 60 minutes. Top each Crostini Toast with a generous 1 tbsp of bruschetta.

This is from our local paper and hope to make it when the weather warms up a tad. This was part of their "One for the Blokes" feature and the nutritionist gave it a big thumbs up. Times are estimated. Think this could be duplicated with an indoor grill and frypan/skillet for the hotplate.

60 g butter (softened)
1 garlic clove (minced)
1/2 cup fresh parsley leaves (chopped)
8 slices sourdough bread
8 mushrooms (flats or fields trimmed)
3 slices rindless bacon (diced)
2 -3 tablespoons Worcestershire sauce
salt and pepper
olive oil flavored cooking spray
1 -2 lemon (cut into wedges to serve)

Steps:

  • Preheat barbecue plate to high and the grill to medium.
  • Combine butter, garlic and 3/4 of the parsley in a bowl, season with salt and pepper and beat till well combined.
  • Lightly spray both sides of the bread and mushrooms with oil.
  • Barbecue the bread on the grill for 2-3 minutes each side until toasted.
  • Barbecue the mushrooms on the flat plate, stem side up first for 3 to 4 minutes each side until tender.
  • Add the bacon to the hotplate and cook, tossing for a minute until golden and then drain on paper towel.
  • Spread a little garlic butter on each piece of toasted bread, top with a mushroom and sprinkle with bacon and remaining parsley and then drizzle worcestershire sauce and season with salt and pepper and serve with a lemon wedge.

1 crusty French baguette, cut into 24 slices
1/2 cup olive oil
1/4 cup grated Gruyere cheese
1 tablespoon unsalted butter
5 cups button mushrooms (or a mushroom mix), sliced
1/2 cup white wine
1 tablespoon tamari
A pinch of sea salt
1/4 cup chopped chives
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Brush both sides of each baguette slice lightly with olive oil. Bake for 4 minutes per side. Remove from the oven and sprinkle the Gruyere evenly over the bread. Turn the oven to broil. Place the crostini back in the oven under the broiler until the cheese is melted.
  • Melt the butter in a large skillet over medium heat. Add the mushrooms, white wine and tamari. Cook until the mushrooms are soft and the liquid has evaporated. Finish with a small pinch of sea salt.
  • Spoon the mushrooms out of the pan directly onto the crostini. Garnish with the chopped chives and flat-leaf parsley.

1/2 baguette, cut into twenty-four 1/4-inch slices
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 cup mascarpone cheese, chilled
1 tablespoon chopped chives
1/4 teaspoon kosher salt
1/2 pound assorted mushrooms, torn and cut into bite sized pieces
1 cup red grapes, halved
5 sprigs fresh thyme, leaves removed and stems discarded
2 shallots, sliced into rounds
3 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1 teaspoon sherry vinegar
24 shavings of Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Lay the baguette slices out on a straight-sided baking sheet. Brush each slice of baguette with a generous amount of olive oil. Sprinkle evenly with salt and bake until golden brown and crispy, about 8 minutes. Remove the crostini from the tray and set aside to cool.
  • While the crostini bake, combine the mascarpone, chives and salt in a small bowl. Set aside.
  • Increase the oven temperature to 500 degrees F.
  • On the same baking sheet, combine the mushrooms, red grapes, thyme leaves, shallots, olive oil and salt. Toss well to coat and combine. Roast until the mushrooms are beginning to brown and the grapes have released some of their juices, 8 to 10 minutes Scrape the contents of the tray into a medium bowl and toss with the sherry vinegar. Cool to room temperature.
  • To serve, spread each crostini with equal amounts of the mascarpone mixture. Spoon a small amount of the mushroom mixture on top of each crostini. Top each with one shaving of Parmesan.

3 tablespoons butter
1/2 lb fresh shiitake mushroom, stemmed, caps chopped
4 ounces cremini mushrooms, chopped
2 garlic cloves, minced
1/2 cup whipping cream
1/2 cup crumbled blue cheese (about 2 ounces)
1/2 cup chopped thinly sliced prosciutto (about 2 1/2 ounces)
18 slices sourdough bread (1/2 inches thick, diagonally sliced)
chopped parsley

Steps:

  • Melt butter in a heavy large skillet over medium high hear. Add all mushrooms and garlic and sauteed until mushrooms are cooked through and brown, about 10 minutes.
  • Add cream and boil until liquid is completely absorbed, about 2 minutes.
  • Remove from heat. Add bleu cheese and stir until cheese melts.
  • Mix in proscuitto. Season with salt and pepper. Transfer to a bowl. (Mushroom topping can be made 1 day ahead. Cover and refrigerate. If you make this the day before make sure to bring the topping mixture to room temperature so it is easy to work with.).
  • Preheat oven to 375 degrees. Arrange bread slices on baking sheet. Bake until just golden, about 5 minutes.
  • Mound 1 generous tablespoon mushroom topping on each slice of bread. Return to oven and bake until heated through, about 6 minutes.
  • Sprinkle with chopped parsley.

Another one from the Toronto Star's Chef's Showcase from the 80s. Made it as part of dinner tonight and it ended up to be our dinner. Oh well, I don't have to cook tomorrow! And I have leftover crostini for lunch. Recipe by Chef Michael Bonacini.

2 cups mushrooms, assorted, roughly chopped
4 tablespoons olive oil
1 tablespoon butter
2 slices smoked bacon, diced
1/2 small onion, diced
2 garlic cloves, chopped
1 tablespoon Italian parsley, chopped
2 tablespoons grated parmesan cheese
8 -10 slices French baguettes, cut 1/4 inch thick, lightly toasted

Steps:

  • In heavy bottomed frying pan, heat olive oil and butter under medium-low heat; add bacon and fry until golden brown, about 4 to 5 minutes.
  • Add onion, garlic and continue to cook for 2 minutes. Add mushrooms and saute, stirring from time to time for 5 to 6 minutes; season with salt and pepper; when mushrooms are cooked, add parsley and cheese; remove from heat, cover and let rest for 4 to 5 minutes.
  • Spoon warm mixture on to slices of toasted bread.

1 small (or 1/2 large) baguette
2 tablespoons extra-virgin olive oil, plus more for brushing
Coarse salt and freshly ground pepper
1 shallot, thinly sliced into rings
8 ounces chanterelles or other wild mushrooms, trimmed and coarsely chopped
12 rounds (1/4 inch thick) goat cheese, cut from a log (about 6 ounces), room temperature
Fresh chives, snipped for garnish

Steps:

  • Preheat oven to 375 degrees. Cut baguette crosswise into 12 quarter-inch thick slices; place on a baking sheet. Brush with oil; season with salt and pepper. Toast in the middle of oven until golden, 8 to 10 minutes. Set aside to cool.
  • Heat 2 tablespoons oil in a medium skillet over medium heat. Add shallot; cook, stirring, until soft, about 3 minutes. Add mushrooms; cook, stirring occasionally, until tender and any juices have evaporated, 7 to 10 minutes. Season with salt and pepper.

4 -5 ounces mushrooms, stems removed and sliced thin
3 tablespoons extra virgin olive oil
1 pinch sea salt
1 tablespoon sherry wine
1/4 cup garlic aioli (garlic mayonaisse) or 1/4 cup caesar mayonnaise
crostini
1 large garlic clove, chopped
2 tablespoons chopped fresh flat-leaf parsley
1 1/2 teaspoons anchovy paste
1 teaspoon Dijon mustard
1 1/2 tablespoons fresh lemon juice
1/2 cup good mayonnaise

Steps:

  • Heat the 1 tablespoons olive oil in a pan that has a cover.
  • When the oil is hot, add the mushrooms, salt and sherry. Cover, and lower heat.
  • Cook until liquid is released from the mushrooms, about 10 minutes. Drain and set aside.
  • To make crostini slice baquette into 1/4" slices, brush slices with olive oil and bake in 375 deg. oven for 8 - 10 minutes.
  • Caesar Mayo/Dressing:.
  • Place the garlic and parsley in the bowl of a food processor fitted with a steel blade and process until minced. Add the anchovy paste, mustard, lemon juice, and mayonnaise and process again to make a smooth dressing. (Refrigerate the Caesar dressing if not using it immediately.).
  • Spread with alioli and top with mushrooms.
  • Broil for about 30 seconds or until alioli starts to bubble. (Note: I used the caesar dressing and skipped the broiling step (it was really good but I still want to try the alioli.).

  • In a large skillet, melt the butter in 1 tablespoon of olive oil. Add the shiitake and cook over moderately high heat, stirring, until browned, 4 minutes. Add the oyster mushrooms and cook until softened and lightly browned, 4 minutes. Add the shallot and garlic and cook until fragrant, 2 minutes. Stir in the wine, lemon juice, thyme and the 1 tablespoon of parsley. Season with salt and pepper.
  • Light a grill or preheat a grill pan. Brush the bread with olive oil and grill until toasted and charred in spots, about 1 minute per side.
