2 boule or Italian round loaves, about 9 inches, sesame seeds on top preferred
1 pound thinly sliced aged provolone cheese
1 pound thinly sliced mortadella
1 pound thinly sliced genoa salami
1 pound thinly sliced hot capicola
Olive Salad, recipe follows
1 cup oil-packed black olives, pitted
1 cup green olives, pitted
1/2 cup olive oil
1/2 cup roasted red peppers, drained
1/4 cup capers, drained
1/4 cup red wine vinegar
1 teaspoon crushed red pepper
1 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • Cut the loaves in half horizontally. Drizzle some of the olive salad liquid on the bottom halves. Dividing everything by two, layer the cheese, mortadella, genoa, capicola and then the Olive Salad on top. Cover with the top halves, and then cut into pie-shaped wedges and serve to the masses.
  • Add the black olives, green olives, olive oil, roasted red peppers, capers, vinegar, crushed red pepper and sugar to a food processor and pulse until uniform but still coarse, about 10 times. Taste and adjust seasoning if necessary.

1/4 cup red wine vinegar
2 garlic cloves, peeled and minced
1 teaspoon dried oregano
1/3 cup olive oil
10 large pitted green olives, chopped
1/3 cup pitted, chopped kalamata olives
1/4 cup chopped roasted red bell peppers
Salt and freshly ground black pepper
1 (1-pound) round bread loaf (about 7 inches in diameter and 3 inches high)
4 ounces thinly sliced ham
4 ounces thinly sliced mortadella
4 ounces thinly sliced salami
4 ounces sliced provolone
1/2 red onion, thinly sliced
1 1/2 ounces arugula leaves

Steps:

  • Whisk the first 3 ingredients in a large bowl to blend. Gradually blend in the oil. Stir in the olives and roasted peppers. Season the vinaigrette, to taste, with salt and pepper.
  • Cut the top 1-inch of the bread loaf. Set the top aside. Hollow out the bottom and top halves of the bread. Spread some of the olive and roasted pepper mix over the bread bottom and cut side of the bread top. Layer the meats and cheeses in the bread bottom. Top with the onions, then the arugula. Spread the remaining olive and roasted pepper mix on top of the sandwich and carefully cover with the bread top. You can serve the sandwich immediately or you can wrap the entire sandwich tightly in plastic wrap and place in the refrigerator a day before serving.
  • Cut the sandwich into wedges and serve.

One 12-ounce loaf Italian bread, about 16-inches long
1 1/2 cups pitted mixed olives, drained
3/4 cup prepared giardiniera, drained
1/2 cup roasted red bell peppers, drained and roughly chopped
1/4 cup extra-virgin olive oil
2 tablespoons capers in brine, drained
2 tablespoons red wine vinegar
8 ounces sliced provolone cheese
6 ounces sliced mortadella
6 ounces sliced salami
6 ounces sliced ham

Steps:

  • Slice the loaf in half lengthwise and hollow out the bottom half, leaving a 1/2-inch border on all sides. Save the bread filling for another (like bread crumbs).
  • Add the olives, giardiniera, peppers, oil, capers and vinegar to a food processor and pulse until the texture is similar to a chunky relish.
  • Layer the bottom half of bread with half of the cheese, then spread half of the olive mixture on top of the cheese. Top with the mortadella, salami, ham and the remaining cheese. Spread the remaining olive mixture on to the top half of the bread. Close the sandwich and wrap it tightly in plastic wrap. The sandwich can be made and refrigerated the night before. Pack it on the bottom of your cooler and let the weight of the other food press and flatten the sandwich.
  • When you are ready to serve, cut in to 6 even pieces.

This is a wonderful recipe from www.nolacuisine.com/2005/08/21/muffuletta-bread-recipe/ . The right bread makes this special sandwich perfect. I plan to use my trusty 16 yo Panasonic ABM to make the dough. Will raise then shape by hand for second rise & bake as directed in the oven.

1 cup warm water (110 degrees F)
1 tablespoon active dry yeast
1 tablespoon granulated sugar
2 cups all-purpose flour
1 cup bread flour
1 1/2 teaspoons iodized salt
2 tablespoons lard
sesame seeds
3 tablespoons extra virgin olive oil
1 egg
2 tablespoons cold water

Steps:

  • Combine the water, yeast and sugar in the workbowl of a stand mixer, stir well and let stand for 5-10 minutes or until good and foamy.
  • Meanwhile, combine the flours, salt, and lard in a bowl and work in the fat with your hands until broken up into very small pieces.
  • When the yeast is foamy, fit the mixer with a dough hook attachment and gradually add the flour on low speed until its all incorporated. Scrape the sides down between additions. When the dough comes together, turn it onto a floured work surface and knead until smooth and elastic, 5-10 minutes, adding more flour if necessary. Alternatively, you can let the machine do the work.
  • Coat a large bowl with the Olive Oil, then put the dough in, turning once to coat both sides. Cover loosely with a clean dry towel, or plastic wrap. Let the dough rise in a warm place until doubled in bulk, about 1-1/2 hours.
  • Punch the dough down and shape into a flat round about 9 inches across (it will expand to about 10″.) Place the dough on a lightly oiled baking sheet. Sprinkle the top with sesame seeds, about 2-3 Tbsp should do it, then press them lightly into the dough. Loosely cover the loaf and let rise until doubled in bulk, about 1 hour.
  • When the dough has risen, remove the cover, gently brush with the egg wash then gently place into a preheated 425 degree F oven for 10 minutes. Turn the heat down to 375 degrees F for an additional 25 minutes or until it's golden brown and sounds hollow when tapped.

4 boneless, skinless chicken breasts

1 large round loaf of bread, sliced in half crosswise

2 bricks or a cast iron pan and a few heavy cans.

Steps:

  • Spicy Olive Relish Mayonnaise:
  • Combine the red peppers, jalapeno, garlic, mayonnaise and vinegar in a food processor and process until smooth. Scrape the mixture into a medium bowl and fold in the olive relish and parsley. Set aside.
  • Muffuletta:
  • 1. Heat the grill to high or the grill pan over high heat.
  • 2. Brush the chicken breasts with oil on both sides and season with salt and pepper. Grill for 4 to 5 minutes per side until golden brown and just cooked through. Remove from the grill, let rest 5 minutes then slice into 1/4-inch thick slices on the bias.
  • 3. Spread some of the mayonnaise on the bottom half of the bread, add a few tablespoons of the olive relish, add half of the cheese, half of the chicken and repeat with the remaining ingredients, (mayonnaise, olive relish, cheese, chicken) in that order.
  • 4. Spread the cut-side of the top of the loaf with more of the mayonnaise and place, mayonnaise-side down on the chicken. Wrap tightly in foil, place on a baking sheet and place bricks or a heavy cast iron pan on top. Refrigerate for at least 1 hour (to allow the flavors to meld) or overnight.

Then, layer the salami, Provolone, prosciutto, and Muenster, alternating until all are gone.   • This makes a LOT of relish, so if you like, it's easily halved.

I culled this recipe from a Mardi Gras website. The olive salad gives this sandwich its authentic taste. I made this as part of a Mardi Gras lunch at work and even folks who do not like olives enjoyed it. The mixture of pickled cauliflower, carrots, celery, and pepperoncini is called gardeniera and can be found in the relish/pickle section of your grocery. Also, I omitted the salt. Cooking time for this one is really refrigeration time for the compiled sandwich. I let the olive salad flavors meld for 1 week. It was worth it!

Steps:

  • To Make the SANDWICH.
  • Split a muffoletta loaf or a round loaf of Italian bread horizontally. Remove some of the center soft bread.
  • Spread each half with equal parts of olive salad/oil.
  • Place meats and cheeses evenly on bottom half and cover with top half of bread.
  • Wrap tightly with plastic wrap and refrigerate for up to 4 hours. Cut in quarters for huge sandwiches, or eighths for more manageable sections.
  • To Make the OLIVE SALAD.
  • To pit the olives crush each olive on a cutting board with your hand or use the end of a funnel.
  • Combine all ingredients except oil in processor. Pulse 4-5 times. You want this to be coarse chopped.
  • Add olive oil. Put into a bowl or jar, cover and let the flavors marry for about one week.
