It's worth it to make a big batch of barbecue sauce. Freeze it in small or large containers to give quick flavor to chicken anytime.

Number Of Ingredients 11

2 tablespoons vegetable oil
1 small white onion, diced small
3 garlic cloves, finely chopped
1 can (6 ounces) tomato paste
2 teaspoons ground mustard
1 can (28 ounces) tomato sauce
1/4 cup unsulfured molasses
2 tablespoons Worcestershire sauce
3 tablespoons white vinegar
2 teaspoons coarse salt
1 1/2 teaspoons ground pepper

Steps:

  • In a medium saucepan, heat oil over medium. Add onion and cook until completely soft, about 5 minutes. Add garlic and cook until fragrant, 1 minute.
  • Add tomato paste and mustard; cook, stirring constantly, until paste turns a brick-red color, about 5 minutes. Add 2 cups water, tomato sauce, molasses, Worcestershire, vinegar, salt, and pepper and stir until smooth.
  • Bring to a simmer; reduce heat to low and partially cover. Simmer, stirring occasionally, for 2 hours (thin with water if sauce becomes too thick). Season to taste with vinegar, salt, and pepper. Let cool completely before using.

2 cups tomato sauce or ketchup
1/2 cup apple juice
1/2 cup apple cider vinegar
1/2 cup brown sugar
5 Tbsp butter
3 Tbsp paprika
2 Tbsp chili powder
1 Tbsp chipotle powder (optional)
4 finely chopped garlic cloves
1/2 medium onion, finely chopped
Salt to taste
Cayenne to taste

Steps:

  • Heat the butter in a pot over medium heat for 2-3 minutes. Add the onion and sauté until it begins to brown. Add the garlic and sauté for another 2 minutes.
  • Pour in the remaining ingredients and stir well to combine. Simmer slowly for at least 30 minutes, and up to 2 hours. Adjust the heat and salt levels with the cayenne and salt right before you plan to use this sauce, which is great on ribs, chicken and pork shoulder.

This is a traditional vinegar-based Carolina style barbecue sauce recipe. Notice that there is no tomato base in this recipe, just lots of flavor.

2 tablespoons lemon juice, from 1 lemon
5 teaspoons Worcestershire sauce
1 tablespoon honey
2 teaspoons salt
1 teaspoon freshly ground black pepper
1/2 cup white vinegar, or apple cider vinegar

Steps:

  • Gather the ingredients.
  • Melt the butter in a saucepan.
  • Add the lemon juice, Worcestershire sauce, honey, salt, and pepper. Bring the sauce to a simmer over medium heat for 5 minutes, or until honey has melted through and the sauce is well combined.
  • Remove the sauce from the heat and carefully add in the vinegar a little at a time. Let the sauce cool for 5 to 10 minutes before using.

1 tablespoon vegetable oil
½ cup onion (finely chopped )
1 teaspoon jalapeño (minced )
2 teaspoons minced garlic
¼ cup apple cider vinegar
¼ cup Worcestershire sauce
1 tablespoon Dijon mustard
1 cup pure maple syrup (or dark brown sugar)
1 tablespoon paprika (or smoked paprika)
2 teaspoons kosher salt
¼ teaspoon chipotle pepper powder
¾ cup tomato paste
¾ cup orange juice

Steps:

  • Heat oil in a medium-sized saucepan over medium heat. Add onion and sauté, occasionally stirring, until softened for 5 minutes.
  • Stir in minced jalapeños and cook for 30 seconds. Stir in minced garlic and cook until fragrant, about 30 seconds. Turn heat down to medium low.
  • Whisk in vinegar, Worcestershire sauce, mustard, maple syrup, paprika, salt, and chipotle powder, tomato paste, and orange juice.
  • Bring sauce to a simmer, then cook over low heat until thickened and acidity of the sauce has reduced. Stir occasionally, about 20 minutes.
  • Strain the barbecue sauce through a fine mesh strainer. Allow to cool to room temperature, and then serve with your favorite meat.
  • Transfer to an airtight container or jar if not using immediately. Good for up to 5 days and keep refrigerated.

1 1/2 cups distilled white vinegar
1 cup ketchup
1/4 cup apple juice

1 sweet pickled gherkin, chopped
2 tablespoons bottled sweet pickled gherkin juice
2 tablespoons Dijon-style mustard
1 1/2 tablespoons ground celery seeds
1 1/2 tablespoons Worcestershire sauce
2 tablespoons Tabasco
1 1/2 teaspoons cayenne, or to taste
1/2 teaspoon turmeric

Steps:

  • In a blender or in a food processor fitted with the steel blade purée the onion with the vinegar, add the ketchup, the apple juice, the brown sugar, the oil, the garlic, the gherkin and gherkin juice, the mustard, the celery seeds, the Worcestershire sauce, the Tabasco, the cayenne and the turmeric, and blen the mixture until it is smooth. Transfer the mixture to a stainless steel or enameled saucepan, bring it to a boil, stirring, and simmer it, stirring, for 20 minutes. Let the sauce cool. (The sauce may be prepared up to 1 week ahead and kept covered and chilled.)

In large saucepan, combine vinegar, water, onion, oil, garlic, bay leaf, sugar, salt, thyme, black pepper and red pepper. Bring to boil; simmer for 5 minutes. Remove from heat and discard bay leaf. In small bowl, dissolve mustard in cold water. Add small amount of vinegar mixture; stir to combine.
