This is sooooo good! It's a slow cooked, meatless spaghetti sauce with TONS and TONS of vegetables, and its just sooooo good! Enjoy!

Steps:
- Bring a large pot of lightly salted water to a boil. Add tomatoes and cook for 10 minutes. Drain and rinse with cold water. Remove skins and return tomatoes to the pot and mash them. Stir in tomato paste and 2 cups water. Cover and simmer on low heat.
- Meanwhile, melt butter in a large skillet over medium heat. Saute garlic and bay leaves for 1 minute, then stir in onions; saute until onions are translucent. Stir in zucchini, green and red bell pepper and mushrooms. Slowly cook and stir for 5 to 7 minutes.
- Stir vegetables into tomato sauce and add oregano, Italian seasoning, chili powder and brown sugar. Simmer over low heat for 6 to 8 hours. Stir in the ricotta cheese 10 minutes before serving.

SPAGHETTI SAUCE

- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
- Amen.

- Cook ground beef and onions together until ground beef is browned
- Meanwhile, mix tomatoes, tomato paste, green peppers, mushrooms, garlic, chili sauce, Worcestershire sauce, brown sugar, herbs and spices together in a large pot and cook over medium heat on stovetop.
- When ground beef/onion mixture is browned, drain thoroughly and add to tomato mixture.

- In a large pot, bring water to a boil. Add noodles and cook for 10 minutes, or until softened.
- In a smaller pot, place cubes of butter in the pot on a medium heat. Stirring occasionally, allow butter to cook for 10 minutes, or until golden brown. Once the butter froths and turns to a caramel color, remove from pot. Simply place it in a glass cup or bowl for serving.
- In a frying pan, brown meat & garlic on medium heat until meat is cooked through. When meat is cooked, add the jar of sauce to the pot. Meat sauce is ready when it is warmed through.
- Shred Mizithra cheese and set aside.
- Portion out a serving of noodles on a plate. Top half with meat sauce, and half with browned butter & shredded mizithra cheese. Enjoy!

- In a large pan over medium heat, add the vegetable oil and the onion. Saute the onion for 3-5 minutes or until translucent.
- Add the garlic and saute until fragrant or about 30 seconds.
- Add the ground pork and cook for about 5-7 minutes or until the meat is completely browned.
- Add the tomato sauce, banana ketchup, fish sauce, and the dark brown sugar and stir until combined with the meat mixture. Bring the mixture to a boil and then lower to medium low heat and continue to cook for 5 minutes to slightly thicken the sauce.
- Add the hot dogs and continue to cook for another 5 minutes.
- Taste test the sauce and add salt and black pepper, adjust to your preference.
- You have the option of adding cheese on top too.
- Add the spaghetti on a plate and ladle on the sauce. Serve immediately.
- In a large pot, add the water and bring to a boil over medium high heat. Add the salt and stir until dissolved. Add the dried spaghetti and follow instructions on the box to cook. This could take anywhere between 8-15 minutes depending on the pasta brand.
- Test your spaghetti by tasting one strand, it should be cooked throughout without any opaqueness in the center, but still slightly firm.
- Strain the pasta from the boiling water, reserving some of this water in case you need it to thin the sauce, and set the pasta aside. Do not rinse the pasta.

VERY SPECIALE SPAGHETTI SAUCE
This is my mother-in-law's recipe, which was adapted and passed down through at least 3 generations. It's so good I could eat it by itself! Everyone who walks through the kitchen while it's simmering is supposed to stir the sauce. This makes a big pot, so freeze some for another great meal some other time! Also makes fantastic lasagne by simply layering the sauce with mozzarella and lasagne noodles, then baking at 350F until done. Also, remember to cook it with love!

- Combine tomato paste and water in a large pot, stir over medium high heat until tomato paste is dissolved (about 2-3 minutes).
- Saute the onion and garlic in the olive oil in a separate skillet over medium high heat(can also add green bell pepper and mushrooms, if desired). Saute until onion is translucent and dump into the pot.
