Chicken Thighs with Moroccan Olives & Orange image

1 lb chicken thighs (bone-in and skin on (about 4-6 thighs typically))
1 orange (sliced in half)
1 medium onion (peeled, cut in half and sliced into thin wedges)
1/3 cup Moroccan cured olives
4 cloves of garlic (peeled)
2 tablespoons extra virgin olive oil
1 teaspoon smoked paprika
2 teaspoons ground cumin
2 teaspoons ground cinnamon
1/4 teaspoon turmeric (listen, if you were very lovely, you would actually use a small bit of saffron instead.)
1/2 teaspoon red pepper flakes
1 teaspoon sea salt

Steps:

  • Preheat oven to 400 degrees.
  • In your baking tray (9x13 is good, ceramic or glass is great), add the juice from 1/2 an orange (reserve the other half for now), and the olive oil through the dry spices and salt above. Whisk to combine.
  • Add in the onion wedges, halved olives and garlic cloves.
  • Slice the remaining half an orange, then add the orange slices into the pan, too.
  • Toss the chicken thighs in the marinade, coating with the spices evenly all over. Place the chicken thighs skin-side up on top of the onion, orange and olive mixture. Allow to marinate up to 12 hours/overnight if you desire--or, it's time to cook now!
  • When ready, place the baking tray into the oven and bake the chicken thighs for 60 minutes.
  • Allow to cool, then serve!

2 tablespoons harissa
1 tablespoon smoked paprika
1 tablespoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon ground allspice
1/2 teaspoon cardamom
1/2 teaspoon cayenne
2 Cara Cara oranges, zested, then cut into 8 pieces
4 tablespoons canola oil
8 bone-in chicken thighs
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
1 Spanish onion, diced
1 1/2 cups canned whole tomatoes, hand crushed
1 cup chicken stock
1 cup large green olives, pitted
1/2 cup dried apricots, diced
1/4 cup chopped preserved lemon
Cooked couscous, for serving
1 Meyer lemon, thinly sliced
Fresh cilantro and mint leaves, for garnish

Steps:

  • Preheat the oven to 325 degrees F. Heat a wide braising pan or tagine over medium-high heat.
  • In a small bowl, combine the harissa, paprika, turmeric, cumin, ginger, cinnamon, coriander, allspice, cardamom, cayenne, orange zest and 2 tablespoons of canola oil. Stir to form a paste.
  • Season the chicken with salt and pepper; rub half of the spice mixture on both sides of the thighs.
  • Add the remaining 2 tablespoons canola oil to the pan. Sear the chicken skin-side down until golden brown, about 5 minutes. Flip and brown the other side. Remove to a plate.
  • Add the garlic, onion and remaining spice mixture to the same pan, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Reduce the heat to medium and cook until the onions are softened and lightly browned, about 5 minutes.
  • Return the chicken to the pan along with the tomatoes, chicken stock, olives, apricots, preserved lemon and sliced oranges and season with salt and pepper, being careful with the salt. Braise in the oven, partially covered, for about 1 hour and 15 minutes. Uncover and continue to braise until the chicken is tender, another 15 to 45 minutes. Serve from the pan over couscous, garnishing with sliced Meyer lemon and whole cilantro and mint leaves.

Add onion and sprinkle with salt and pepper; sauté until golden brown, about 8 minutes. Add next 5 ingredients; stir 1 minute. Add broth; bring to boil. Sprinkle chicken with salt and pepper; add to skillet. Add lemon wedges. Cover, reduce heat to medium-low, and simmer until chicken is cooked through, turning occasionally, 25 to 30 minutes. Transfer chicken to platter. Add olives and 2 tablespoons lemon juice to skillet. Increase heat to high; boil uncovered to thicken slightly, about 5 minutes. Season with salt and pepper. Pour over chicken.

This is a great weeknight dish I adapted from a Bon Apetit magazine recipe. Very nice in spring before the good local produce appears at the market.

1 whole chicken, cut into pieces
2 tablespoons olive oil
1 cup shallot, sliced
2 garlic cloves, minced
1 cup madeira wine (a sweet Spanish wine)
1 cup chicken broth
1/2 cup orange juice
1 orange, rind of, grated
1 orange, cut into 6 wedges (leave peel on)
1/2 cup large Spanish olives, brined
1 tablespoon honey

Steps:

  • Preheat oven to 425°F Heat oil in a large oven-proof skillet over high heat.
  • Sprinkle chicken pieces with salt and pepper and brown in oil until skin is crisp, about 6 minutes per side.
  • Transfer chicken to a plate and reduce heat to medium. Drain all but 2 Tbsp drippings from skillet.
  • Add shallots and cook, stirring, until beginning to brown. Add garlic and stir for 30 seconds.
  • Add sherry, boil until reduced by half. Then add chicken broth, orange juice and grated rind. Boil one more minute.
  • Return chicken pieces to pan, skin side up. Arrange orange wedges and olives around chicken, and place some shallots atop the ckicken.
  • Bake uncovered for about 20 minutes, until done through.
  • Place chicken on a platter. Bring juices to a boil on the stove and stir in the honey, to thicken, about 5 minutes.
  • Pour the sauce, oranges, olives, and shallots over the chicken and serve.
  • Great with rice or cous-cous and lightly sauteed greens.

I developed this recipe while working at a restaurant. We had an abundance of olives that were left over after using the juice to make Dirty Martinis and I wanted to make use of them and this is what I came up with.

4 boneless skinless chicken breasts
1 tablespoon granulated garlic
1/4 cup red wine
1/4 cup olive oil
3 garlic cloves, minced
1 large onion, chopped
1 teaspoon fresh ginger, grated
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon parsley
1 tablespoon cilantro
1 lemon, juice of
1 (10 ounce) jar olives, drained and cut in half
1 tomatoes, chopped

Steps:

  • Heat a heavy bottom saute` pan over a medium high heat.
  • Add 2 Tbl of the olive oil and swirl pan to coat.
  • Season each side of chicken breasts with granulated garlic and place in pan skin side down.
  • Saute` for about 3 minutes and flip.
  • Cover pan and turn down heat.
  • Allow chicken to cook through until no pink remains.
  • Turn heat back up and deglaze pan with red wine.
  • Remove chicken breasts and keep warm.
  • Add remaining olive oil.
  • Add onion and saute` until soft.
  • Add chopped garlic, ginger salt, pepper and spices.
  • Saute` for 2 minutes and add remaining ingredients.
  • Saute` for 3 minutes and spoon olive mixture over warm chicken breasts.
