MOROCCAN-STYLE CARROT SALAD

Moroccan-Style Carrot Salad image

Simple, unique, and flavorful is what this Moroccan carrot salad is all about! Tender cooked carrots are tossed with fresh herbs and warm Moroccan spices like cumin and harissa, then dressed in lemon juice, extra virgin olive oil. The final touch, a sprinkle of toasted sesame seeds!

Time 30m

Number Of Ingredients 14

water
Kosher salt
2 lb carrots, peeled and cut into medallions
1 celery stalk, chopped
3/4 tsp harissa spice
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp sweet paprika
1 to 2 garlic cloves, minced
1 celery stick finely chopped
1/2 cup chopped fresh cilantro (mint or parsley would work as well)
1 to 2 tbsp fresh lemon juice
3 tbsp Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
3 tbsp toasted sesame seeds, optional

Steps:

  • Bring a large pot of salted water to a boil. Add carrots and cook for about 20 minutes until nice and tender. Drain.
  • Transfer the cooked carrots immediately to a large mixing bowl. And while nice and warm, season with a dash kosher salt, and the spices (harissa spice, cumin, coriander and paprika.) Add minced garlic, celery, cilantro, lemon juice and extra virgin olive oil.
  • If you like, add a sprinkle of toasted sesame seeds. Give the carrot salad a good toss to combine. Set the carrot salad aside for a bit before serving (it's best served at room temperature.)

MOROCCAN ORANGE-BLOSSOM SCENTED CARROT SALAD

Moroccan Orange-Blossom Scented Carrot Salad image

LIght Moroccan meal starter, untried by me. Note that cooking time includes chilling time. Adapted from "It's All American Food" by David Rosengarten. Posted for ZWT NA*ME

Provided by Muffin Goddess

Categories     < 60 Mins

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

1/2 garlic clove, mashed into paste
1/2 teaspoon ground cinnamon
1 teaspoon ground cumin
1 pinch cayenne pepper
fresh ground black pepper, to taste
1 teaspoon sugar
2 teaspoons lemon juice (or 1 packet of True Lemon)
3 tablespoons extra virgin olive oil
1 tablespoon orange blossom water, divided
1 lb carrot, scraped and cut diagonally into 1/8-inch thick slices (approx. 4 cups sliced carrots)
1 tablespoon finely chopped fresh parsley

Steps:

  • Bring a large pot of generously salted water to a boil over high heat.
  • While you're waiting for your water to boil, Stir together 1 tsp of the orange blossom water and all other ingredients except for the carrots and parsley in a medium mixing bowl. Set dressing mixture aside.
  • Once your water is at a full rolling boil, add the carrots and cook until tender but still a bit crisp (I'm guessing about 10 minutes for this, because the carrots are so thin, but you'll have to check them as they cook so you don't end up with mushy carrots). When the carrots are done to your liking, drain them and add them to the dressing bowl, tossing to coat thoroughly. At this point, if you can fit the mixing bowl in your freezer, do so. If, like me, you can't even fit a cereal bowl in your freezer, dump the dressed carrots into a large freezer bag and seal tightly (don't want your freezer smelling like Moroccan dressing, even if it does contain orange blossom water!), and place in the freezer.
  • Allow the mixture to chill for about 15 to 20 minutes, tossing once or twice. Remove from the freezer and pour into a serving bowl if using a freezer bag.
  • Toss mixture once more with the remaining orange blossom water. Salt to taste, if desired (if you salted your water enough for the carrots, you may not need any additional salt).
  • Serve either slightly chilled or at room temp, sprinkled with the parsley.

Categories     Vegetable

Time 25m

Yield 4 serving(s)

Number Of Ingredients 13

1 lb carrot
1 orange
1 garlic clove, finely minced
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon chopped cilantro or 1 tablespoon flat leaf parsley
1 teaspoon ground cumin
1 -2 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon harissa or 1 pinch cayenne
kalamata olive (optional)
toasted pine nuts (optional)

Steps:

  • Juice the orange. Scrub the carrots clean and slice them diagonally into 1/4 inch thick rounds. Place them in a medium sized pot and pour all but 1 tablespoon of the orange juice on top. Fill the pot with just enough water to cover the carrots. Simmer the carrots on low heat for about 15 minutes. They should be just tender - not at all mushy.
  • Remove the carrots from the heat, drain off the water, and allow to cool.
  • In a small mixing bowl, whisk together the garlic, olive oil, lemon juice, reserved orange juice, chopped cilantro or parsley, honey, salt, pepper and cayenne. Add more salt, pepper or cayenne pepper to the dressing according to your taste.
  • When they have cooled, mix the carrots with the dressing and serve or refrigerate.
  • If desired, add a handful of toasted pine nuts for extra crunch or a handful of Kalamata olives for a salty contrasting flavor.
  • This salad can be enjoyed either chilled or at room temperature.

MOROCCAN CARROT SALAD WITH DATES AND YOGURT (VEGAN-FRIENDLY)

Moroccan Carrot Salad With Dates and Yogurt (Vegan-Friendly) image

I'm not sure if this recipe is more inspired by Moroccan cuisine or close to a traditional recipe...it doesn't matter to me. From a local CSA flyer but the original recipe source is unknown. You can easily make this recipe vegan by omitting the plain yogurt and substituting another sweetener for the honey. A link to ras el hanout recipes on this site: http://www.food.com/recipe-finder/condiments-etc/ras-el-hanout. I use this one: Recipe #205185.

Provided by COOKGIRl

Categories     Vegetable

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 11

6 -8 carrots, grated (I used standard orange, indigo and yellow carrots)
1/4 cup sliced almonds, toasted (walnuts, pistachios, pine nuts, hazelnuts are good substitutes)
3 large dates, chopped small (I used a combo of medjool and deglet noor dates)
lettuce leaf
1 lemon, juice and zest of
1 -2 tablespoon honey (Local honey is best! I had to warm the honey a little to make it easier to whisk.)
2 tablespoons extra virgin olive oil
1 -2 teaspoon orange flower water, to taste
1 teaspoon ras el hanout spice mix
1/4 cup greek style plain yogurt
3 -4 tablespoons of fresh mint, minced (save a few leaves for garnish)

Steps:

  • Grate the carrots and place them in a bowl. Stir in most of the almonds (save a few for garnish) and the dates.
  • Whisk together the dressing. Taste and correct seasonings, add more lemon juice or yogurt if necessary. Pour the dressing over the carrot mixture; stir.
  • Serve immediately or cover and chill.
  • Garnish with a few sliced almonds and fresh mint leaves before serving.
  • If desired, the carrot salad can be served over a bed of lettuce. I served it over butter lettuce.

MOROCCAN RAW CARROT SALAD

Moroccan Raw Carrot Salad image

Carrot salads are a relatively new dish, especially raw ones. Until well into the twentieth century, most Europeans ate only cooked carrots, primarily in stews and soups. In the Middle East, people also used them as a component of cooked dishes, but sometimes added grated or minced raw carrots as a minor ingredient to various salads.
