GRANDMA'S FLUFFY WHITE FROSTING



Grandma's Fluffy White Frosting image

Make my Grandma's fluffy white frosting to decorate your favorite cakes or cupcakes! It's a simple recipe I've used for over 45 years.

Number Of Ingredients 8

1 cup milk
1½ Tablespoons cornstarch
1 dash salt
½ cup vegetable shortening
½ cup butter (or margarine) (, softened)
⅔ cup granulated sugar
1⅔ cup powdered sugar (, divided use)
1 teaspoon vanilla extract

Steps:

  • Place milk, cornstarch and a dash of salt in a medium saucepan. Stir or whisk to combine ingredients. Cook on LOW heat, stirring often, until mixture thickens. Once mixture thickens, remove it from the heat; set it aside to cool.
  • In a separate large mixing bowl (or stand mixer), mix together vegetable shortening, butter, granulated sugar and a portion (2/3 cup) of the powdered sugar. Beat these ingredients REALLY WELL for about 15 minutes, until creamy. NOTE: It is important to take the time to mix really well, so the granulated sugar is dissolved and is no longer "grainy".
  • Add vanilla extract, and the completely cooled, thickened milk mixture. Beat ingredients well, until fully incorporated into the frosting.
  • Add remaining cup of powdered sugar to the frosting. Mix well until fully combined. Now the frosting is done. It should be fluffy and light in texture, and ready to use. Will make enough frosting to fully cover a 2 layer round cake or 2 dozen cupcakes.

This is a recipe handed down through my Mom's family for our homemade icing. The taste of it brings back many memories to me! One important tip is to make sure you beat the icing enough. Enjoy! :)

3/4 cup shortening
2 tablespoons white syrup
1 dash salt
1 teaspoon vanilla
4 cups powdered sugar
1/2 cup milk

Steps:

  • Beat the shortening and white syrup together.
  • Add salt and vanilla.
  • Continue beating while adding the powdered sugar and milk alternatively.

I love this icing with the White Cake recipe that I posted. This is not a thick icing like those you buy. This also came from my sister-in-law. We use this for lots of different baked goods that require icing.

Number Of Ingredients 5

2 cups powdered sugar
1/2 teaspoon vanilla
1/2 teaspoon milk, add more to desired consistancy
1 dash salt (may substitute or omit)
1/4 cup butter (for the Buttercream Icing you would add the butter to the recipe)

Steps:

  • Mix powdered sugar and vanilla.
  • Add milk teaspoon by teaspoon until desired consistency.
  • Dash salt.
  • Note: Do NOT pour in the milk.
  • Trust me.
  • Do this as instructed, or you will have to keep adding sugar until you get a good consistency, and then you will end up with enough icing to cover surplus amout of cakes!
  • (If you are icing everything in your home, then go right ahead).

EASY WHITE ICING

This easy white icing recipe yields a foolproof frosting for cakes and cupcakes.

1 1/2 sticks unsalted butter, softened
1 pound (3 2/3 cups) confectioners' sugar
1 to 2 tablespoons milk (optional)

Steps:

  • In a mixing bowl, cream butter until smooth.
  • Gradually add confectioners' sugar; beat until smooth. If too thick to spread, beat in 1 to 2 tablespoons milk.

4 1/2 cups confectioners' sugar
1/4 cup plus 2 tablespoons fresh lemon juice (from 2 lemons), plus more if needed

  • Whisk together sugar and lemon juice until smooth. If icing is too thick, add more lemon juice, 1 teaspoon at a time. Use immediately.

4 large egg whites
3/4 cup sugar
Pinch of salt
2 sticks unsalted butter, cut into pieces, softened
Assorted food coloring

Steps:

  • Whisk the egg whites, sugar and salt in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water) until the mixture is warm and the sugar dissolves. Remove the bowl from the pan; let cool slightly.
  • Beat the egg white mixture in a stand mixer fitted with the whisk attachment (or with a hand mixer) on medium-high speed until stiff peaks form, 12 to 15 minutes. Beat in the butter a few pieces at a time, then continue beating until smooth. (Don't worry if the mixture looks separated at first-it will come together as you keep beating.)

MOM MOMS BUTTERSCOTCH ICING

My Grandmother(Mom Mom) made this icing and put it on everything from chocolate cake to cookies. I love it and can eat it just by the spoonful, be careful when making it as it can easliy become too stiff. I really don't mind if it does because then I would just put it in a pan and cut it like fudge.

1/2 cup butter (no substitutions)
1 cup firmly packed light brown sugar
1/4 cup milk
2 cups confectioners' sugar

Steps:

  • On stovetop melt the butter, add the brown sugar and boil over low heat for two minutes, stirring constantly. Add the milk, stir until the mixture comes to a boil again. Remove from heat and allow to cool to about room temperature.
  • Slowly beat in the confectioners sugar, using more or less sugar depending on the consistency desired. Beat until mixture is thick enough to spread.

I think my husband may have married me in part b/c he loves my white rice, which is actually my Mom's recipe :) I make this in a rice cooker and it comes out perfect every time.

1 cup white rice
1 1/2 cups water
1 tablespoon butter
1 teaspoon olive oil
1 garlic clove, sliced in two halves
1/2 of a small onion
3 dashes salt

Steps:

  • Pour water and white rice in a rice cooker.
  • Add butter and olive oil.
  • Slice the garlic clove in half and add both halves.
  • Slice a small onion in half and add the onion half to the rice cooker. (You can remove the onion half once the rice is done cooking, or it can be eaten.).
  • Add salt.
  • Cook in covered rice cooker.

MOM'S GLOSSY WHITE FROSTING (COOKED)

Delicious, unusual, old-fashioned and beautiful. Very quick to make, even though it's cooked. If you don't have a double-boiler, use the largest of the Farberware saucepans to boil the water and use a round Pyrex or CorningWare bowl to stir the ingredients on top. Choose a bowl with a wide enough lip that it won't fall into the saucepan. Family Note: This is Mom-Mom's recipe exactly.

1/8 teaspoon cream of tartar
3 tablespoons Karo syrup
3/4 cup sugar
1/2 teaspoon vanilla (optional)

Steps:

  • Boil water in bottom of double-boiler pan (or largest saucepan).
  • Put all ingredients except vanilla into top of double-boiler (or round Pyrex bowl) over bowling water.
  • Stir with your finger until the heat is too much to take, then pour mixture into mixer bowl, add vanilla and beat smooth. Continue to beat until opaque and peaks form.
  • Cool before applying to cake.
