SMASHED MEATBALL BURGERS

1 large egg
1/2 cup panko breadcrumbs
1/4 cup whole milk
1/4 cup finely grated Parmesan
2 tablespoons olive oil, plus more for cooking the patties
1/2 yellow onion, finely chopped
Kosher salt and freshly ground black pepper
2 large cloves garlic, minced
2 teaspoons fennel seeds
1/2 pound ground beef
1/2 pound ground pork
Crushed red pepper flakes
1/2 teaspoon dried oregano
1/2 bunch fresh parsley, finely chopped
6 slices mozzarella or provolone
6 ciabatta rolls or big squares of focaccia
Marinara sauce and fresh basil, for serving

Steps:

  • In a large bowl, mix together the egg, breadcrumbs, milk and Parmesan and set aside.
  • Heat the oil in a skillet over medium-high heat and add the onion and a pinch of salt. Cook, stirring, until softened, 5 to 7 minutes. Add the garlic and fennel seeds and cook for another minute. Set aside to cool.
  • Add the ground beef and ground pork to a medium bowl, spreading it out, and sprinkle the surface evenly with 1 teaspoon salt, a few turns of black pepper, a good pinch of crushed red pepper, the oregano and the parsley. Add the cooled onion mixture to the meat mixture. Mix with your hands quickly until just combined (don't overmix). Divide into 6 parts and shape into balls. Sprinkle with salt and pepper.
  • Heat a large cast-iron skillet or a griddle over medium heat and add a thin layer of oil. Cook the meatballs on one side until a brown crust is formed, 1 to 2 minutes, then flip and cook for 2 minutes; then smash with a big metal spatula. Top each with a slice of cheese and cook until the cheese is melted and the internal temperature is 160 degrees F, about 5 more minutes.
  • Toast the rolls or focaccia either in a skillet or the oven, then spread each side with marinara sauce. Top each with a patty and 2 big leaves of basil. Enjoy!

1 teaspoon kosher salt, plus more for seasoning
3 tablespoons (40 grams) extra-virgin olive oil, plus more for drizzling
1/2 large onion (5 1/2 ounces/160 grams), sliced
5 garlic cloves, chopped
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
One 28-ounce (794 grams) can whole plum or San Marzano tomatoes, crushed by hand
One 15-ounce (425 grams) can tomato sauce
1 pound (453 grams) spaghetti
1/4 cup (15 grams) fresh basil leaves, torn
1/2 cup (40 grams) grated Parmesan cheese, plus more for serving
Meatballs (recipe follows)
1 pound (453 grams) 80/20 ground beef
1 pound (453 grams) hot Italian sausage, removed from casings
1 1/2 teaspoons kosher salt
2 large eggs, beaten
1 cup (84 grams) plain dry breadcrumbs
1 cup (40 grams) grated Parmesan cheese
1/2 large onion (5 1/2 ounces/160 grams), grated on the coarse holes of a box grater
1/4 cup (15 grams) chopped fresh Italian parsley
2 garlic cloves, chopped
8 small mozzarella balls/ciliegine (about 15 grams each)

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat.
  • For the sauce: Heat the olive oil in a large Dutch oven over medium heat. Add the onion and season with salt. Cook, stirring occasionally, until it begins to soften, 3 to 4 minutes. Add the garlic, dried oregano and crushed red pepper and cook until fragrant, 30 seconds to 1 minute. Add both types of canned tomatoes and 1 cup of water from the pasta pot. Bring to a boil and then reduce to a simmer until thickened and flavorful, 10 to 15 minutes.
  • Once the meatballs are browned and the sauce has thickened, nestle the meatballs into the sauce and spoon a little of the sauce over each meatball. Reduce the heat to a gentle simmer, cover and simmer while the pasta cooks, about 10 minutes.
  • Add the spaghetti to the boiling water and cook until al dente. Drain the spaghetti and place on a platter. Spoon some sauce onto the spaghetti and toss to coat. Nestle the cooked meatballs into the noodles. Top with desired amount of sauce, a drizzle of olive oil, the fresh basil and grated Parmesan cheese, for serving.
  • Place an oven rack in the middle position. Preheat the oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
  • Combine the beef and sausage in a large bowl and spread out the meat with a wooden spoon. Season with salt. Add the eggs, breadcrumbs, Parmesan, onion, parsley and garlic in a large bowl and mix well with your hands to combine. Divide into 8 equal balls. Use your thumb to hollow out the center of a ball so it resembles a bowl. Stick a mozzarella ball inside and press to seal the mozzarella inside the meat mixture. Roll into a ball and place on the baking sheet. Repeat with the remaining meat mixture and mozzarella.
  • Bake until the meatballs are well browned, 18 to 22 minutes. (They will cook more in the sauce).

Lutefisk is super common around where I live during the holidays since so many families have Scandinavian heritage. It consists of dried white fish that is pickled in lye & it has a very strong smell and a gelatinous texture, it's quite polarizing to a lot of people but to others, it's very nostalgic. Around here it's often served with meatballs and lefse.

2 tablespoons (28 grams) unsalted butter
1 medium yellow onion (300 grams), finely chopped
2 teaspoons chopped fresh sage, about 4 leaves
2 ounces(56 grams) crustless white country bread, cubed (about 1 1/2 cups cubes)
1/3 cup (113 grams) whole milk
12 ounces (340 grams) 80/20 ground beef
12 ounces (340 grams) ground pork
2 tablespoons chopped fresh Italian parsley
1 teaspoon kosher salt
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1 large egg, beaten
3 tablespoons (42 grams) unsalted butter, plus 1 tablespoon
2 teaspoons chopped fresh sage, about 4 leaves
1/4 cup (34 grams) all-purpose flour
3 cups (710 grams) low-sodium beef stock
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper, to taste
1/4 cup (61grams) full fat sour cream
2 tablespoons chopped fresh Italian parsley
Lutefisk (See recipe below)
Mashed Potatoes, for serving (optional)
Lefse, for serving (optional)
1 tablespoon neutral oil
1 store-bought package (1.75 pounds) of frozen, skinless lutefisk, thawed
Kosher salt
Freshly ground black pepper
1 cup melted, unsalted butter, for serving

Steps:

  • For the meatballs: Melt the butter in a large nonstick skillet over medium low heat. Add the onions and sage and cook, stirring occasionally, until deep golden, 15 to 18 minutes. Remove to a small bowl to cool. Wipe the skillet clean with a paper towel, no need to wash.
  • While the onions cool, add the bread cubes to a large bowl. Drizzle the milk over and toss to saturate it. Let sit until the bread is softened, about 5 minutes. Squeeze the bread through your fingers to make a paste. Add the beef, pork, parsley, salt, allspice, ginger, nutmeg, egg, and cooled onions. Mix well with your hands. Roll into meatballs about 1 1/2 inches in diameter (or use a small ice cream scoop - about 2 tablespoons in volume) and rest on a baking sheet or large plate. You should get about 20 to 22 meatballs.
  • For the sauce: Melt 3 tablespoons of butter in the over medium heat. When the butter is melted, brown the meatballs all over, in batches, removing them to the plate or baking sheet as they brown, about 4 minutes per batch. (Don't worry if they aren't cooked through at this point, they'll cook more in the sauce.)
  • Once all the meatballs are out of the pan, add the remaining 1 tablespoon of butter and melt. Add the sage and cook until sizzling, about 30 seconds. Sprinkle in the flour and stir to make a paste. Cook to lightly toast the flour, 1 to 2 minutes. Whisk in the beef stock and Worcestershire sauce until smooth. Adjust the heat so the sauce is simmering and season with salt and pepper to taste.
  • Add the meatballs and simmer, stirring occasionally, until the sauce has thickened and the meatballs are cooked through, 8 to 10 minutes. Turn off the heat.
  • Scoot a few of the meatballs to the side to make a space in the pan and whisk in the sour cream until smooth. Sprinkle with the parsley and serve over mashed potatoes if desired and the lutefisk on the side. Lefse (optional) too, of course.
  • Preheat oven to 375 degrees F.
  • Grease a baking dish with 1 tablespoon of oil. Set aside.
  • Rinse the thawed fish well with cold water and pat dry. Place in the prepared baking dish, cover with foil and bake for 30 minutes or until the fish flakes when pierced with a fork. (The internal temperature should be at 140 degrees F.)
  • Remove the lutefisk from the oven. Season with salt and pepper. Serve with hot melted butter on the side for dressing.
