I looked long and hard for a good-flavored teriyaki marinade recipe that could double as a sauce. Found a few and modified to this.

½ cup soy sauce
2 tablespoons honey
2 tablespoons rice vinegar
2 tablespoons sesame oil
2 tablespoons brown sugar
2 tablespoons sesame seeds
2 cloves minced garlic
1 (1 inch) piece fresh ginger, grated
¼ cup cold water
1 tablespoon cornstarch

Steps:

  • Stir soy sauce, honey, rice vinegar, sesame oil, brown sugar, sesame seeds, garlic, and ginger together in a small saucepan over medium-high heat.
  • Whisk cornstarch into water in a bowl; add to soy sauce mixture. Cook sauce, stirring regularly, at a simmer until thickened, 5 to 7 minutes.

Everyone's favorite flavors come together in this easy marinade. Mix it up with 1 1/2 pounds of chicken to keep in the freezer for those weeks when meal prep falls by the wayside.

1/2 cup soy sauce
1/4 cup canola oil
3 tablespoons sugar
2 teaspoons grated fresh ginger
2 teaspoons toasted sesame oil
2 teaspoons sesame seeds
2 cloves garlic, grated
Kosher salt

Steps:

  • For the marinade: Combine the soy sauce, oil, sugar, ginger, sesame oil, sesame seeds, garlic and 1/2 teaspoon salt in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Remove the chicken from the bag, letting any excess marinade drip off, and transfer to a foil-lined baking sheet. Broil, turning halfway through, until lightly charred, cooked through and an instant-read thermometer registers 165 degrees F, about 12 minutes.

3 tablespoons salad oil
1 1/2 tablespoons light molasses
1 1/4 teaspoons dry mustard
1 1/4 teaspoons ginger
3 -6 garlic cloves, crushed (use as much as you like)

Steps:

  • Mix all ingredients together.
  • In a zip lock bag, pour mixture over up to 3 lbs steak that has been scored in a diamond pattern.
  • Marinate in the refrigerator for at least 3 hours, and up to 24 hours before charbroiling.
  • Turn bag over several times during chilling time.
  • Discard unused marinade.
  • Slice steak thin to serve.

2 pounds shrimp, 16 to 20 count
1/2 cup teriyaki sauce
1/2 cup soy sauce
1/4 cup sesame oil
12 cloves garlic, minced
1/2 cup peeled ginger, minced
2 teaspoons red pepper sauce

Steps:

  • Preheat oven to 400 degrees.
  • Peel shrimp leaving the final tail section intact. Devein and partially butterfly shrimp (only butterfly the area furthest from the tail, so the shrimp will stand properly in a casserole dish). Set shrimp aside.
  • Place all remaining ingredients together in a large mixing bowl. Add shrimp to bowl and marinate for about 1/2 an hour, any longer may toughen the shrimp. Remove shrimp from marinade and stand each one individually in casserole dish, one behind the other, with each tail resting on the shrimp in front of it. Pour marinade into casserole dish covering shrimp approximately 1/2 way. Place shrimp in oven for 12 to 15 minutes.

1/3 cup rice wine or 1/3 cup sake
7 tablespoons sugar
1 1/2 tablespoons minced fresh ginger
1 teaspoon dried chili pepper flakes
1 1/2 tablespoons cornstarch
sesame seeds (toasted, to taste) (optional)

Steps:

  • Mix together all the ingredients in a medium heavy saucepan and heat until thickened, stirring constantly with a wooden spoon to prevent lumps.
  • Remove from heat, cool slightly before using. Can be doubled and stores for a week or so in the fridge.
