This is an emergency substitute for molasses or pancake syrup. Keep in mind that it is a substitute and that the flavor will be much milder than the real thing! But this is the closest substitute you will find. Hope this helps!

1 1/2 c dark brown sugar, firmly packed
1/2 c water

Steps:

  • 1. Put sugar and water into a sauce pan over medium-high heat. Cook stirring constantly until the sugar is dissolved and a thick syrup is formed. Cool and put into a jar.
  • 2. *** This is a substitute... not the real thing! Brown sugar is made by adding molasses to it... so this syrup will have a very mild molasses flavor, but using this substitute could alter the flavor of the recipe (less molasses flavor).

I didn't have molasses for a bread recipe and this worked great. My recipe called for milk so I didn't add the hot water in this recipe. It was easy because I just added the sugar and cream of tartar at the point the recipe called for molasses. I rarely have molasses, and now I wonder why I would ever need to buy that sticky stuff that is so difficult to get out of the jar anyway. Serving size is estimated.

3/4 cup sugar
1 1/4 teaspoons cream of tartar
1/4 cup hot water (or other liquid in recipe)

Steps:

  • Combine sugar and cream of tartar with hot water. If you are making a recipe that calls for a liquid, omit the hot water and just add the sugar and molasses.
  • If there are other spices in the recipe, increase them just a bit to compensate for the loss of molasses flavor.
