1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups Italian dressing

Steps:

  • Place turkey breast in a greased 13x9-in. baking dish. Combine the seasonings; sprinkle over turkey. Pour dressing over the top. , Cover and bake at 325° until a thermometer reads 170°, for 2 to 2-1/2 hours, basting occasionally with pan drippings. Let stand for 10 minutes before slicing.

1 pound carrots, cut into 2-inch pieces
2 medium onions, cut into wedges
3 celery ribs, cut into 2-inch pieces
1 can (14-1/2 ounces) chicken broth
1 bone-in turkey breast (6 to 7 pounds), thawed and skin removed
2 tablespoons olive oil
1-1/2 teaspoons seasoned salt
1 teaspoon Italian seasoning
1/2 teaspoon pepper

Steps:

  • Place vegetables and broth in a 6- or 7-qt. slow cooker; top with turkey breast. Brush turkey with oil; sprinkle with seasonings. , Cook, covered, on low until a thermometer inserted in turkey reads at least 170°, 5-6 hours. Remove turkey from slow cooker; let stand, covered, 15 minutes before carving. Serve with vegetables. If desired, strain cooking juices and thicken for gravy.

¼ cup butter, softened
1 clove garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon salt-free garlic and herb seasoning blend (such as Mrs. Dash®)
salt and ground black pepper to taste
1 (3 pound) turkey breast with skin
1 teaspoon minced shallot
1 tablespoon butter
1 splash dry white wine
1 cup chicken stock
3 tablespoons all-purpose flour
2 tablespoons half-and-half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix 1/4 cup butter, garlic, paprika, Italian seasoning, garlic and herb seasoning, salt, and black pepper in a bowl. Place turkey breast with skin side up into a roasting pan. Loosen skin with your fingers; brush half the butter mixture over the turkey breast and underneath the skin. Reserve remaining butter mixture. Tent turkey breast loosely with aluminum foil.
  • Roast in the preheated oven for 1 hour; baste turkey breast with remaining butter mixture. Return to oven and roast until the juices run clear and an instant-read meat thermometer inserted into the thickest part of the breast, not touching bone, reads 165 degrees F (65 degrees C), about 30 more minutes. Let turkey breast rest 10 to 15 minutes before serving.
  • While turkey is resting, transfer pan drippings to a skillet. Skim off excess grease, leaving about 1 tablespoon in skillet. Place skillet over low heat; cook and stir shallot in turkey grease until opaque, about 5 minutes. Melt 1 tablespoon butter in skillet with shallot and whisk in white wine, scraping any browned bits of food from skillet. Whisk in chicken stock and flour until smooth. Bring to a simmer, whisking constantly, until thickened. For a creamier, lighter gravy, whisk in half-and-half.

PLEASE READ this regarding TEMP & TIME! There is no "right" temperature. If you roast it at 250°F it will just take longer to cook than at 325°F. (Just like picking High or Low on a crock-pot) I cannot tell you exactly how long it will take. It depends on what type of oven you have & how warm/cold your turkey is when you put it in the oven. You HAVE to use an instant read thermometer to know when it is cooked. (I roast my 18-20 lbs. fresh turkey at 250°F. It took about 4 hours to reach the correct temperature in my old convection oven. It took 5 hours in my new one.) Because of the mayo, the skin is crisp and flavorful and the meat is tender, moist and delicious. If you don't use the butter & broth, you will not have enough pan drippings to make gravy. I've also added 1/2 cup of beer or wine to the mixture before & it was also spectacular. With slow roasting it, the meat stays so juicy I've actually had it squirt out when I insert the thermometer! I've never had a better turkey.

1 (5 -20 lb) fresh or frozen turkey (thawed) or 1 (5 -20 lb) turkey breast (thawed)
1/4 cup butter, melted
12 ounces chicken broth (can use part beer or white wine)
1 -2 tablespoon mayonnaise

Steps:

  • Place turkey or turkey breast in a roasting pan.
  • (I use a disposable roasting pan) Combine melted butter and chicken broth.
  • Pour over turkey.
  • Rub mayonnaise all over turkey's exterior.
  • Salt and pepper lightly if desired.
  • Roast at 300°-325°F until internal temperature reaches 170°F on an instant read thermometer. (I raise the temperature to 350° for the last approximate 30-45 minutes to crisp skin).
  • (I roast my 18-20 lbs. fresh turkey at 250°F in a convection oven. It takes about 4 hours to reach the correct temperature.).
  • Remove from oven and let sit for about 30 minutes before slicing.
  • Note: because the butter and broth are for making gravy, if you need to make a lot of gravy, double the amount of both.
  • To make gravy: pour pan drippings into a saucepan and bring to a simmer over medium heat. Add 1 Tbls. cornstarch per cup of broth/drippings to 1/4 cup cold water. (You'll usually need 2-3 Tbls) Mix well to dissolve. Stir cornstarch mixture into broth and stir until thickened. Add salt and pepper to taste. If too thin, dissolve more cornstarch in water and add until desired thickness. If too thick, add water or more broth to thin.

I posted this recipe before I made it and this is what can happen - I DO NOT RECOMMEND THIS RECIPE/ It is labor intensive. Expensive because of the prosciutto and the prosiutto really does nothing for the flavor. So beware! I Like to Brine the bird for 6 hours and use recipe#9954 by Gay Gilmore - It does give you a lovely moist bird

1 (16 lb) whole turkey
4 1/2 tablespoons fresh rosemary, minced
6 tablespoons garlic, minced
8 ounces prosciutto, thinly sliced, chopped
3 tablespoons olive oil
2 cups chicken broth
1/2 cup dry white wine
3 1/2 tablespoons flour

Steps:

  • Pat the turkey dry inside and out.
  • Run your hands under the skin separating it from the breast & thighs.
  • Rub 3 tbsp of rosemary and 3 tablespoons of garlic under the skin over the breast & thighs.
  • Arrange half of the prosciutto under the skin over the breast & thigh.
  • Rub 1 tbsp rosemary & 1 tbsp garlic inside the cavity of the turkey.
  • Place 3 oz of prosciutto inside the cavity.
  • Cover the bird and refridgerate over night.
  • Preheat oven to 450°F.
  • Rub the outside of the bird with oil.
  • Place remaining garlic inside the bird , tie the legs together.
  • Roast turkey for 30 minutes, reduce temp to 325F continue roastiang until thermometer reads 180 inserted into the thickest part of the thigh Apprx 3hours).
  • Baste throughout the roasting time with the chicken broth, pouring a bit over at a time.
  • Remove bird to a platter & tent it with foil.
  • Pour the pan juices into a measuring cup, skim off the fat reserving 3 tbsps.
  • Set roasting pan over medium heat, add wine, bring to a boil scraping up the brown bits , pour wine into the measuring cup with the defatted pan juices.
  • In a sauce pan add the flour to the 3 tbsp of heated fat, stir until it has browned about 2 minutes.
  • Whisk in the pan juices, add 1/2 tsp rosemary.
  • Cook until thickened apprx 5 minutes.
  • Add the reserved 1 oz of Prosciutto.
  • Garnish Turkey with rosemary sprigs.

I use bacon to cover my turkey while cooking to form a seal on the bird and keep it moist inside. The bacon drippings soak into the stuffing as it cooks giving it a fabulous flavor! BUT...the true trick is to cook the bird breast side down...yes you heard right...BREAST SIDE DOWN! Who made up the silly rule that the breast should be up anyways? I "accidently" cooked it this way 3 years ago and it was the juiciest turkey we had ever had, because the breast cooked in the juices all day it didn't dry out at all! Try it...I guarantee you'll love it!

Cooking time is only approximate for a 6-pound bone-in turkey breast, for a larger breast cooking time will need to be adjusted, whatever the size of turkey breast roast until a meat thermometer reads 160 degrees F, for perfect doneness a meat thermometer (instant or regular) should be used --- for the very best flavor a turkey breast with the skin left on is an absolute must and the bone left in would be another plus --- don't forget to save the pan juices to make your favorite gravy or see my recipe#145064 --- a 6-pound turkey breast should feed 4-6 people if you are serving more I suggest to make two or even three depending on how many people you are feeding, you may make all the breasts in the same roasting pan --- NOTE for the best flavor and tenderness it is strongly advised to use a fresh only turkey breast not previously frozen then thawed.

1 cup chicken broth (more if needed while roasting)
1 (6 lb) fresh turkey breast (with skin left on and if possible bone in )
3 tablespoons butter (very soft but not melted)
1/2-1 teaspoon garlic powder
salt & freshly ground black pepper (to taste)
1 large celery rib, cut into thirds
1 large carrot, peeled and cut into chunks (about 1-1/2 to 2 inches)
2 onions, peeled and quartered (do not chop)

Steps:

  • Set oven to 325 degrees F.
  • Grease a roasting pan just large enough to hold the breast/s and veggies (do not use a very large roasting pan).
  • Pour 1 cup broth into the pan.
  • Rinse the turkey breast well under cold water then pat dry using paper towels.
  • Mix the soft butter with the garlic powder.
  • Using hands rub the breast all over with the soft butter including under the skin.
  • Generously season with salt then season lightly with black pepper.
  • Scatter the celery, carrots and onions into the pan over the broth, then place the breast skin-side up over the veggies in the pan.
  • Cover/tent ONLY the breast with a small piece of foil.
  • Roast covered for 30-35 minutes.
  • Remove the foil from the top of the breast and continue to roast for another 2 hours or until a meat thermometer inserted in the thickest part of the breast away from the bone reads 160 degrees F (NOTE if the broth evaporates in the bottom of the pan then continue to add in more as needed).
  • Transfer to a cutting board (the breast temperature will continue to rise to 170 degrees) then tent loosley with foil.
  • *NOTE* if you are planning on making gravy discard the vegetables or you may save them to eat, the choice is up to you, then drain the pan juices though a fine colander into a saucepan, allow to cool, skim off the fat and use the pan dripping to make your favorite gravy.

Easy crock pot recipe that requires a bit of prep but turns out delicious! I created this as an alternative to similar recipes that call for a bottle of Italian dressing, because I prefer to control the ingredients in my recipes. (Does anyone really want to ingest xanthan gum?) Shred the leftovers and use them in all manner of Italian and Mexican dishes! Notes: This recipe requires a large crock pot (I use a 6-qt one). Can be cooked from frozen but doesn't absorb the Italian seasoning as well (because seasonings must be sprinkled atop the skin), and may be difficult to get the lid on the crock pot tightly.

1 whole turkey breast, bone-in
3 tablespoons olive oil or 3 tablespoons canola oil
1/2 cup water
1/4 cup white wine vinegar
1 (1 ounce) packet Italian salad dressing mix (such as Good Seasons)

Steps:

  • Thaw turkey breast in refrigerator. Remaining prep can be done the night before cooking.
  • Wash breast and pat dry.
  • Set breast on cutting board, meaty side up. (Use dishtowels to help hold turkey breast upright, or get someone to hold it for you.).
  • Working from the bottom (pointy) end, use the handle of a wooden spoon or your fingers to separate skin from meat. Do not remove skin. When you are finished, skin should be attached around all sides but loose over the main portion of the breast.
  • Using your fingers or a spoon, sprinkle the dry Italian dressing mix underneath the skin onto the breast meat. Try for relatively even coverage, but don't obsess! The flavor will be well-absorbed throughout the breast.
  • Massage the skin to grind the seasoning mix into the meat as much as possible.
  • Using a meat fork, pierce the breast (through the skin) many times.
  • If prepping the night before, wrap breast and refrigerate. Otherwise, proceed to next step.
  • Rub olive or canola oil over skin of breast, massaging well.
  • Pour water and vinegar into crock pot.
  • Place turkey breast skin-side down in crock pot. If necessary, bend or break ribs in order to get lid on tightly. Do not use foil to hold breast upright, as the vinegar will react with the foil. If you have to position breast on its side, see step 13.
  • Cook on low setting for 8-10 hours or until a meat thermometer inserted in thickest part of breast registers at least 190°F.
  • If you had to position the breast on its side, turn breast over once halfway through cooking time OR for several minutes after cooking has finished, so that the top side can marinate in the juices.
  • Slice or shred and serve hot with your favorite side dish. Alternatively, cool and shred meat, freezing portions for later use (my favorite use for this recipe!).
