Steps:
- Peel tomato and chop. Set aside.
- Add finely chopped onion to a frying pan and cook until clear.
- Add butter and tomato to pan and cook well.
- Beat egg and add to mixture along with herbs. Cook and stir in salt and pepper to taste.
- Blend a little with a stick blender or chopper if desired to achieve a finer texture or serve as is.
- Serve cool.

- In a large bowl, combine the first five ingredients. Crumble ground meat over mixture and mix well. Shape a 1/4 cupful of meat mixture around each Popsicle stick to resemble a 3-in. log., In a shallow bowl, whisk egg and milk. Place cornflake crumbs in another shallow bowl. Coat each leg in crumbs, then dip in egg mixture and recoat in crumbs. Let stand for 5 minutes. Preheat oven to 350°., In an electric skillet, heat 1/4 in. oil to 375°. Fry legs, a few at a time, for 1 minute on each side or until golden brown. Drain on paper towels. , Arrange on an ungreased baking sheet. Bake until no pink remains and a thermometer reads 160°, 15-20 minutes.

- 1. In a Large stock pot, saute Onions, celery, and carrots in Olive oil until onions are transparent. Add Salt and pepper.
- 2. Turn up the heat and add Vegetable stock and potatoes. Bring to a boil, and then simmer until potatoes are tender. Add Curry, rosemary, and parsley. Taste, and adjust seasonings to your liking!
- 3. Ladle over bowls of warm noodles and serve! Eat it up, it's GOOD for you! :)

- Put the water into a large stockpot on high heat.
- Add the vegetables to the pot, then stir in the garlic, bay leaves, thyme, tumeric, salt, and parsely.
- Bring to a boil and cook uncovered for 15 minutes.
- Cover the pot, reduce heat to low, and simmer for one hour.
- Set aside to cool and then strain.
- Use the stock right away, refrigerate it in a sealed container for four days, or freeze it for up to six months.

This is another of my elderly Mum's recipes - don't know what it has to do with chicken except that it contains mixed herbs which is usually part of chicken stuffing ingredients. It is great for spreading on savoury biscuits.

VEGAN MOCK CHICKEN NOODLE SOUP
My wife is a vegetarian but was sick one day and was craving some soup. This is what I came up with. I've found that the smaller you chop the seitan, the better the results. This recipe is vegan, but I've also made it for myself substituting with one can of canned chicken, 5 cans chicken stock, and 2 tablespoons of butter and it turned out great, too. If you can't locate vegan noodles, the shirataki noodles make a great substitute, but remember to rinse them in water and slice them in half with scissors before adding to the soup. The cayenne pepper really helps with a stuffy nose, but can be safely omitted without sacrificing flavor. As with all recipes, taste throughout, adjust spices if needed as dry spices lose their potency over time.

- Bring 2 tbsp of oil and margarine to medium heat in a large pot.
- Add celery, carrots, onions and garlic. Season with salt and pepper to taste. Saute over medium heat for about 5 minutes, stirring frequently to avoid burning.
- Add chopped Seitan to the vegetables and 1 tbsp of the grill chicken seasoning, then saute for about 10 minutes more over medium heat, until onions are opaque and carrots are soft. (This step is important, don't under cook the vegetables!).
- Slowly pour in vegetable stock, then add noodles, bay leaves, parsley, garlic powder, and the rest of the grill chicken seasoning. Also, if desired, add cayenne pepper and/or bouquet garni.
- Bring to a boil, then reduce to simmer and cover, cooking for about 30 to 45 minutes. Stir frequently. It's important that all of the dry spices have time to soften and season the broth, so extend cooking time if needed.
- Remove bay leaves, then serve.

- Tip everything into a large saucepan with a pinch of salt then cover with 2 litres of water. Bring to the boil, then reduce to a simmer and cook for 3 hours, skimming when needed. MOCK CONDENSED CREAM OF CHICKEN SOUP - MODIFIED AHA
Entered for safekeeping. Diabetics and heart patients need to watch their carbs and their sodium, but they still need to eat, and cream of chicken soup is satisfying and useful for other recipes. This has been adapted from the American Heart Association Low-Fat, Low-Cholesterol Cookbook of 1989. This will replace one can of condensed cream of chicken soup.

- In a small pan over medium-high heat, heat stock and bay leaf until liquid simmers.
- Add chicken. When stock begins to simmer again, reduce heat to simmer.
- Cover and simmer about 5 minutes, or until chicken is no longer pink. Remove from heat. Remove chicken from stock and reserve for step 8.
- In a small saucepan over medium heat, heat oil. Add flour, stirring constantly for about 1 minute.
- Gradually add the stock (with the bay leaf), milk, Butter Buds and pepper, stirring constantly until mixture thickens, about 2-3 minutes.
- Removed from heat. Remove and discard bay leaf.
- Pour soup into a blender and blend until smooth.
- Add cooked chicken and garlic powder to blender, and blend until pureed.
