1/2 cup all-purpose flour
1 cup sliced almonds
1 egg
1 tablespoon water
2 logs (4 ounces each) fresh goat cheese
1 package (10 ounces) Italian-blend salad greens
1/3 cup balsamic vinaigrette

Steps:

  • Place flour and almonds in separate shallow bowls. In another shallow bowl, beat egg and water. Cut each cheese log into six slices; roll in flour, then dip into egg mixture. Roll in almonds, pressing gently into cheese. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 10 minutes or until lightly browned. , Divide salad greens among six plates; top each with two warm cheese slices. Drizzle with vinaigrette.

1/2 cup toasted almonds
4 ounces goat cheese
2 tablespoons plain Greek yogurt
3 tablespoons white wine vinegar
2 tablespoons plus 1 teaspoon orange marmalade
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
6 ounces mixed baby greens
3 cups fresh Bing cherries, pitted (about 1 1/2 pounds before pitting)

Steps:

  • Place toasted almonds in a food processor and pulse until finely ground (but not buttery). Pour out onto a plate. Place goat cheese and yogurt in food processor; pulse until smooth. Using a tablespoon, scoop out cheese mixture and roll slightly into eight balls about the size of sweet cherries.
  • Roll cheese balls into almonds, coating thoroughly. Cover and chill until firm, approximately 1 hour.
  • Whisk vinegar, marmalade, oil, salt, and pepper in a large bowl. Add greens and cherries. Toss. Top with cheese balls and serve.

1 cup cherry tomatoes, halved
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 cup pecans
6 to 8 cups mixed greens
1 ripe pear, such as D'anjou, cored and sliced into 1/4-inch slices
1/4 cup champagne vinegar
1/4 cup freshly squeezed orange juice
1 teaspoon honey
1 teaspoon country Dijon mustard
1 small shallot, finely chopped
1/2 cup olive oil
Kosher salt and freshly ground black pepper
3/4 cup vegetable oil
One 8-ounce log goat cheese
1/4 cup all-purpose flour
1 large egg, slightly beaten
3/4 cup panko breadcrumbs

Steps:

  • For the salad: Place the tomatoes on a baking sheet, drizzle with some olive oil and sprinkle with salt and pepper. Roast until tender and starting to brown, about 20 minutes. Let cool.
  • Meanwhile, toast the pecans in a large skillet over medium heat, tossing occasionally, until fragrant, 3 to 4 minutes. Let cool, then chop.
  • For the vinaigrette: Whisk together the champagne vinegar, orange juice, honey, Dijon and shallot in a medium bowl. Slowly whisk in the olive oil; season with some salt and pepper.
  • For the goat cheese croutons: Heat the vegetable oil in a medium skillet over medium-high heat. Slice the goat cheese into 8 equal rounds. Add to 3 shallow dishes, the flour, egg and panko. Coat each goat cheese round with flour, then egg and then panko, shaking off excess, and fry until golden on both sides, about 1 minute per side. Transfer to a paper-towel lined rack or plate.
  • To assemble the salad, toss the greens, pear, pecans and tomatoes in a large bowl. Drizzle with some vinaigrette and gently toss to fully combine. Divide the salad among 4 salad plates, top each with 2 goat cheese croutons, and serve.

2 cups Mediterranean-style mixed salad greens
2 tablespoons sun-dried tomatoes (packed in olive oil), chopped
1 tablespoon goat cheese, crumbled
2 tablespoons grated Parmesan, plus more for garnish
Pinch salt
Pinch freshly ground black pepper

Steps:

  • Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving 1/2 cup of the water.
  • In medium bowl, mix the salad greens with the sun-dried tomatoes, goat cheese, and Parmesan. Top with warm pasta and 1/2 cup of the reserved pasta water. Toss to combine and wilt the greens. Steps:

  • For almonds:
  • Place foil on work surface. Stir sugar and 1/4 cup water in heavy medium saucepan over low heat until sugar dissolves, brushing down sides of pan with wet pastry brush. Increase heat and boil without stirring until mixture turns deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Mix in almonds. Immediately pour out onto foil, separating almonds with fork. Cool completely (mixture will harden).
  • For salad:
  • Boil apple cider in heavy large saucepan until reduced to 1/2 cup, about 23 minutes. Transfer to medium bowl and chill until cold. Add vinegar, onion, mustard and poppy seeds. Gradually whisk in olive oil. Season dressing to taste with salt and pepper. Toss greens, cheese and almonds in bowl with enough dressing to coat; serve.

3/4 cup walnuts
4 slices Pullman loaf bread, or other tight crumb white bread, crusts removed
1/2 bunch fresh chives, finely chopped
1/2 bunch fresh flat-leaf parsley, finely chopped
1 (11-ounce) log goat cheese, cut into 6 equal pieces
Kosher salt
2 eggs, beaten with 1 tablespoon water
Extra-virgin olive oil
1 shallot, minced
1 tablespoon Dijon mustard
2 to 3 tablespoons sherry vinegar
1 head radicchio, cut into bite-size pieces
2 cups baby arugula, washed
2 heads Belgian endive, cut into 1/2-inch lengths crosswise

Steps:

  • For the goat cheese: In a food processor, pulse the walnuts until they are coarsely chopped. Tear the bread into pieces and pulse in the food processor with the chopped walnuts until they become coarse breadcrumbs. Transfer the breadcrumb mixture to a wide, flat dish. Stir in the chopped chives and parsley. Flatten each piece of goat cheese into a disk and season with salt. Dip each disk in the beaten egg mixture and then coat with the breadcrumbs, packing the crumbs onto each disk. When all the goat cheese has been coated, chill them in the fridge for at least 1 hour.
  • Preheat the oven to 200 degrees F.
  • To help facilitate the frying process, pop the disks in the freezer for 15 minutes before frying.
  • Coat a large, nonstick saute pan generously with olive oil and bring to a medium-high heat. Carefully fry the goat cheese disks in the hot oil on both sides until they are golden brown and crispy, about 2 minutes per side.
  • When all of the disks have been fried, keep them warm in the oven.
  • Remove the oil and any burned bits from the pan and give a splash of new oil. Reduce the heat to low, add the shallots to the pan, and let them cook as the pan cools slightly. Add the Dijon and sherry vinegar to the pan and whisk to combine. Add the radicchio, arugula, and endive and season with salt. Toss to fully incorporate with the vinaigrette and to allow the salad to slightly wilt. Taste to make sure it is delicious.
  • Divide the wilted salad between serving plates and top each salad with a goat cheese disk.

5 1/2 ounces about 2/3 cup fresh goat cheese
4 teaspoons extra virgin olive oil, divided plus more as needed
1 tablespoon extra virgin olive oil, divided plus more as needed
4 teaspoons dry white wine
kosher salt & freshly ground black pepper
1 1/2 tablespoons chopped fresh herbs (at least two from the following ( parsley, chives, tarragon, dill)
1 1/2 teaspoons finely grated lemon zest
8 baguette, slices cut 1/2 inch diagonally
1 tablespoon white wine vinegar
1/4 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil
5 ounces mixed spring greens

Steps:

  • To make crostini:.
  • 1. In a food processor (or mixing bowl with a wooden spoon) add the goat cheese, 4 teaspoons olive oil and the wine. Pulse one or two times, just to blend. The mixture should be spreadable; if too thick, add more olive oil and pulse again. Transfer mixture to bowl, and stir in salt and pepper to taste, herbs and lemon zest. Chill for 30 minutes.
  • 2. Preheat oven to 400 degrees. Place baguette slices on a large baking sheet and brush lightly on both sides with remaining olive oil (using more oil as necessary). Bake for about 5 minutes on one side; turn and bake another 3 minutes on the second side. Set aside.
  • To make salad:.
  • 1. In a small bowl combine the vinegar, mustard, salt and pepper to taste and whisk to blend. Slowly whisk in the olive oil. (feel free to use more olive oil and vinegar if wanted).
  • 2. Just before serving, add dressing to mixed greens and toss gently. Divide among 4 salad plates. Spread a nice schmear of herbed cheese on the toasted baguette slices and place 2 slices on each plate on top of the salads. Serve immediately.

I have not used the goat cheese but have made this several times using crumbled feta. When adding the cheese, I don't measure but give a nice sprinkling. The dressing makes it all come together.
