Yield Makes about 1 cup

Number Of Ingredients 8

1/3 cup unseasoned rice vinegar
1/4 cup mirin
1/4 cup vegetable oil
2 tablespoons finely grated carrot
2 tablespoons white miso
1 tablespoon finely grated peeled ginger
2 teaspoons finely grated peeled turmeric or 1/2 teaspoon ground turmeric
1 teaspoon toasted sesame oil

Steps:

  • Whisk vinegar, mirin, vegetable oil, carrot, miso, ginger, turmeric, and sesame oil in a small bowl.
  • Do Ahead
  • Veggies can be made 5 days ahead. Cover and chill.

⅔ cup rice vinegar
⅓ cup olive oil
2 tablespoons miso paste
2 tablespoons sesame oil
2 tablespoons honey
2 tablespoons low-sodium tamari or reduced-sodium soy sauce
2 cloves garlic, peeled
1 (2 inch) piece peeled ginger
1 tablespoon toasted sesame seeds
1 tablespoon ground turmeric
½ teaspoon black pepper

Steps:

  • Combine rice vinegar, olive oil, miso paste, sesame oil, honey, tamari, garlic, ginger, sesame seeds, turmeric, and pepper in a food processor; blend until creamy, about 1 minute. Store dressing in a sealed jar in the fridge.
