Fresh cherries are in season! What better way to use them than in a fresh cherry pie. Add a little cool whip lite on top to make it even sweeter for just a few more calories!

1 recipe pastry for a 9 inch double crust pie
4 tablespoons quick-cooking tapioca
1/8 teaspoon salt
1 cup white sugar
4 cups pitted cherries
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1 1/2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in pie pan. Set top crust aside, covered.
  • In a large mixing bowl combine tapioca, salt, sugar, cherries and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top. Place pie on a foil lined cookie sheet --- in case of drips!
  • Bake for 50 minutes, until golden brown.
  • One, 9-inch pie. 8 servings.

4 cups pitted fresh sour cherries
1-1/2 cups sugar
3 Tbsp. MINUTE Tapioca
1/4 tsp. almond extract
1 pkg. (15 oz.) ready-to-use refrigerated pie crusts (2 crusts)
1 Tbsp. butter or margarine, cut up

Steps:

  • Preheat oven to 400°F. Toss cherries with sugar, tapioca and extract. Let stand 15 min.
  • Prepare pie crust as directed on package for 2-crust pie, using 9-inch pie plate. Fill with cherry mixture. Dot with butter. Cover with second pie crust. Seal and flute edge. Cut several slits in top crust to permit steam to escape.
  • Bake 45 to 50 min. or until juices form bubbles that burst slowly. Cool.

This is a pie I make with Trader Joe's Dark Morello Cherries - the kind that come in a large glass jar. Aldi also sells similar cherries. You'll need one jar of cherries for a 9 inch shallow pie, but you can double the filling and make a deeper, higher fruit pie if you need to.

Enough crust for a double crust pie (9 inch deep dish)
1/2 cup sugar
1 1/4 tablespoons Minute Tapioca
Pinch of salt
1 1/2 cups drained dark Morello cherries (from one 24 oz jar)
1/4 cup cherry liquid from jar
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
2 teaspoons butter (cut into thin slices)

Steps:

  • Preheat oven to 400 degrees F.. Put a rimmed baking sheet in to preheat along with the oven.
  • Have ready a 9 inch deep dish pie plate lined with pie dough.
  • In a mixing bowl, stir together sugar, tapioca and salt.
  • Add the cherries and toss to coat, then stir in cherry juice, almond extract and vanilla. Allow the mixture to stand for 15 minutes.
  • Pour mixture into pie dish using only as much as needed (you may have more filling depending on the depth of your dish -- if you overfill, it will bubble over). Dot with butter. Roll out your top crust and lay it over, then seal edges and cut vents. Alternatively, use a lattice.
  • Set the pie on the hot rimmed baking sheet. Bake at 400 degrees for 30 minutes. Reduce heat to 350 and bake for another 30 minutes. Let the pie cool for several hours, then chill slightly. Return to room temperature and cut.

This is an amazing sour cherry pie that I bake every summer with fresh sour cherries that we pick up in our garden! I got the original recipe from epicurious. The pie can even be cooked with Bing cherries if you add 1 tablespoon of fresh lemon to the filling.

1 1/4 cups all-purpose flour
1/4 cup oatmeal
6 tablespoons brown sugar (Movado sugar)

1 cup sugar
3 1/2 tablespoons all-purpose flour

Steps:

  • Roll out a pie crust disk on floured surpace. Transfer to a 12 inch pie dish. Trim overhang to 1 inchl. Fold edges under. Crim, forming high rim. Chill at least 30 minutes and up to a day.
  • For crumble:Mix first 6 ingredients in a bowl. Add butter which should be at room temperature as well as vanilla. Rub with fingers until small clumps form.
  • For filling:Position rack in enter of oven. Preheat to 375°F Place foil-lined baking sheet in bottom of oven to catch spills. Mix sugar, flour, cinnamon and sald in large bowl. Add cherries, toss to coat. Let stand until cherries begin to release juice, stirring occasionally, about 10 minutes. Add almond extract and tapioca before mixing gently and transfering filling to chilled crust, mounding in center. You can decrease amount of tapioca if your cherries are not very juicy. Sprinkle crumble over, covering completely and pressing to adhere.
  • Bake pie 20 minutes. Tent loosely with foil. Bake until filling bubbles thickly and streusel is golden, about 1 hour 15 minutes longer. Cool on a rack.

Printed on the back box of Kraft Minute Tapioca and found on the Kraft site, this was the first berry pie recipe I ever tried when I was a teenager. Since that time the recipe has never failed me. Usually I use a variety of locally grown berries in addition to or in place of the blueberries: marionberries, raspberries, strawberries, blackberries, etc. Berry season here in Oregon is quickly approaching and we are anxious to start cooking with them again! I've also subbed brown sugar for part of the white sugar and used vanilla extract for almond. This is a very forgiving recipe. I searched high and low all over Recipezaar to see if this recipe were posted and by all accounts it is not. That surprises me considering this recipe has been around for ages! 1 cup unbleached white sugar
1/4 cup minute tapioca ("instant")

1/2 cup shortening
1/4 cup ice water
FILLING:
2 cans (16 ounces each) tart cherries
1 cup sugar

1/4 teaspoon salt
Red food coloring, optional

  • In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half. Roll out one portion.
