SAUSAGE POPOVERS
This is one of those basic dishes that you can spiff up in anyway you please. You can add cheese, veggies or anything that you like to make it more savory for a main course dinner. I can think of about a 10 herbs that would taste great in this depending on what meats and vegetables you use.

Steps:
- Grease bottom of an 8 inch baking pan.
- Heat oven to 400 degrees.
- Beat together the eggs, milk, oil, four and salt until smooth.
- Pour batter into the greased pan and top with meat (and anyother leftovers you would like to use) Bake 35 minutes.
- We serve this with maple syrup or molasses when we use the breakfast sausage, but I imagine that mustard, ketchup or other condiments would be more appropriate for different types of"toppings".
BREAKFAST POPOVERS WITH ITALIAN SAUSAGE

Steps:
- Place an oven rack in the center of the oven and preheat to 400 degrees F. Butter the muffin cups.
- Heat the oil over medium heat in a medium nonstick skillet. Add the sausage and break it into 1/4-to-1/2-inch pieces using a wooden spoon. Cook until brown and cooked through, about 6 minutes. Add the garlic and cook until aromatic, about 30 seconds. Spoon about 1 1/2 tablespoons sausage into each muffin cup. Sprinkle the cheese on top of the sausage.
- Blend the eggs in a blender until frothy, about 15 seconds. Add the milk, flour, green onions, basil, salt and pepper. Blend until just incorporated. Pour the batter into the muffin cups, filling each cup to just below the rim. Bake, without opening the oven door, until puffed and golden, about 35 minutes.
- Place the popovers on a platter and drizzle with maple syrup.
TOMATO & SAUSAGE POPOVERS
Steps:
- Step 1 Preheat the oven to 425° F. Grease a mini muffin tin with butter or cooking spray. Step 2 On medium heat, add olive oil, sausage, tomatoes, and herbs to a pan. Cook until the sausage has browned and blended with the tomatoes, about 5 to 7 minutes. Season with salt and pepper, then let cool. Step 3 Place milk in a bowl and microwave for about 40 seconds to warm it up. Whisk in the eggs, butter, flour, and salt until smooth. Heat up the empty muffin tin in the oven for 2 to 3 minutes. Then working quickly, add the batter to fill each cup ¾ of the way. Add a spoonful of the sausage mixture to each cup, then top with more batter until the cup is full, but not overflowing. Sprinkle cheese on each. Step 4 Bake in the oven for 10 to 15 minutes, or until they are golden brown and puffed up over the sides. Serve immediately. Recipe created by Abigail Harris Shea
TRADITIONAL BRITISH TOAD-IN-THE-HOLE AND MINI TOADS TOO!
Comfort food at its best! A traditional recipe handed down to me by my Mum and her Mum before her......it was my favourite after school tea time meal & is still a firm family favourite even now! I serve mine with lashings of onion gravy and piles of fluffy & buttery mashed potatoes. I used to make mini versions of this recipe for my daughter when she was little - they make great appetizers before a Halloween/Bonfire night supper or a children's Party! For the mini version, just use a small cake/pie tins or a small muffin tray and split your sausages into quarters OR use cocktail sausages. The following recipe is for 4 people served with potatoes & gravy - the recipe can easily be doubled for more people or if served by itself.

- Preheat oven to 220°C or 450°F.
- Pour the dripping or vegetable oil into a large metal roasting tin. Place the tin in the preheated oven whilst you make the batter to heat the oil/dripping up.When the fat is hot, add the sausages and turn them over to coat them.Cook for about 10 minutes.
- Make the Yorkshire pudding batter - Mix flour, salt & pepper together in a large roomy mixing bowl. Make a hollow in the centre & add the egg, mixing it into the flour with a wooden spoon.Add the milk gradually until all the flour and egg is worked in and smooth. Add any remaining milk and beat well with a balloon whisk or hand held beater.
- Take the roasting tin with the sausages out from the oven and very QUICKLY pour the batter over the partly cooked sausages. Swirl around to make sure it covers everywhere.
- Put them back into the oven cook for a further 30 minutes or until the batter has puffed up and the sausages are sizzling and brown!
- Cut into 4 quarters and serve straight away with hot onion gravy & mashed potatoes!
- You can also use pork or lamb chops instead of sausages - making sure they are not too thick. I often use pork chops with quartered apple and stuffing balls which is really lovely!
- MINI TOADS:.
- Twist a sausage into half and carefully cut through the skin to make 2 sausages - do this once more to each half making a total of 4 small sausages out of one big sausage. (Or use party cocktail sausages - mini frankfurters) carry on until you have made 12 mini sausages. Follow the instructions above, but only cook the mini sausages for about 5 minutes first and then another 15 minutes with the batter. Serve with tomato ketchup or home made tomato sauce/relish and mugs of soup for a great Winter supper!
SAUSAGE AND VEGETABLE POPOVER
This came from an old Betty Crocker Cookbook. It looks a bit intimidating, but is actually fairly quick and easy. I use Turkey Kielbasa and low fat cheese.

Steps:
- Cook and stir sausage, chilies, chili powder, oregano, seasoned salt, cumin, garlic powder and sugar in oil in a 12 inch skillet until sausages are light brown.
- Stir in corn and mushrooms.
- Keep warm.
- Heat oven to 400.
- Heat butter in a 9 inch deep dish pie plate until melted.
- Beat eggs, flour and milk until smooth.
- Pour into pie plate.
- Mound sausage mix into pie plate to within 1 inch of edge.
- Cook uncovered for 20 minutes.
- Sprinkle with cheese.
- Cook 10 to 15 minutes more, until cheese melts.
- Sprinkle with onions.
- Serve.

- Position a rack in the lower third of an oven and preheat to 450°F.
- Generously brush two 12-cup mini-muffin pans with vegetable oil.
- In a large bowl, whisk together the flour, salt, white pepper and parsley.
- In a large measuring cup, whisk together the milk, eggs and butter.
- Pour the wet ingredients over the dry ingredients and whisk together until just combined (don't worry if a few lumps remain).
- Pour the batter into the prepared muffin cups to within about 1/4 inch of the rim (about 1 1/2 Tbs. each).
- Place a scant 1 tsp crumbled cheese in the center of each filled cup.
- Bake for 10 minutes.
- Do not open the oven door during this time.
- Reduce the oven temperature to 350°F and continue to bake until the popovers are brown and crusty and fully puffed, 8 to 10 minutes more.
- Remove from the oven and immediately transfer the popovers to a napkin-lined bowl or warmed platter.
- Serve immediately.
- Or, let cool on wire racks for up to 2 hours, then reheat in a 350°F oven for 10 minutes.

- Preheat the oven to 375 degrees F.
- Place eight 6-oz custard cups on a large baking sheet.
- Spoon 1 1/2 tsp of shortening into the bottom of each custard cup and set aside.
- Combine the flour and salt in a large bowl, then gradually stir in the milk and water until well blended.
- Beat in the eggs, 1 at a time, beating until smooth after each addition.
- Fold in the cheddar cheese.
- Place the baking sheet with the custard cups in the preheated oven for 3 to 5 minutes until the shortening melts and the custard cups are hot.
- Fill the custard cups 1/2 to 2/3rds full with the batter.
- Bake for 45 minutes in the preheated oven, without opening the oven door until the popovers rise and turn golden brown.
- If not golden brown after 45 minutes, bake for an additional 5 minutes.
- Serve piping hot.

PEPPERONI PIZZA POPOVERS
This is a delicious snack or light lunch. You can add more toppings such as mushrooms, onions, peppers, olives, etc. but just keep in mind that these are a little smaller than a standard muffin.

- Preheat oven to 400°F Using cooking spray coat muffin pan bottom & sides.
- In a medium mixing bowl beat eggs, milk & oil with whisk until combined.
- Add flour, basil, oregano & garlic powder. Beat until well combined. Stir in pepperoni.
- Fill prepared muffin pan HALF full of batter. Bake at 400 F for about 20 minutes or until popovers appear dry.
- Remove from oven and add a teaspoon to tablespoon of marinara sauce on the top of each popover. Sprinkle cheese and bake for an additional 5 minutes longer.
- Remove from pan & serve. Enjoy!
