Steps:
- Preheat oven to 400˚F (200˚C).
- Place the puff pastry sheets on top of each other on a parchment paper-lined baking sheet. Use a large bowl or plate to cut around the outside, and remove the excess dough.
- Remove the top piece of puff pastry and sprinkle half of the cheese on the bottom piece, followed by ham and the rest of the cheese. Place the other round of puff pastry on top.
- Place a mason jar, or glass in the middle of the puff pastry circle. Cut the dough up to the cup, creating strips all the way around.
- Twist each strip twice, so that it's still attached to the center.
- Bake for 35-40 minutes or until the crust is golden brown.
- Mix the mayonnaise, mustard, honey, salt, pepper, and garlic powder together until well combined.
- Serve the ham and cheese twists with the dip.

Steps:
- In a large bowl, mash the potatoes until there are no lumps.
- Add the cheddar cheese, cream cheese, bacon, scallions, salt, pepper, and onion powder.
- Mix until smooth.
- Transfer the mixture to a baking sheet lined with parchment paper. Smooth out the top.
- Lay a 1-inch (2.5 cm) square of cheddar cheese in the center of a slice of ham. Fold the edges of the ham over the cheese, making a tight parcel. Repeat with the remaining ham and cheese.
- Press a ham-and-cheese square into the potato mixture, making sure to leave 1 inch (2-cm) of space on all sides. Repeat with the rest of the squares.
- Push the potato mixture around to cover up and seal the tops of the ham squares, then smooth out again.
- Freeze for 30 minutes, then slice the mixture into squares so each square has a ham square in the middle.
- Place the flour, eggs, and panko into 3 separate medium bowls.
- Dip a square into the flour, shaking off any excess. Dredge in the egg, then in the panko. Repeat with the remaining squares.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Fry the potato squares two at a time until golden brown, about 4-5 minutes, then drain on paper towels.

EGGS WITH CREAM CHEESE AND HAM
One of my favourite breakfasts - quick and healthy. I originally found it in a magazine (don't remember which one) and now make it all the time! I don't generally like microwave cooking, so when I first tried this recipe I attempted to adapt it to the oven. My advice to you: don't bother. The results aren't nearly as good!

Steps:
- Scramble eggs and add cream cheese in small spoonfuls.
- Stir vigourously to break cream cheese up a bit more.
- Stir in ham and divide mixture evenly between two greased 1-cup ramekins.
- Microwave on high for about 5 minutes. This is VERY approximate, as every microwave is very different. Test for done-ness by inserting a fork or knife along the edge and gently pushing the eggs out of the way. If you can see liquid at the bottom of the ramekin, the eggs need to be cooked a little longer.
- Turn each ramekin upside down onto a plate (the eggs should slide out quite easily) and top with a spoonful of salsa each.
PERFECT HAM AND CHEESE SCRAMBLED EGGS
I hate scrambled eggs. Except, that is, when I make them. These, I like. If you're looking for firm eggs, go somewhere else; these are both moist and gooey, while not undercooked (I have a horror of salmonella). Simply double to serve 3 to 4 (or two people with bigger appetites).

Steps:
- Spray non-stick frying pan with cooking spray.
- Heat up over medium to medium-high heat.
- (Use medium on an electric stove, medium-high on a gas.) While pan is heating, whisk together eggs, Worcestershire sauce, milk, salt, and pepper with a fork, just until blended.
- Pour into pan and stir continually for about 2 to 3 minutes, until eggs are cooked.
- Because of the milk, they will remain moist, but they should not be runny or sticky.
- Turn off heat, but leave pan on burner.
- Add ham and cheese.
- Stir until everything is mixed, ham is heated, and cheese is melted.
- Yum!
