COLLARD GREENS WITH BACON
Good ole country collard greens with bacon and onion. These are so hearty and satisfying, even those who say "I don't like greens" will eat these up! You might even get a "Wow!" after the first bite and a "not at all like I remember them tasting". You can eat them alone but they're best with hot buttered cornbread. Mustard and turnip greens are great this way too. Enjoy!

Steps:
- Place bacon in a heavy pot and cook over medium-high heat, turning occasionally, until fat begins to render, about 5 minutes. Drain off 1/2 of the bacon grease.
- Reduce heat to medium and add onion. Cook, stirring often, for about 5 minutes. Add garlic, red pepper flakes, salt, and pepper; cook and stir for 2 minutes.
- Increase heat to high and immediately pour in 3 cups water. Bring to a boil, stirring to scrape up browned bits from the bottom of the pot. Add chopped collard greens and 1 more cup of water. Bring back to a boil. Reduce heat and simmer until greens are tender, about 1 hour.

COLLARD GREENS
Steps:
- In a high-sided skillet, cook the bacon over medium heat until brown, about 5 minutes. In the same pan add the onions and saute until translucent, about 5 minutes.
- Strip the leaves from the tough stems of the collard greens. Stack the leaves, roll them up and cut them into thin strips.
- To the skillet with the bacon and onions, add the garlic and red pepper flakes, brown sugar, cider vinegar, salt and pepper, to taste. Add the greens, stir and cover the skillet. Cook for 15 minutes, stirring halfway though. Collards are done when tender and no longer bitter. Remove from heat to a serving bowl. Serve the greens with the Light and Crispy Fried Chicken, if desired.

Steps:
- Put greens through several sinks of cold water to get rid of any grit.
- Pull the tender leaves away from the stems, discarding the stems.
- Cut the bacon into bite size pieces and fry in a large stock pot.
- Do not drain.
- Add the onion and cook til tender.
- Add the collard greens (the pot will seems overflowing, but they wilt) and stir until wilted (cover them every couple of minutes for a couple of minutes to help wilt them).
- Add salt and pepper to taste and the vinegar.
- Serve hot.

I love Soul Food! My mother was from the South, so Southern style cooking is what I grew up eating. Over the years, I have played around with different ingredients and came up with this recipe. Hope you all enjoy!

- 1. In a large pot, boil turkey for 1 hour or until tender (covered)
- 2. Once turkey is tender, take meat off of bone and set aside in bowl. reserving broth, if you will use it in the recipe.
- 3. Fry the bacon in a large heavy-bottomed pot over medium heat until just done but not quite crispy yet. Add the onion and collards, and sauté in the hot grease until they wilt.
- 4. Pour the water or broth in the pot --- it should just cover the collards. Add the turkey, brown sugar, minced garlic, apple cider vinegar, all spices, jalapeno and hot sauce. Mix well.
- 5. Bring to a boil then cover, reduce heat to low and simmer for 3 ½ - 4 hours.
- 6. Season with additional salt, hot sauce and pepper to taste.

I've never made collard greens before, but found this recipe online and gave it a try. My whole family loved them. They were great! UPDATE: I just made them without bacon since I didn't have any and just added a smoky hot sauce and they were still good. Some sort of fat just makes them extra good though.

- Heat a large skillet on medium heat. Cook the bacon in the skillet until it just begins to brown around the edges, stirring occasionally. Don't overcook the bacon. It should be barely brown around the edges and still somewhat raw-looking in the middle.
- Add the garlic, salt, pepper, syrup and hot sauce. Cook until the garlic becomes fragrant, about a minute. Add the vinegar, bring to a simmer, and cook until the amount of liquid is reduced by half, stirring and scraping up any browned bits from the bottom of the pot.
- Add the collard greens and the chicken broth (or water) and bring to a simmer. Reduce the temp to medium-low. Cook, stirring occasionally, until the collard greens have wilted and have lost their brightness. Season to taste with additional vinegar and hot sauce. Serve with some of the pan juices from the pan.

- Heat all ingredients on medium low heat until brown sugar is melted.
- Add 1 grocery bag of collard greens that have been thoroughly washed and torn into medium size pieces.
- Cook on medium heat until collards are totally wilted down. Continue to cook for approximately 30 minutes watching carefully so that the liquid does not evaporate - if it gets low, add a little more water.
- While still on stove and right before serving, add 1/2 cup of vinegar mixed with 2 tablespoons of honey. Mix into collards.

- Add the ham hocks and spices to a large pot with about 3 quarts of water and bring to a boil. Reduce the heat to maintain a simmer, with the lid slightly ajar, for 1 1/2 hour.
- Rinse the collard greens clean of any dirt or grit, and use a knife to remove the stems that run down the center. Stack about 6 leaves on top of one another, roll, and slice into 1" strips. Continue until all of the greens are chopped.

- Clean the collard greens and cut off the stems.
- Then roughly chop the leaves in half through the midline and then into bite-sized pieces.
- Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.
- Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.

- 1. On medium high heat add to the sauce pan add bourbon,brown sugar,Worcestershire sauce,white vinegar,lemon juice bring to a simmer let sauce reduce for 10 min.
- 2. Heat a large dutch oven or large pot on Medium high heat. Add Chopped bacon and render for 3 min. Add chopped onion and cook for 3-5 min until translucent. Add in the minced garlic cook until slightly browned.
