HEALTHY WAFFLE RECIPE
How to make a Healthy Waffle Recipe with nutritious ingredients. Wholesome whole wheat flour with no refined sugar for an easy breakfast that can be made ahead and toasted from frozen for busy mornings!

- In a large mixing bowl, lightly beat eggs. Add milk, maple syrup, olive oil, vanilla, baking powder and salt; whisk until well combined. Add whole wheat flour, mix well.
- Preheat waffle maker. If your waffle maker is cast iron you might have to spray it with cooking spray to prevent waffles from sticking but maybe not since batter has enough oil. Try one and see how it comes out.
- Make waffles according to your waffle maker's instructions. Amount of batter depends on the size of your waffle maker. I used about 1/3 cup batter per waffle. For crispier waffles, I also cook a bit past the green Ready indicator.

- In a small mixing bowl, add the all-purpose flour, coconut flour, and Xanthan gum. If you are making savory waffles, add the ranch seasoning (or salt, pepper, and onion powder). If you are making sweet, add the sweetener. Or just omit all seasonings completely. Mix the dry ingredients with a whisk until there are no clumps.
- Add the egg whites and whisk again until batter is smooth and there are no clumps.
- Let batter sit for 5 minutes. In this time, it will thicken. In the meantime, cut waffle iron and let get warm.
- Spray waffle iron with cooking spray then add waffle batter. Cook for 3-4 minutes, or until the waffle is golden brown.

THE BEST BUTTERMILK WAFFLES
In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

- Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
- Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
- Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

- Sift dry ingredients in one bowl. Separate one of the eggs. Add the yolk and the rest of the wet ingredients together and whisk. Beat the egg white in a clean bowl until peaks form. Add the wet into the dry, mixing until just combined. Fold in the egg white. Pour into a preheated greased waffle iron, and I cook mine for 3-4 minutes with my waffle iron. This recipe yields 16 small square waffles for me (using just under 1/3 cup of batter per waffle). These freeze well.

- Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, baking powder, salt, and nutmeg.
- In a medium bowl, whisk together the milk, egg yolks, vanilla, and 1/4 cup melted butter. Whisk the milk mixture into the flour mixture until a batter is formed. Take care not to over mix the batter. In medium bowl, with a hand-held electric mixer or whisk, whip the 3 egg whites until they just begin to hold a loose peak. Scatter the sugar over the whites and continue beating until they hold a soft peak. Using a rubber spatula, fold a third of the egg whites into the batter to lighten the base. Fold in the remaining whites.
- Brush the inside surface of the iron with butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending upon the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cover and cook until golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron is well seasoned or nonstick it is not necessary to brush the inner surface each time before cooking the waffles.)
- Serve the waffles immediately with syrup, jam, fresh fruit, or yogurt.
THE BEST HEALTHY WAFFLES (LOW FAT)
These are basically the only waffles I make. They are super simple, and a healthy, filling breakfast. I use Robin Hood Nutri Flour Blend for these. You can add fresh fruit or chocolate chips to the batter for a twist. I have also make chocolate waffles with this recipe, substituting milk for chocolate milk and adding some cocoa and a handful of chocolate chips.
