- Add 1 cup water to the peppers and garlic. Cook until tender, then press through fine sieve. Add remaining ingredients. Simmer until blended. Pour into hot jars; seal at once. Use a water bath for 10 to 15 minutes.
- The sauce may be used as it or thinned per use with either vinegar or salad oil.

SPINACH SALAD DRESSING
My ex-wife developed this recipe about 30 years ago, but it has been modified many times over the years due to changing tastes and the availability of ingredients. Decrease olive oil by half, and increase spices and hot sauce to make a great marinade for grilling meat and veggies. Prep time does not include time for designing and building your salad... just for making the dressing.

- Combine all ingredients in a jar, except olive oil, and shake thoroughly to mix.
- Allow to set at room temperature for 30 minutes, shaking occasionally, add olive oil, shake again, and refrigerate until needed, but at least 1 hour.
- Shake and toss with spinach salad (spinach, hard-boiled egg, sliced fresh mushrooms, real crisp bacon bits, croutons, etc.) or other greens.
- Note: Use the Sriracha hot sauce if you can find it.
- It adds a lot of flavor, not just heat!

HOMEMADE TABASCO SAUCE RECIPE
Learn how to make tabasco hot sauce with this homemade tabasco sauce recipe, using garden grown tabasco peppers, vinegar and salt. Fermented and non-fermented versions.

- First, ferment the tabasco peppers. You can process them to coarsely chop them or rough chop them with a knife. Pack them into a jar, leaving at least 1 inch of head space. The peppers may rise a bit when fermenting.
- Next, mix 1 quart unchlorinated water with 3 tablespoons sea salt. Pour just enough brine over the peppers to cover them, pressing them down a bit as you go. Itis important to keep the peppers covered with brine to avoid spoilage. Check this daily.
- Screw on the lid and set the jar away from direct sunlight to ferment for at least 1 week. Ideal temperatures are between 55-75 degrees F. The most active fermentation period is between 1-2 weeks, so be sure to monitor it during this time. "Burp" the jars often by unscrewing the lid a bit to let out some of the accumulating gases. Or, use an airlock or membrane for easier fermenting. See our page, "How to Make Fermented Pepper Mash", for further instruction.
- After 1-2 weeks, the fermenting activity will diminish and the brine will turn cloudy and taste acidic.
- Pour the fermented tabasco peppers, including brine, into a pot along with vinegar. Alternatively, you can strain and toss the brine, then add the solids to a pot with vinegar and 1/2 cup water or more as desired + 1/4 teaspoon salt. Or use only a part of the brine for a thicker sauce. More brine = more salty. Bring to a quick boil. Reduce heat and simmer for 15 minutes.
- Cool slightly then add to a food processor. Process until smooth.
- Strain the mixture to remove the solids. Pour into hot sauce bottles and enjoy. You can adjust the volume with additional water and/or vinegar.
- Add the tabasco peppers, vinegar and ¼ teaspoon salt to a small pot.
- Bring the mixture to a quick boil, then reduce the heat and simmer for 15 minutes to soften.
- Cool slightly, then add to a food processor. Process until smooth.
- Strain the mixture to remove the solids. Pour into hot sauce bottles and enjoy. You can adjust the volume with additional water and/or vinegar.

- Chipotle. There was once a prophecy of a hot sauce that would come to rule the world. It went something like this: One sauce to rule them all, one sauce to find them,
- Garlic Pepper. Do you love garlic? Not like garlic, but seriously, do you love it? If that’s the case, then Tabasco’s Garlic Pepper is for you. While there is, of course, a peppery component to the sauce as well, this is in-your-face garlic madness that actually adds a nice savory component that's missing from some of the sweeter and more vinegary hot sauces.
- Family Reserve. Tabasco Family Reserve is the “small batch whiskey” version of Tabasco. It’s smoother and more mellow than the original, while still possessing a hit of heat on the backend.
- Original. Sometimes, you just want your favorite band to play the hits. That's the case with Tabasco Original. It’s reliable, as expected and, as one of Food & Wine staffer put it, “it’s old faithful and should be in everyone’s kitchen.”
- Roasted Pepper. Tabasco’s other new flavor, Roasted Pepper, is as close to a proper barbecue sauce as Tabasco veers. It’s thicker than other hot sauces and has a rich, sweet and smoky flavor to it.
- Sweet and Spicy. Tabasco’ Sweet and Spicy seems, in some ways, like a response to the Raspberry Chipotle flavor—Tabasco took the best parts of that experiment and distilled it into a new sauce.
- Green Pepper. Ah yes, Green Pepper Tabasco, the sauce that was always readily available at Chipotle. It stands out more for its color than it's flavor, which is fine, but not particularly exciting.
- Habanero. If it wasn’t for the Scorpion sauce, Habanero would have been deemed the hottest of the dozen. Instead, this sauce was almost timid in comparison.
- Buffalo. In a pinch, Tabasco’s Buffalo sauce could be used to sauce up a dozen wings. However, its surprising heat left us panting a little more than we expected.
- Sriracha. We all love Sriracha, but Tabasco’s take on this southeast Asian staple was just a little too sweet and it lacks the depth of flavor found in similar sauces.

- Roughly chop the chiles and compost the stems. Blitz the chiles in a food processor or blender with the salt and water until you get a rough paste or slurry, depending on how much moisture there is in the peppers themselves. I keep the seeds in the chiles, but if you want a milder sauce, remove them.
- Put the mash into quart mason jars and cap them loosely. "Burp" the caps at least once a day to let out escaping gases and let air in. The chiles will ferment like this for at least a week, and sometimes up to 3 weeks. When the chiles settle down, add the oak cubes, distributing them evenly throughout the jars. Tighten the lids and store the jars in a cool, dark place. I kept mine in my salami fridge, which is 55°F. A basement is fine, as would a fridge. Tabasco keeps their mash barrels at ambient temperatures, which in Louisiana can top 100°F. I am working on a batch fermented this way now, and I see no reason it won't work. Don't let the mash freeze, however.
- Keep the mash like this no less than 3 months, and up to 2 years. When you are ready to finish the sauce, mix the mash with the vinegar.
- You now have two choices: You can do what Tabasco does and return the mix to the jars, shake them every day for a month and then strain out the pulp and seeds. Or, do what I do and keep all that pulp, which will give the sauce body and thickness. If you choose my method, you will need to really blend the sauce and stabilize it -- otherwise the sauce will eventually separate and will need to be shaken up before each use. To do so, dissolve the xanthan gum in 2 tablespoons of water and add it to the blender. Blend for a solid minute. Let the sauce rest for 1 hour before bottling so any trapped air in sauce (from the blending process) can escape. Bottle and store. The sauce will keep for a year or more.
