LAMB CHOPS WITH GARLIC AND ROSEMARY

Yield 4 servings (1/2 cup sauce)
Number Of Ingredients 10
Steps:
- Heat a large skillet over medium-high heat. Dry the lamb chops well and season with salt and pepper, to taste. Add the oil to the pan and heat until shimmering. Lay chops in the pan and cook, turning once, until an instant-read thermometer inserted into the sides of the lamb registers 125 degrees F, about 4 minutes per side. After cooking the lamb on each side, stand it up on it's edges to brown the sides as well, about 2 minutes more. Reduce the heat if needed so the browned bits remaining in the pan don't burn. Remove chops from the skillet and set aside in a warm place.
- Pour off all but 1 1/2 tablespoons fat from the skillet. Add the garlic and cook, tilting the skillet to keep the garlic submerged in the fat, and cook until golden, about 1 minute. Add the wine and rosemary, stirring up browned bits from the bottom of the pan, and simmer over high heat until syrupy, about 3 to 4 minutes. Add the chicken broth and cook until reduced by about half, another 5 to 6 minutes. Remove pan from the heat and briskly whisk in the butter. When the butter has incorporated, whisk in the mustard and heavy cream. Season with additional salt and pepper.
- Serve 2 chops per person with the sauce.

GARLIC ROSEMARY-MARINATED LAMB CHOPS
Steps:
- Preheat the broiler. In a small bowl stir together the zest, the garlic paste, the rosemary, the oil, and pepper to taste, rub the lamb chops with the marinade, and let them marinate on a plate for 20 minutes. Broil the lamb chops on the rack of a broiler pan about 4 inches from the heat for 4 to 5 minutes on each side for medium-rare meat.

Steps:
- Let the lamb chops sit at room temperature for 20 minutes. Pat dry and season the lamb chops with salt and pepper on all sides.
- Heat a large cast iron skillet or other heavy pan on medium-high heat until very hot. Add the olive oil and heat for a minute, then carefully place the lamb chops in the pan, leaving a little space between them.
- Cook for 3-4 minutes until seared on the bottom side, then flip with tongs and cook another 3-4 minutes on the other side to sear.
- Reduce the heat to medium-low and add the butter, garlic, rosemary and thyme. Spoon the melted butter, garlic, and herbs over the lamb chops while continuing to cook for about 5 more minutes or until the temperature on a digital meat thermometer inserted into the meaty part of the lamb chops reaches 125 degrees F for medium-rare. See notes for additional information about cooking temperatures and degrees of doneness.
- Remove from the lamb chops from the heat, cover with a piece of foil, then let the meat rest for 10 minutes before serving.

MINT-ROSEMARY LAMB LOIN CHOPS
Recording from memory, as my wife said I HAVE to make these for her Mom when she comes to town next month. I never measure or write down ingredients, and am suffering from "memory almost full"! So, here goes

Steps:
- Throw everything in a baggy or tupperware container to marinate for a couple of hours REFRIGERATED.
- Pour the marinade into a sauce pan and heat well.
- In a large covered skillet, fry half of the chops on one side until browned, 4-5 minutes. Remove from pan and repeat with the other chops.
- Return all of the chops to the skillet browned side up and fry for 1-2 minutes.
- Add the simmered marinade, cover, reduce heat to low and allow flavors and aroma to permeate the meat until cooked to desired doneness; lamb usually does better when still slightly pink in the center and still juicy. (We don't do rare meat around here -- nasty cootie attack 15 years ago).
- Classified under inexpensive as one chop can easily be a portion, and package of 7 was around $15.00 U.S. While it was easy as a dish can be, it would work quite nicely for a breaking-out-the-good-china dinner. Just dress up the serving platter with a little fresh mint and rosemary.
- Cooking time includes marinating time.

PAN-SEARED LAMB CHOPS WITH MINT OVER GREENS
From Better Homes and Gardens, March 2003. For the pecans specified in the original recipe I substituted walnuts, but pine nuts or even almonds would probably work. Another option is to use grapeseed oil instead of olive oil, although that is only if you're brave.

Steps:
- Dry roast nuts in pan, being careful not to burn and set aside to cool.
- In a small bowl, combine the fresh mint, parsley, feta, and nuts. Set aside.
- Trim all fat from lamb chops. Rub the chops with about 2 teaspoons of olive oil (I use a pastry brush), salt and pepper.

- Garnish each chop with the mint/cheese mixture. Divide the salad greens on 4 plates and drizzle with a little bit of olive oil and lemon juice. Arrange the warm lamb chops on each plate.
- Serve immediately with shiraz and crusty bread! Don't forget the mood lighting!

BEST 7 SAUCES TO PAIR WITH LAMB CHOPS – TRUBEEF ORGANIC
From truorganicbeef.com
- Garlic Rosemary Sauce with Lamb Chops. Due to their strong flavor, lamb chops usually taste good with more robust seasonings. This is why a garlic rosemary sauce is an excellent option.
- Mustard-Thyme Sauce with Lamb Chops. If you’re in the mood for a creamier accompaniment, this mustard-thyme sauce will fit the bill. The Dijon mustard adds creaminess to the sauce, but the gentle tang prevents it from overpowering the natural flavors of the lamb chops.
- Tzatziki Sauce with Lamb Chops. This sauce contains the flavors that work amazingly well with lamb chops. This includes dill, mint, and garlic. The ingredients are combined with Greek yogurt, lemon, and lightly seasoned.
- Balsamic Brown Sugar Sauce with Lamb Chops. This is an unusual accompaniment for lamb chops, but you can try it all the same. What’s interesting is that the intensity of the flavors in the sauce is a great match for the robust flavors of the lamb chops.
- Chimichurri Sauce with Lamb Chops. It has already been established that lamb chops work well with a variety of herbs. So, what if you added a bunch of herbs into one sauce?
- Red Wine Sauce with Lamb Chops. What’s wonderful about this sauce is that it is so flavorful, but still so light. It works great when you are looking for an accompaniment that pairs well with the flavors of the lamb chop without stealing the show.
- Lemon Tahini Sauce. This is yet another daring sauce with a huge middle eastern influence. If you want to switch things up and discover new pairings for lamb chops, this is a sauce you should certainly try out.
