Categories     Afternoon tea, Buffet, Dinner, Lunch, Main course, Side dish, Snack, Starter, Supper

Time 40m

Number Of Ingredients 7

1 tbsp olive oil
2 large leeks , sliced
2 rashers back bacon , chopped
1 x 210g sheet ready-rolled puff pastry
1 tbsp crème fraîche
1 tbsp Dijon or wholegrain mustard
2 slices firm Welsh goat's cheese , from a 100g log (we used Pant-Ysgawn Farm organic goat's cheese)

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil in a frying pan, then soften the leeks for 5 mins. Add the bacon, cook for a further 5 mins, season, then tip onto a plate to cool.
  • Unroll the pastry and cut out two 12 x 18cm rectangles - save or freeze the rest for another time. Lift onto a baking sheet. Using the tip of a sharp knife, mark a border inside each one, about 1.5cm from the edge.
  • Mix the crème fraîche and mustard together, then spread over the inside of the pastry frames. Spoon the leek and bacon mix over the mustard mix, then place the goat's cheese on top. Bake for 15-20 mins until the pastry is crisp and golden. Serve with salad.

MINI LEEK QUICHES

Mini Leek Quiches image

Provided by Sandra Lee

Time 45m

Yield 24 pieces

Number Of Ingredients 9

1 large or 2 small leeks, white and light green parts only, finely chopped
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme, leaves only
1 (14-ounce) box refrigerated pie dough, 2 rounds
3/4 cup heavy cream
2 large eggs
1/8 teaspoon pumpkin pie spice
1/2 cup finely grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Rinse the leeks in a bowl of water and strain. Set aside.
  • In a skillet over medium heat, add the butter. When it is melted, add the leeks and season with salt and pepper. Cook until they are soft and tender, 6 to 8 minutes. Remove from the heat, stir in the thyme, and let cool to room temperature.
  • Roll out each pie dough round onto a clean dry surface. Using a 2 1/4-inch biscuit cutter cut 12 rounds from each dough. Gently press the rounds into each of the mini muffin tins to form mini crusts.
  • In a large measuring cup, whisk the cream and eggs with the pumpkin pie spice and a generous pinch of salt and pepper.
  • Fill each muffin cup with 1 teaspoon of the cooled leeks and top with 1 teaspoon of the cheese. Cover the filling with the egg and cream mixture. Place the muffin tins onto cookie sheets and put them into the oven. Bake until the egg mixture has set and the quiches are lightly browned, 10 to 15 minutes. Let cool for 10 minutes before turning them out onto a wire rack. Serve warm.

HUEY'S MINI LEEK TARTS

Huey's Mini Leek Tarts image

Adapted from Huey's recipe for Mini Leek Tarts, which he has classified as a SNACK ATTACK recipe. Huey (Iain Hewitson) is an Australian chef: he has written several cooking books and hosts a popular TV cooking show each weekday. If you preferred, you could use this recipe to make one larger tart, but if you do this, remember to adjust the cooking times. I have added onion and garlic to Huey's original recipe as the combination of leeks, onions and garlic - if you have not tried it - is truly delicious. Australian Tasty Cheese is a yellow, fairly flavoursome cheese used a lot in cooking. Vary the cheese to suit what's on hand and your taste preferences.

Categories     Lunch/Snacks

Time 50m

Yield 24 mini leek tarts, 24 serving(s)

Number Of Ingredients 15

1/2 cup water
450 g white part leeks, thoroughly washed, dried, halved lengthways and finely sliced
1 onion, finely chopped
4 garlic cloves, minced
1/2 teaspoon butter
sea salt, to taste
fresh ground pepper, to taste
3 tablespoons unsalted butter
3 large eggs
1 1/2 cups cream, low-fat is fine
1/4 cup grated tasty cheese, plus a little more
grated tasty cheese, to sprinkle on top of each tart
1 pinch ground nutmeg
olive oil flavored cooking spray
frozen puff pastry sheet

Steps:

  • Preheat the oven to 200°C.
  • Boil the water, add the leeks, salt, to taste and butter and continue boiling until the water has almost evaporated. Then turn heat down and simmer for 15 to 20 minutes or until the leeks are very tender. Then drain thoroughly.
  • While the leeks are simmering, place the chopped onion and minced garlic in a microwave-safe dish with the 1/2 teaspoon of butter and microwave for probably about a minute (try 1/2 a minute first) or until the onion and garlic have just softened.
  • Beat the eggs, the cream, the ¼ cup of grated cheese, the nutmeg and seasonings. Then add the leeks, the onions and garlic and mix thoroughly so that they are well-combined.
  • With the olive oil spray, lightly spray 2 mini muffin trays (24 cups) and cut out circles from the pastry sheets, just slightly larger than the muffin tins.
  • Gently push the pastry rounds into each cup and spread the leek mixture evenly between the cups, being careful not to over fill the cups. Then top each tart with a little grated tasty cheese and cook in the oven for about 12 to 15 minutes or until the tarts are golden. As ovens vary so much, it's a good idea to check them after 10 minutes. And if you know your oven is inclined to burn things, place a piece of kitchen loosely on top of the tarts for perhaps the first part of the cooking, and perhaps only add the additional grated cheese when you remove the foil.
  • NOTE: If you want to freeze the tarts, firstly put them in the freezer (cooled, but as is) for 1-2 hours. Then remove them from the tins and transfer to an airtight container, placing baking paper between each layer. To cook, put them back into the muffin tins and cook from frozen.

MINI LEEK TARTS

Mini Leek Tarts image

I decided to make traditional leek tart in a slightly non traditional way, few mini tarts instead of one, big round tart. I made it that way so my other half would eat it too. He's not much of a veggie guy so I mixed in some ham to his portion. That way I had my vegetarian leek tarts and he had ham and leek ones.

Provided by Be Nutritious

Categories     Cheese

Time 50m

Yield 9 mini tarts, 3-4 serving(s)

Number Of Ingredients 7

1 sheet of store bought puff pastry (I used Pepperidge Farm)
1 large leek (or 2 small)
1 cup half-and-half
1 cup swiss cheese
1 egg, beaten slightly
salt and pepper
1 tablespoon butter

Steps:

  • Chop of the green part from leek and cut lengthwise. Slice finely and in a sieve run under cold running water to clean from the soil dirt.
  • On a skillet melt the butter and add leeks. Add salt, pepper and sweat few minutes until soft.
  • In a bowl combine half & half, egg and shredded cheese. Add salt pepper and mix together. Add leek and stir the mixture around.
  • Roll out the puff pastry and cut out nine uniform squares. Place each square in the muffin pan like on a picture.
  • Spoon the mixture into each tart and bake in the oven preheated to 400ËšF for 30-40 min until the edges are nicely brown. Let cool slightly and transfer each tart to a plate.

LEEK & GOAT'S CHEESE TARTLETS

Leek & goat's cheese tartlets image

An easily assembled recipe for a smart vegetarian main course

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 1h5m

Number Of Ingredients 6

4 leeks , trimmed, halved and finely sliced
large knob of butter
2 tbsp thyme leaves and 4 nice sprigs
375g block puff pastry
4 slices goat's cheese (with a rind)
truffle oil or walnut oil (optional)

Steps:

  • Wash the leeks in a colander but don't worry about drying them as you want a bit of water clinging on. Heat the butter in a wide saucepan until sizzling, then add the wet leeks and thyme leaves plus salt and pepper. Sweat the leeks really gently for 20-25 mins until they have practically melted but not coloured, adding a little more butter if needed. Set aside and allow to cool.
  • Heat oven to 220C/200C fan/gas 7. Roll the pastry out to the thickness of a £1 coin. Cut out 4 saucer-size circles and place on a baking sheet. Spread the leeks over the circles leaving a slight border around the edge. Put a slice of goat's cheese in the middle of each tart and top with a thyme sprig. Pinch the pastry edge together to slightly encase the leeks, then bake the tarts for 25 mins until puffed up and golden. Serve hot and drizzled with flavoured oil if you have it.

SALMON, LEEK AND DILL TARTS

Salmon, leek and dill tarts image

Mary Berry's easy salmon tarts make a lovely and light starter for Christmas Day. They look really pretty as well as being suitable to make in advance. For this recipe you will need two 4-hole Yorkshire pudding tins (or make the pastry cases in batches, if you prefer).

Provided by Mary Berry

Categories     Starters & nibbles

Yield Serves 6

Number Of Ingredients 12

55g/2oz unsalted butter, plus extra for greasing
1 leek, trimmed and thinly sliced
30g/1oz plain flour
150ml/¼ pint milk, warmed
50ml/2fl oz dry white wine
1 heaped tsp grainy mustard
225g/8oz fresh salmon fillet, skinned and cubed
50g/1¾oz mature cheddar cheese, grated
1 tbsp dill, finely chopped
2 tbsp double cream
3 sheets ready-made filo pastry (each measuring about 48x25cm/19x10in)
6 small sprigs dill, to garnish

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Brush 6 holes of the Yorkshire pudding tins with a little melted butter.
  • Melt half the butter in a medium saucepan. Add the leek, cover with a lid and simmer for about 5 minutes until tender. When soft, sprinkle in the flour and stir over the heat for 1 minute. Gradually add the milk, stirring all the time. Bring to the boil and cook until the sauce is thick. Stir in the wine and return to the boil, simmer until the sauce is thick again. Add the mustard and salmon pieces, reduce the heat and gently simmer, stirring from time to time for about 3-4 minutes, until the fish is just cooked. Try not to break the fish up too much. Season generously with salt and pepper and remove from the heat. Stir in the cheese, dill and cream. Set aside.
  • Melt the remaining butter and brush it all over the filo pastry. Divide each sheet of filo into 4 rectangles. Put two rectangles on top of each other at an angle to make star shapes. Repeat with the remaining pastry rectangles. Push each 'star' into a hole of the greased tin and bake for 8-10 minutes, or until golden-brown and crisp.
  • Just before serving, spoon the filling into the pastry cases and decorate each with a sprig of dill.

  • Add all tart crust ingredients except for the egg to a food processor. Whiz until combined and the mixture starts to come together. At this stage, add the egg and process again briefly to incorporate. Scrape the sides halfway. The mixture should be easy to mould with your fingers.
  • Transfer the crust mixture to a tart tin. I use a medium round tin with a removable bottom but you can use a square one or mini ones. Place the dough mixture in the middle and mould it into a pancake. Then use your fingers to press it down and spread into the sides as evenly as possible. The dough is easily breakable but is sticky so you can mend any cracks. Once evenly spread, press your fingers into the edges making sure the dough covers the sides of the tin. They don’t need to be cover the whole height of the sides, halfway is okay. Poke the base with a fork a few times.
  • Partially bake in the 190 C / 375 F oven for 12-15 minutes, until set and firm but isn’t golden brown. Remove and set aside.

  • In a food processor, pulse the flour and 1 tsp. salt to combine. Cut 2 sticks butter into small cubes. Add to the flour and pulse until pea-size pieces form. Drizzle in the ice water; process just until the dough starts to form a ball on the blade. Knead briefly to blend. Halve the dough; pat into 2 disks.
  • Preheat the oven to 425 degrees. On a floured surface, roll out each dough half into a large rectangle or circle. Transfer to two 5-by-14-inch rectangular or 9-inch round tart pans; press in evenly. Prick the dough all over with a fork; refrigerate for 10 minutes. Cover the dough with parchment and fill with pie weights. Bake for 10 minutes. Remove the parchment and pie weights; reduce the oven to 375 degrees. Bake until golden, 15 to 18 minutes. Transfer the crust to a rack to cool completely.
  • In a large skillet, melt 2 tbsp. butter over medium-high heat. Add half of the mushrooms and cook until most of their liquid has evaporated and the mushrooms are soft and brown, about 10 minutes; season and transfer to a bowl. Repeat with 2 tbsp. more butter and the remaining mushrooms. Melt the remaining 2 tbsp. butter in the skillet. Add the leeks and cook until softened and just barely browned, 6 to 8 minutes; season.
  • In a small bowl, whisk the goat cheese, milk, eggs and a generous pinch of pepper. Divide the goat cheese mixture between the crusts; spread to cover. Divide the leeks between the tarts, sprinkling evenly on top of the cheese. Cover with the mushrooms. Return the tarts to the oven; bake just until the cheese mixture sets, about 15 minutes.
