4 garlic cloves
1 piece (2 inches) fresh ginger, chopped
1/3 cup water
1 bag (16 ounces) frozen large shrimp, thawed, peeled, and deveined (tails left intact, optional)
Coarse salt
3 to 4 tablespoons safflower oil
1 pound okra (partially thawed, if frozen), sliced 3/4 inch thick
1 large shallot, thinly sliced lengthwise
1 small fresh green chile, such as serrano, finely chopped
1 tablespoon garam masala
1 1/4 cups light coconut milk

Steps:

  • Pulse garlic, ginger, and water into a paste in a blender. Season shrimp with salt.
  • Heat a medium skillet over medium-high heat. Add 1 tablespoon oil. Cook shrimp, about 2 minutes per side; transfer to a plate. Reduce heat to medium. Add 2 tablespoons oil to skillet. Working in batches, cook okra for 2 to 3 minutes; transfer to a plate.
  • Add 1 tablespoon oil to skillet if needed. Cook shallot and chile for 1 minute. Add garlic paste and garam masala. Cook, stirring, for 30 seconds. Stir in coconut milk. Bring to a boil. Reduce heat, and simmer for 1 minute. Return shrimp to skillet; cook for 1 minute. Add okra; cook for 1 minute. Season with salt.

1/2 pound mushrooms, sliced
3 tablespoons flour
1/2 cup Marsala wine

Steps:

  • Add olive oil to heavy hot saucepan. Add onions, garlic, mushrooms, saute until mushrooms are tender. Add flour and cook about 1 minute then deglaze pan with Marsala wine. Add beef stock and cook until thick and flavors are blended.

kosher salt to taste
1 teaspoon hot smoked paprika
¼ cup extra-virgin olive oil

Steps:

  • Slice garlic thinly. Season shrimp with kosher salt and paprika. Mix to coat.
  • Heat garlic and oil in a skillet over medium heat. Cook until garlic starts to turn golden, about 2 minutes. Add shrimp and increase heat to high. Toss and turn shrimp with tongs until starting to curl but still undercooked, about 2 minutes. Pour in sherry. Cook, stirring continuously, until sauce comes up to a boil and shrimp is cooked through, about 1 minute more. Remove from heat. Stir in parsley with a spoon.

1 large onion, thinly sliced

1 lb linguine
1/4 cup green onion
10 tablespoons butter
2 teaspoons thyme leaves
2 tablespoons minced garlic cloves
1 cup dry marsala wine
2 cups heavy whipping cream
1 cup whole milk
1/2 cup KRAFT 100% Grated Parmesan Cheese
8 ounces sliced mushrooms
1 1/2 lbs cooked shrimp

Steps:

  • Wash and chop green onion.
  • In a medium sauce pan, mix 8 Tbsp (1 stick) butter, 1/4 cup chopped green onion, 2 tsp thyme leaves and 2 Tbsp minced garlic over medium heat (low boil). Cook for 5 minutes, stirring frequently.
  • Add 1 cup of dry marsala wine and continue cooking an additional 5 minutes. Lower heat and set aside. Do not cover.
  • In a large saute pan, add 2 Tbsp of butter and 8 oz of sliced muchrooms over meduim-high heat, stirring frequently until muchrooms are browned on both sides (3-5 minutes). Add medium cooked shrimp (de-veined and no tails) and continue cooking with the muchrooms for 5 more minutes. Lower Heat and set aside.
  • In the medium sauce pan, add 2 cups of heavy whipping cream, 1 cup whole milk and 1/2 cup grated parmesan cheese to the marsala wine mixture. Cook over medium heat for 5 minutes and then add the mushrooms and shrimp to mixture. Lower heat to a low boil and set aside.
  • Cook linguine noodles and drain.
  • Pour creamy marsala and shrimp sauce over linguine and enjoy.

32 medium-sized shrimp, cleaned and tails removed
1 tablespoon butter
1 1/2 teaspoons balsamic vinegar (optional)

Steps:

  • In a large frying pan, heat the oil and cook the onion for 5 minutes over medium-high heat, stirring occasionally.
  • Add the mushrooms, cooking them until golden brown for 6-8 minutes, stirring occasionally.
  • Add the finely chopped garlic and cook an additional minute. Season with salt and pepper.
  • In a cup, dissolve the cornstarch in the broth or cold water, adding the Marsala wine and thoroughly stirring.
  • Pour the wine mix in the frying pan and stir well. Add the shrimp and cook for 4 minutes. As soon as the shrimp turns pink, add the butter and vinegar. Stir, adjust the seasoning and serve garnished with chopped parsley.
  • Serve immediately to avoid overcooking the shrimp.

Cilantro leaves, for garnish

Steps:

  • Heat the oil in a large straight-sided skillet over medium-high heat. Add the cumin seeds and red chiles and cook, stirring, until the fragrant, about 30 seconds. Add the onion and cook, stirring, until lightly browned, about 5 minutes. Add the coriander, ginger, garlic, cumin, turmeric, and cayenne and season with salt and pepper. Cook, stirring occasionally, until dark and fragrant, about 3 minutes more. Add the tomatoes and cook, stirring occasionally, until somewhat soft, about 3 minutes. (You can make the sauce up to this point a day ahead.)
  • When ready to serve, heat the sauce over high heat. As soon as it starts to bubble on the edges, add the shrimp and cook, stirring, until the shrimp turns opaque. Lower the heat, gradually stir in the yogurt, and gently heat it through. (Don't bring it to a boil or the yogurt may separate.) Season with salt and pepper, transfer to a serving platter, and sprinkle with the cilantro and green chiles. Serve.

Serve this over basmati rice. You will love this!

2 medium onions, chopped

1 (13 ounce) can coconut milk (unsweetened)
1/2 cup chopped cilantro
1/3 cup green onion, chopped

Steps:

  • To make the masala: heat oil in a large frypan over medium heat.
  • Add in onions and saute for about 20 minutes until deep golden brown.
  • Add in garlic and all the spices; stir for about 1 minute; cool to lukewarm.
  • Puree the tomatoes with juice and the yogurt in a processor until ALMOST smooth.
  • Add in the onion mixture and puree just enough to combine.
  • Season the masala with salt and pepper.
  • At this point you can cover and refrigerate overnight.
  • To make the shrimp: heat oil in a large skillet over medium heat.
  • Add in shrimp and saute until partially cooked (about 2 minutes).
  • Stir in coconut milk, cilantro, green onions, lemon juice and prepared marsala; simmer for about 2-3 minutes or until the shrimp is opaque in the center, stirring with a wooden spoon.
  • Season with salt and pepper.
  • Serve over basmati rice.

1 9 oz. pkg refrigerated light cheese ravioli, cooked, drained and set aside.
2 boneless sklinless chicken breasts, cut in strips
3/4 lb. shrimp, peeled
1/4 cup AP flour
2 oz. prosciutto , chopped
8 oz. mushrooms, sliced
2 T. shallots, minced
1/2 cup marsala
3/4 cup chicken broth
2 T. butter
1/2 cup fresh chopped parsley

  • Coat chicken and shrimp with flour, salt & pepper. Saute in 3 T. olive oil over med-high heat until almost done; add prosciutto and cook 1 min more. Transfer to plate and set aside. In same skillet saute mushrooms and shallots in 2 T. olive oil until done, about 3 min. Deglaze with marsala and simmer until almost evaporated. Add chicken broth, chicken/shrimp mixture and cooked ravioli. Simmer until heated through. Top with butter and parsley. Serve immediately.

  • 2. Remove the pan from heat and lay the shrimp in one layer in the tomato mixture. Cover, set over low heat, and simmer for 4 minutes. Remove from the heat, season with salt and pepper to taste, and allow to stand for 5 minutes, covered.

Steps:

  • Pat shrimp dry, sprinkle with 1 teaspoon pepper and set aside.
  • Heat ghee over medium heat in a wok or large (12-inch) frying pan until it has melted, about 30 seconds. Add ginger, garlic and onion and cook, stirring occasionally, until onion has softened, 5 to 7 minutes.
  • Add chile powder, cumin, turmeric and Thai green chiles. Stir until fragrant, about 30 seconds. Add tomatoes and salt and cook, stirring occasionally, until the tomatoes have broken down and start to stick to the wok, about 15 minutes. Add coconut milk if you like it saucy.
  • Add shrimp. Stir so that shrimp are evenly coated, and continue cooking, stirring occasionally so the shrimp cook evenly, until the shrimp turn pink and appear firm, 4 to 5 minutes.
  • Turn off the heat, sprinkle with lemon juice, garam masala, cilantro and remaining ½ teaspoon black pepper. Serve with roti, store-bought pita or by itself.
