An accident after experimenting with a couple of red velvet recipes evolved into an amaretto and cocoa delight. A mini Bundt® cake full of flavor, yet super light.

½ cup amaretto-cream-flavored hot cocoa mix
½ teaspoon salt
1 ⅛ teaspoons baking soda
2 cups white sugar
1 cup butter, softened
4 eggs
1 cup sour cream
½ cup milk
2 teaspoons vanilla extract
1 (8 ounce) package cream cheese, softened
¼ cup butter, softened
2 tablespoons sour cream
2 teaspoons vanilla extract
1 (16 ounce) package confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flour, hot cocoa mix, salt, and baking soda together in a bowl.
  • Beat white sugar and 1 cup butter together in a separate bowl using an electric mixer until light and fluffy, 3 to 5 minutes. Beat in eggs, 1 at a time. Mix in 1 cup sour cream, milk, and 2 teaspoons vanilla extract.
  • Beat flour mixture into sour cream mixture gradually, on low speed, until just blended. Spoon batter into 16 mini fluted tube pan molds (such as Bundt®), filling each 2/3 full.
  • Bake in the preheated oven until a toothpick inserted in the center of a cake comes out clean, 20 to 25 minutes.
  • Cool cakes in pans on a wire rack for 5 minutes. Remove from pans; cool completely before frosting, 10 to 15 minutes.

1/2 cup vegetable oil
2 eggs or 2 egg substitute
1 teaspoon vanilla
1/4 cup Amaretto
1/2 cup sour milk or 1/2 cup sour soymilk
2 cups all-purpose flour
1/2 teaspoon salt
3 tablespoons cocoa
1 teaspoon baking soda

Steps:

  • Pre-heat oven to 350°F.
  • Mix sugar, butter, oil.
  • Add eggs, vanilla, amaretto and buttermilk, Mix until blended.
  • In a separate bowl, blend flour, salt, cocoa and baking soda.
  • Combine wet and dry ingredients, blending until smooth either with whisk (about 5 min) or electric mixer (about 3 min).
  • Pour into greased & floured bundt pan, and bake for 50 min or until toothpick inserted in the middle comes out clean.
  • Let cool at least 5 minutes before carefully unmolding.
  • Dress as you like, whether sprinkled with icing sugar, or drizzled with icing and sprinkled with chopped almonds.

1 1/2 cups sugar
6 eggs (separated)
1 (8 ounce) package cream cheese, softened (Philadelphia Brand)
2 cups flour
1/2 teaspoon vanilla
4 teaspoons baking powder
cooking spray (Bakers Joy)

Steps:

  • Spray Bundt pan (10") with Bakers Joy cooking spray.
  • In large mixing bowl, beat together butter and sugar. Add the egg yolks one at a time so they are mixed well. Add the vanilla, baking powder and then the flour alternating with the cheese until all combined.
  • Separately, beat the egg whites until they are stiff & slowly add to the above mix.
  • Bake at 350 degrees for 40 minutes. Remove from pan after 10 minutes.
  • Frost (when completely cool) with Buttercream frosting from Recipe #299827.
