MINI AMARETTO-COCOA BUNDT® CAKES WITH CREAM CHEESE FROSTING
An accident after experimenting with a couple of red velvet recipes evolved into an amaretto and cocoa delight. A mini Bundt® cake full of flavor, yet super light.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix flour, hot cocoa mix, salt, and baking soda together in a bowl.
- Beat white sugar and 1 cup butter together in a separate bowl using an electric mixer until light and fluffy, 3 to 5 minutes. Beat in eggs, 1 at a time. Mix in 1 cup sour cream, milk, and 2 teaspoons vanilla extract.
- Beat flour mixture into sour cream mixture gradually, on low speed, until just blended. Spoon batter into 16 mini fluted tube pan molds (such as Bundt®), filling each 2/3 full.
- Bake in the preheated oven until a toothpick inserted in the center of a cake comes out clean, 20 to 25 minutes.
- Cool cakes in pans on a wire rack for 5 minutes. Remove from pans; cool completely before frosting, 10 to 15 minutes.
- Beat cream cheese, 1/4 cup butter, 2 tablespoons sour cream, and 2 teaspoons vanilla extract in a bowl using an electric mixer until light and fluffy, 3 to 5 minutes. Add confectioners' sugar gradually; beat frosting until smooth. Frost the cooled cakes.

- Pre-heat oven to 350°F.
- Mix sugar, butter, oil.
- Add eggs, vanilla, amaretto and buttermilk, Mix until blended.
- In a separate bowl, blend flour, salt, cocoa and baking soda.
- Combine wet and dry ingredients, blending until smooth either with whisk (about 5 min) or electric mixer (about 3 min).
- Pour into greased & floured bundt pan, and bake for 50 min or until toothpick inserted in the middle comes out clean.
- Let cool at least 5 minutes before carefully unmolding.
- Dress as you like, whether sprinkled with icing sugar, or drizzled with icing and sprinkled with chopped almonds.

CREAM CHEESE BUNDT CAKE
A very moist & decadent white bundt cake made with cream cheese. I use buttercream frosting from Recipe #299827 to decorate or you can just use a glaze or dust with powdered sugar if you like. Presents well for Holidays, Brunches, Bridal showers, etc.

Steps:
- Spray Bundt pan (10") with Bakers Joy cooking spray.
- In large mixing bowl, beat together butter and sugar. Add the egg yolks one at a time so they are mixed well. Add the vanilla, baking powder and then the flour alternating with the cheese until all combined.
- Separately, beat the egg whites until they are stiff & slowly add to the above mix.
- Bake at 350 degrees for 40 minutes. Remove from pan after 10 minutes.
- Frost (when completely cool) with Buttercream frosting from Recipe #299827.
