SERBIAN BEEF BUREK (BUREK SA MESOM)

This meat burek recipe is made with ground beef and flaky phyllo dough, and is popular in Serbia and across the Balkans.

1 cup onion (finely chopped )
1 1/2 pounds ground beef chuck (or a combination of beef, pork, and/or lamb)
1 cup fresh parsley (chopped)
1 tablespoon salt
1/2 teaspoon pepper (or to taste)
1 (1-pound) package phyllo dough (#7, thawed)
5 tablespoons oil (vegetable, sunflower, or pumpkin seed)
3 large eggs (beaten)
3/4 cup Greek plain yogurt (or Bulgarian yogurt)
3/4 cup cups soda water

Steps:

  • Gather the ingredients.
  • In a large skillet, sauté the onion and ground chuck over medium heat until the meat is no longer pink and the onions are translucent.
  • Drain in a colander .
  • Return the meat-onion mixture to skillet and add the parsley, salt, and pepper and cook for 1 minute, mixing thoroughly. Remove from heat and let cool to room temperature.
  • Lightly coat a 9 x 13-inch pan with cooking spray . Separate the phyllo dough into 2 piles (approximately 10 to 14 sheets each) and keep covered so they don't dry out. Half will go on the bottom of the pie and half will go on the top.
  • Place 2 sheets in the prepared pan and brush lightly with oil, folding in any overhanging edges. Add 2 more sheets and brush with oil. Continue until you've used one pile of phyllo.
  • Spread the cooled ground chuck mixture evenly over the phyllo, pushing up to the edges. Begin covering the meat with the remaining phyllo, again using 2 sheets at a time and brushing with oil. Continue until all of the phyllo is used.
  • Brush the entire top lightly with oil. Using a serrated knife and a sawing motion, cut burek all the way to the bottom into 12 squares.
  • In a medium bowl, mix the eggs with the yogurt and soda water . Pour over the burek. Cover with plastic wrap and refrigerate for 2 hours.
  • Preheat the oven to 350 F. Remove the plastic wrap and bake for 45 to 55 minutes, or until golden brown. Cool slightly before serving.

One of my favorites from local Middle Eastern restaurants. I typically get the sampler platter that includes several items and this is the one I look forward to eating the most.

3 cups olive oil, or as needed, divided
1 ½ pounds lean ground beef
1 large onion, chopped
½ teaspoon baharat (Middle Eastern spice mix)
½ teaspoon salt
½ teaspoon ground black pepper
½ cup finely chopped parsley
1 (16 ounce) package egg roll wrappers

Steps:

  • Heat 1 tablespoon olive oil in a large skillet. Cook and stir ground beef until browned, about 5 minutes. Add onion, baharat, salt, and pepper; cook and stir until onion is translucent, about 5 minutes. Remove from heat; stir in parsley. Drain juices and let cool, 10 to 15 minutes.
  • Lay 1 egg roll wrapper at a 45-degree angle on a flat work surface; place 3 tablespoons of the beef mixture in the center. Fold bottom corner over beef mixture and roll up halfway. Fold in both sides. Moisten edges of the top corner and roll up, pressing down top corner to seal. Repeat with remaining wrappers and beef mixture.
  • Heat oil in a large pot over medium heat. Cook rolls in batches until light brown, about 2 minutes per side. Drain on paper towels.

Burek, or Borek depending on what spelling you use is a dish made with phyllo pastry that is filled with meat or cheese. Burek is thought to have originated in Central Asia; it was then adopted by the Ottoman Turks who took it with them to the various corners of their military empire.

1 lb lean ground beef
1/2 Tbs olive oil
1 onion (diced)
2 Tbs parsley (fresh, chopped)
1 tsp salt
1/4 tsp pepper
dash allspice
2 Tbsp butter (melted, for brushed phyllo)
1/2 lb phyllo dough

Steps:

  • Preheat oven to 350°F.
  • In a small frying pan heat the olive oil and add the onions. Cook on medium heat for about 3-5 minutes until the onions are translucent.
  • Add the beef and the rest of the ingredients. Cook until the beef is browned.
  • Remove beef mixture from heat and place in a bowl and chill in the refrigerator. Warm meat with juice will ruin the delicate phyllo and make it soggy.
  • Take phyllo dough and unroll carefully. Cut in half. Cover with a moist tea towel to avoid drying.
  • Take 3 sheets of phyllo at a time and place a good amount of meat down the center, leaving about 2" at both top and bottom. Using a pastry brush, brush all around the edges of the dough. Fold in once all around. Fold from the short side up and roll tightly like a cigar. Brush with melted butter and place seam side down on a baking sheet. Bake for about 15 minutes or until the burek are golden brown. Serve with a side of plain yogurt.
  • Any leftover phyllo can be stored again in the freezer. Make sure you wrap it tightly so it doesn't dry out.

You can't miss trying burek when in the Balkans - and you'll fall in love. So, here is an easy to make Croatian burek recipe.

500g all-purpose flour (3.5 cups)
1 teaspoon of salt
300-350mls lukewarm water (1 1/4 - 1 1/2 cups)
Vegetable oil
150 g cottage cheese (2/3 cup)
100 g crumbled feta cheese (2/3 cup)
1 large beaten egg
1 tablespoon of olive oil
1 medium, diced onion
300 g lean beef mince (10 oz)
1 potato, boiled cut into small cubes
2 grated garlic cloves
Half teaspoon chopped rosemary, fresh is best
Half tablespoon smoked paprika
Half tablespoon salt

Steps:

  • Take a large bowl and combine the flour and the salt
  • Add the water bit by bit, mixing until the mixture forms a dough
  • Knead the dough for around five minutes, until it turns quite stretchy
  • Split the dough mixture into batches of four and press down to flatten
  • You need to find a bowl or a pan which is large enough to hold the dough when it is piled up on top of each other
  • Add a little bit of vegetable oil to the pan or bowl and put the first flattened piece of dough inside
  • Add a bit more oil (not too much), and add another piece of dough - repeat until you've done the same with all four pieces
  • Add more vegetable oil on top of the last piece and place to one side to rest
  • Preheat your oven to around 200°C (390°F)
  • Add a little vegetable oil over your work surface (a table is best) - just a little!
  • Remove one piece of dough from the bowl and remove the excess oil
  • Flatten the piece of dough until it reaches a thickness of no more than around half a centimeter
  • Handle the dough and stretch it outwards, over and over, so that you pull it to around 1 meter in diameter - you might end up with a few holes but don't worry about it too much. By the end, you should be able to see through the dough
  • Take one side of the dough disc and fold it over, towards the center
  • Repeat this process until you have a shape that resembles a pentagon
  • Repeat with the second piece of dough
  • Add your filling (see below for the filling instructions) to the dough piece
  • Add the first piece of stretched dough into the middle of the second one, and cut away the thick edge of the second piece - you can throw this away, you won't need it
  • Fold over the edges of the dough, so that you get a pentagon shape once more, and put it into a baking pan or tray
  • Put the pan in the oven and bake for around half an hour, until it is a golden color
  • Remove from the oven and let it cool down
  • Cut into 12 pieces
  • Repeat the process with the rest of the dough
  • Bake until the pastry turns golden, and serve while warm!
  • Take a mixing bowl and add in both kinds of cheese, combining together
  • Add the egg and combine once more
  • Take a large pan and heat up the oil over a medium heat
  • Add the onion and cook until soft
  • Now, add the mince and cook for around 2 minutes, stirring regularly
  • Now, add the potato, the rosemary, the garlic, and the paprika, and stir to combine
  • Add the salt and continue to cook, ensuring the beef mince is cooked through
  • Once cooked, drain the beef with a sieve to get rid of any excess oil and press down to dry it out

1 package phyllo (filo) dough (500g) 13-14 sheets
700g (24.7oz) ground beef
1/4 bunch parsley
1/4 bunch coriander
1 large onion
3 garlic cloves
2 tablespoons tomato paste
1/3 cup (45g) pine nuts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon thyme
1/2 teaspoon paprika
1/4 teaspoon cumin
1/3 cup (80ml) olive oil for brushing + 2 tablespoons for cooking

Steps:

  • 1. Finely chop onion, parsley, coriander and garlic. 2. In a large pan over medium heat pour olive oil. Sauté chopped onion and garlic for 5 minutes. Add ground beef. Cook, stirring occasionally until the meat turns brown. Add the spices and stir well. Add tomato paste and stir until well combined. Add pine nuts and stir. Turn the heat off, add chopped herbs and give a last stir. Let cool. 3. Preheat oven to 180C (355F) 4. Place 1 sheet of phyllo on a clean working surface (while you are working with one sheet cover the others with damp kitchen towel). Brush with olive oil and place another sheet on the first sheet. Brush again, thin layer of olive oil. On longer side of the dough, put a line of the meat filling. Roll the dough and place on a baking try lined with parchment paper. If the dough too dry, while you are rolling brush little bit more olive oil. Repeat with the rest of the dough. 5. Bake for 35-40 minutes or until golden brown.

1 cup (2 sticks) unsalted butter, melted
16-ounce package phyllo dough, thawed
Filling of your choice (see recipes below)
1 large egg
Black or regular sesame seeds for sprinkling

Steps:

  • 1. Preheat the oven to 350 degrees.
  • 2. Using a pastry brush, coat the bottom of a cookie sheet with some of the melted butter.
  • 3. Take a sheet of phyllo and cut lengthwise in strips, 4 1/2 inches wide. Butter the strips, fold over lengthwise, butter again, and place a tablespoon of filling on the end. Then fold up right to left as you would a flag, so that the end result is a plump triangle, buttering the outside at the end. Repeat with the remaining filling and dough. Beat the egg, brush the burekas with it, and sprinkle sesame seeds over the tops.
  • 4. Place on the cookie sheet and bake for 20 minutes or until golden in color.
  • NOTE You can also mold and freeze the burekas after forming. Defrost for 2 hours and then bake. You can fill any leftover phyllo with chocolate chips or Nutella and make triangular treats.
  • THREE WAYS TO FILL A BUREKA
  • Spinach Filling
  • Yield: About 2 cups, enough filling for about 20 burekas
  • 2 pounds fresh spinach or Swiss chard leaves, washed well, or two 10-ounce packages chopped frozen spinach 2 large eggs, beaten lightly 1/2 cup crumbled feta cheese 1/2 cup grated cheddar cheese 1/4 cup chopped fresh parsley 2 tablespoons chopped fresh dill 8 scallions, diced Salt and freshly ground pepper to taste
  • 1. Place the fresh spinach or Swiss chard leaves in a frying pan with only the water that clings to the leaves, and cook briefly until they wilt. (If using frozen spinach, simply defrost.) Drain very well, squeezing out as much of the water as possible. Cool and chop.
  • 2. Mix together the eggs, feta and cheddar cheeses, parsley, dill, and scallions. Add the spinach and salt and pepper to taste; mix well.
  • 3. Use about 1 tablespoon of filling for each bureka.
  • Eggplant Filling
  • Yield: About 2 cups, enough filling for about 20 burekas
  • 2 medium eggplants (about 2 pounds) 1/3 cup kasseri or feta cheese, crumbled 1/3 cup grated sheep or mozzarella cheese 1/4 cup chopped fresh cilantro or parsley Salt to taste
  • 1. Preheat the oven to 450 degrees. Prick the skin of the eggplants all over and roast on an oiled cookie sheet for 25 minutes, turning occasionally.
  • 2. Remove the pulp from the skin, discarding the seeds and draining off any extra liquid. Cool slightly, then pat dry and coarsely chop. Combine the eggplant pulp, cheeses, and cilantro or parsley and mash well with a fork; add salt if needed.
  • 3. Use about 1 tablespoon of filling for each bureka.
  • Cheese Filling
  • Yield: About 2 cups, enough filling for about 20 burekas
  • 2 large eggs 1 cup grated cheddar cheese 1 cup crumbled feta cheese Freshly ground pepper to taste
  • 1. Beat the eggs in a small bowl. Add the cheddar and feta cheeses and pepper to taste. Mix well.

The first filling is more Greek-influenced, while the other two are more Turkish. •Nathan recommends a high-quality Greek feta cheese and a sharp cheddar for the fillings. •After folding up the burekas flag-style, be sure to pinch around the edges of each pastry to avoid filling spilling out during baking.

HOW TO MAKE BOSNIAN BUREK - LONELY PLANET
