MICROWAVE WHITE CHICKEN CHILI
Three whole heads of garlic may seem like a lot, but "roasting" them in the microwave lends a mild, mellow taste to this chili.

Steps:
- Using (5-in.) Santoku Knife, slice about 1/4 in. off the pointed top of garlic heads to expose cloves. Place garlic cut side up in Classic Batter Bowl. Sprinkle garlic with 1/4 tsp of the salt and drizzle with 2 tbsp of the oil. Cover batter bowl with lid; microwave on HIGH 3 minutes or until garlic is soft. Set aside to cool.Meanwhile, finely dice peppers using Santoku Knife. Chop onion using Food Chopper. Combine peppers and onion in Deep Covered Baker. Trim and finely dice chicken using Boning Knife. Add chicken, seasoning mix, remaining 1 tbsp oil and remaining 1/2 tsp salt to baker; mix well using Master Scraper. Microwave, covered, on HIGH 4 minutes; stir to separate chicken. Cover; microwave an additional 4-6 minutes or until chicken is cooked through.Meanwhile, gently squeeze cooled garlic from heads into batter bowl (discard skins); mash using Mix 'N Masher. Add beans and salsa to batter bowl. Transfer bean mixture to baker; mix well. Microwave, covered, on HIGH 5-7 minutes or until chili is heated through.

Boneless, skinless chicken breasts can be substituted for the chicken thighs, if desired.

MICROWAVE CHICKEN CACCIATORE
This is one of the few main dishes I cook completely in the microwave. It's easy, delicious and simple to adapt to ingredients on hand. If I don't have spaghetti sauce, I substitute a can of diced tomatoes, a can of tomato sauce, along with some basil, oregano, and a bay leaf. You can also cut the chicken into strips or chunks, depending on your preference.

Steps:
- Combine celery, peppers, onion, garlic and mushrooms with 1 T water and 1 T butter in a 2 quart microwave-safe dish.
- Cook uncovered on high for 3-4 minutes, stirring after every minute.
- Drain.
- Stir in spaghetti sauce, olives, tomato paste, salt and pepper.
- Slice chicken breasts in half lengthwise.
- Slide chicken into casserole dish with other ingredients, turning to coat with sauce.
- Arrange with meatiest portions out towards the outside of the dish.
- Cover and cook 10-12 minutes on high, or until chicken is cooked through.
- Serve over hot pasta or rice.

MICROWAVE CHICKEN CORDON BLEU
This is from Light & Tasty. I haven't tried it but it sounds interesting. It's made in the microwave. The original recipe states "1 envelope seasoned coating mix" so I guessed 8 ounces for the amount. I suppose you could use anything from a pre-packaged mix to cornflakes. I hope it's as good as it sounds!

Steps:
- Flatten each breast to 1/4" thickness.
- Put ham and cheese down the middle of each breast and roll up; secure with toothpicks.
- Place melted butter in shallow bowl and coating mix in another shallow bowl.
- Dip chicken in butter and then coating mix.
- Place each breast in a 2-qt. microwave-safe dish coated with cooking spray.
- Cover loosely and microwave on high for 5-7 minutes.
- Turn each breast over and cook for another 5-6 minutes or until juices run clear.
- Let stand for 5 minutes.
- Discard toothpicks before serving.

MICROWAVE CHILI
This is the chili I remember eating as a child before microwaves were invented. This can be made in the microwave in about 30 min. but I prefer making it on the stove and then simmering it for an hour or so. The oregano is optional, I myself do not use it. Serve what you need then freeze the rest. For quick defrosting and heating, divide into single servings and package in shallow freezer boxes or heat seal-able bags.

- Crumble ground beef into a 2 1/2 quart casserole. Add onion and celery. Microwave, uncovered, on high 4-6 minute or until meat is almost cooked, stirring after half the cooking time to break up meat. Drain.
- Add undrained tomatoes, kidney beans, tomato soup, chili powder, brown sugar, salt, pepper, cayenne, and oregano (optional). Microwave, covered, on high 5 minute Stir. Reduce power to medium. Mircowave, uncovered, 15-25 minute or until of desired consistency, stirring at least once. Makes about 2 quarts.

- Put the onion, garlic, butter and spices in a microwaveable container, give it a quick stir, then heat in the microwave on High for 30-40 secs. Leave to stand for 1 min, then add the chopped tomatoes, beans, stock cube and chocolate.
- Cover with cling film and pierce 3 times. Place some kitchen paper on your microwave turntable, put the container on top and cook for 2 mins on High. Stir well and leave to stand for 1 min. If your chilli starts to dry out, add some of the reserved tomato juice, but remember that it won't reduce as much in the microwave as it would on the hob.
- Cover and cook on Medium for a further 2 mins. Give it a good stir and allow to stand for 1 min before serving topped with soured cream and coriander, if you like.
