Steps:

  • Rub the rim of 4 rocks glasses with lime; dip in coarse salt. Fill three-quarters of the way with ice. Combine 1 cup tequila, 2/3 cup fresh lime juice, 1/3 cup orange-flavored liqueur and 2 teaspoons superfine sugar in a cocktail shaker. Shake well, then pour into the glasses. Garnish with lime.

Lime wedges, for rimming
Salt, for garnish
3 cups tequila
2 cups fresh lime juice, plus lime slices, for garnish
1 1/2 cups orange liqueur
1/4 cup agave syrup

Steps:

  • For the rim: Moisten the rim of the glasses with lime wedges and dip in the salt.
  • For the margarita: Combine the tequila, lime juice, orange liqueur and agave syrup in a large pitcher. Stir vigorously to combine. Pour over ice in the salt-rimmed glasses, garnish with a slice of lime and serve immediately.

1 (6 ounce) can frozen limeade concentrate, do not thaw
6 ounces tequila
2 ounces triple sec
2 fresh limes, juice of
lots ice cube
bar salt

Steps:

  • Put limeade into a blender container.
  • fill empty can with Tequila and add to blender.
  • fill can 1/3 full with Triple Sec.
  • add lime juice.
  • turn on blender and gradually add ice cubes,1-2 at a time, allowing the mixture to become slushy before adding more.
  • continue to add cubes until the entire blender container is full of Margarita.
  • serve in chilled glasses, rimmed with coarse, salt, if desired.

MANGO MARGARITA

1 1/4 pounds fresh mangoes
1 cup water
1/2 cup sugar
Gray salt
3 cups ice
1 1/2 cups Mango Margarita Mix
4 ounces tequila
2 ounces triple sec
Lime wedges
Mint Salt, recipe follows

Steps:

  • Peel and pit the mangoes and cut them into large chunks. Place the mango in a blender with the water, sugar, and a pinch of salt. Blend until smooth. Taste and add more sugar, if necessary.
  • Fill the blender with ice and add the Mango Margarita Mix, tequila, and triple sec. Blend until smooth. Rub the rim of a margarita glass with a lime wedge and dip into Mint Salt to coat rim. Fill glass and enjoy!
  • 1 cup fresh mint leaves
  • 1 cup gray salt or coarse sea salt
  • Clean and dry mint and roughly chop. With a mortar and pestle, crush equal parts fresh mint and salt.
  • Yield: about 1 cup salt

WHOLE CITRUS MARGARITAS

4 navel oranges, cut into 3/4-inch pieces
2 lemons, cut into 3/4-inch pieces
2 limes, cut into 3/4-inch pieces
1/2 cup superfine sugar
1/4 cup Cointreau
1/4 cup Triple Sec
1 1/2 cups good quality tequila (recommended: 100 percent agave)
10 cups ice
Fine salt, for the rims of the glasses
10 lime wedges

Steps:

  • Put the oranges, lemons, and limes through a juicer. Pour the juice into a large pitcher. Add the sugar and stir to dissolve. Then stir in the Cointreau, Triple Sec, and tequila.
  • To serve: Pour salt onto a small plate. Run a lime wedge around the top of each glass and dip the glass in the salt. Fill each glass halfway with ice and pour in the juice mixture. Garnish with a lime wedge and serve.
  • Chef's note: Farm freshness is the key here. Look for the citrus that is mostly in season and adjust the recipe. Tangerines, Meyer lemons, and key limes all have amazing flavor if you can find them.

50ml tequila
1 ½ tbsp lime juice, plus extra for the glass (1 lime should be sufficient)
1 tbsp triple sec
salt and slice of lime, to serve

Steps:

  • Put a little salt on a saucer, then wipe the rim of your martini glass with lime juice. Turn the glass upside down in the salt and twist to coat.
  • Stir the ingredients and a little ice together or put them in a cocktail shaker to combine. Strain into a chilled martini glass. Serve with a slice of lime.

0.5 (12 ounce) can triple sec
0.5 (12 ounce) can Rose's lime juice

  • In a large pitcher, stir all ingredients together, or mix first four in a blender, then pour in a pitcher, and stir in ginger ale and water.
  • Serve over lots of ice.
