4 cups baby spinach (about 2 ounces)
8 ounces sugar snap peas, trimmed and halved
1 orange bell pepper, cut into strips
1 10-ounce container yellow and/or red cocktail tomatoes, quartered
4 scallions, thinly sliced
1/2 cup fresh basil leaves, thinly sliced
2 cups shredded rotisserie chicken (skin removed)
1/2 cup salted roasted cashews, roughly chopped
Kosher salt and freshly ground pepper
2 cups cooked brown rice (thawed if frozen)

Steps:

  • Whisk the teriyaki sauce, peanut oil and 1/4 cup water in a large bowl until smooth. Add the spinach, snap peas, bell pepper, tomatoes, scallions, basil, chicken and cashews; toss to combine and season with salt and pepper.
  • Warm the rice in the microwave. Serve topped with the chicken-vegetable salad.

2 cups instant rice
olive oil
1 cup chopped red bell pepper
1 cup chopped green bell pepper
¼ teaspoon minced garlic

1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (15 ounce) can tomato sauce
½ (14.5 ounce) can diced tomatoes
½ tablespoon chili powder, or more to taste

Steps:

  • Stir water and rice together in a microwave-safe bowl. Cover and cook in the microwave on high for 8 minutes. Remove from the microwave, wait until water is fully absorbed, about 5 minutes, then fluff with a fork.
  • While rice is cooking, heat a large skillet over medium-high heat. Pour in just enough olive oil to coat the skillet. Add both bell peppers and garlic. Cook, stirring every so often, until the peppers are no longer hard and crunchy, about 10 minutes. Transfer peppers to a bowl.
  • Add ground turkey to the skillet and reduce heat to medium. Cook turkey, crumbling it up as you stir, until no longer pink, 7 to 10 minutes. Add cooked peppers, kidney beans, tomato sauce, diced tomatoes, chili powder, garlic powder, cumin, salt, and pepper to the skillet. Mix until everything is incorporated and heated through. Serve over rice.

1 tablespoon cornstarch
2 tablespoons warm water

Steps:

  • Mix soy sauce, 1/4 cup water, red wine vinegar, sugars, garlic and ginger in a small saucepan over medium heat. Stir with a whisk until sugar is dissolved.
  • In a small bowl, whisk together 2 tablespoons warm water and cornstarch until cornstarch is completely dissolved.
  • Heat sauce over medium high heat. Slowly whisk in cornstarch mixture and simmer until thickened. Remove from heat and set aside.
  • Heat vegetable oil in a large skillet over medium-high heat. Add diced onions and cook until soft.
  • Crumble ground turkey and garlic into the pan and cook until turkey is about half cooked. Add grated carrots and chopped broccoli and continue to cook until turkey is no longer pink.
  • Pour teriyaki sauce over cooked turkey and vegetable mixture and stir. Simmer for about five minutes to combine the flavors.
  • Spoon meat over rice or noodles. Garnish with green onions and serve immediately.

This isn't anything I'd claim as a "clone", but is "inspired" by Chipotle/QDoba's burrito bowls. It's tasty, easy and filling. As a bonus, it's pretty good without any meat, making it a really viable option to serve a mixed group of vegetarian/carnivores for a party.

1 tablespoon unsalted butter
1 1/3 cups basmati rice
2 cups water
2 limes
1 onion
2 garlic cloves
1 (10 ounce) can diced tomatoes with green chilies

1/4 cup white wine
2 cups pork or 2 cups steak
fresh cilantro
mexican cheese
salsa
sour cream
tortilla chips

Steps:

  • In a saucepan, combine the water, rice and juice from the 2 limes.
  • Bring rice mixture to a boil.
  • Reduce heat and simmer covered until all of the liquid is absorbed.
  • While the rice is cooking, chop the onion and the garlic.
  • In another saucepan, melt the butter.
  • Saute the onions and garlic until the onions are translucent.
  • Add the canned tomatoes, white wine and beans.
  • Simmer until most of the moisture boils off.
  • If including meat, dice up some grilled chicken or pork or steak.
  • To serve start with rice in bowl.
  • Top with bean/tomato mixture.
  • Top with meat if using and cheese, chopped cilantro, salsa, sour cream, etc.
  • Eat with chips.

1 14 oz can black beans, ( drained and rinsed)
1 cup plain tomato sauce
1 cup salsa
2 teaspoons chili powder

1 tbsp lime juice (up to 2 tbsp to taste)
1/3 cup cilantro (chopped + more for serving)
salt (to taste)

Steps:

Steps:

  • Press the SAUTE button.

2 cups instant rice
olive oil
1 cup chopped red bell pepper
1 cup chopped green bell pepper
¼ teaspoon minced garlic
1 pound ground turkey
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (15 ounce) can tomato sauce
½ (14.5 ounce) can diced tomatoes
½ tablespoon chili powder, or more to taste
1 teaspoon garlic powder
1 teaspoon ground cumin
salt and ground black pepper to taste

Steps:

  • Stir water and rice together in a microwave-safe bowl. Cover and cook in the microwave on high for 8 minutes. Remove from the microwave, wait until water is fully absorbed, about 5 minutes, then fluff with a fork.
  • While rice is cooking, heat a large skillet over medium-high heat. Pour in just enough olive oil to coat the skillet. Add both bell peppers and garlic. Cook, stirring every so often, until the peppers are no longer hard and crunchy, about 10 minutes. Transfer peppers to a bowl.
  • Add ground turkey to the skillet and reduce heat to medium. Cook turkey, crumbling it up as you stir, until no longer pink, 7 to 10 minutes. Add cooked peppers, kidney beans, tomato sauce, diced tomatoes, chili powder, garlic powder, cumin, salt, and pepper to the skillet. Mix until everything is incorporated and heated through. Serve over rice.
