Chinese Shredded Cabbage Stir-Fry image

Cabbage stir-fry is a really tasty dish that's savory, tangy, and very satisfying. Plus,this cabbage stir-fry is CHEAP and quick to prepare.

Number Of Ingredients 11

2 tablespoons oil
6 oz. pork belly ((170g, pork loin, or chicken, thinly sliced))
5 cloves garlic ((smashed and cut in half))
5 dried red chilies ((deseeded and roughly chopped))
1 1/2 lb. cabbage ((680g, hand-shredded into bite sized pieces, washed, and thoroughly dried))
2 teaspoons Shaoxing wine
1 tablespoon soy sauce
1/2 teaspoon sugar
1 tablespoon water
1/2 teaspoon Chinese black vinegar
2 scallions ((cut into 2-inch lengths))

Steps:

  • In a wok over high heat, add the oil. Sear the meat until caramelized. Add the garlic and chili, turn down the heat to medium, and stir-fry for a minute, taking care not to burn the garlic.
  • Add the cabbage, wine, soy sauce, sugar, and water. Turn up the heat to high, cover the lid and let the cabbage cook for 1-2 minutes. Uncover the lid, and stir in the black vinegar, scallions, and salt to taste. The cabbage should be wilted, but still slightly crunchy and caramelized. Serve hot!

Hand-Torn Flat Cabbage With Chinese Sausage and Garlic image

Number Of Ingredients 10

1 head flat cabbage (or substitute Chinese/Napa cabbage)
½ to 1 link Chinese sausage (spicy or sweet), thinly sliced on the diagonal (use amount to your liking)
1 tablespoon lard
1 tablespoon rapeseed oil or peanut oil
5-6 cloves garlic, large ones cut in half
2 chilies cut in ½-inch lengths (pickled or dried, or 1 fresh hot chili)
½ teaspoon Sichuan flower pepper (or another whole red Sichuan peppercorn)
½ cup flavorful chicken broth
¼ to ½ teaspoon kosher salt (to taste)
2 teaspoons cornstarch mixed with 2 tablespoons water

Steps:

  • Discard blemished outer leaves of cabbage and carefully peel off the leaves. Tear the leaves by hand into large pieces, about 3 inches wide. If using Napa cabbage, break bottom section of stalks in half vertically to make manageable pieces. Use most of a small head of cabbage, or as much as will fit in your wok.
  • Heat wok over a high flame until very hot, then lower heat to medium and add the lard and rapeseed oil (or a neutral cooking oil). Add sausage slices and stir-fry until pink disappears. Add garlic cloves, and move them around to insure they do not burn. Cook briefly, then add the chilies and Sichuan pepper. Allow aromatics to become fragrant, but do not brown.
  • Add the cabbage and stir-fry, turning the contents from bottom to top with a wok spatula until the pieces begin to shrink a bit. They will mostly fill the wok at first, but will shrink after about a minute.
  • Add the chicken broth to the wok and continue to flip the cabbage. Taste for salt, and add if needed. Cover wok with a lid and steam cabbage for about 2 minutes. When cabbage is done to your liking, stir in cornstarch slurry to thicken the sauce. Plate and serve warm.

SPICY STIR-FRIED CABBAGE

This is a vegetarian version of a classic Chinese stir-fry. The authentic versions I've encountered include some pork or bacon, but the chilies, ginger, garlic, star anise and the cabbage are flavorful enough without meat. I've added carrots for color.

4 garlic cloves, minced
2 teaspoons minced ginger
1/2 teaspoon red pepper flakes
1 star anise, broken in half
2 teaspoons soy sauce (more to taste)
2 tablespoons Shao Hsing rice wine or dry sherry
2 tablespoons peanut or canola oil
1 small cabbage, 1 to 1 1/2 pounds, quartered, cored and cut crosswise into 1/8-inch shreds
1 medium carrot, cut into julienne
Salt to taste
2 tablespoons minced chives, Chinese chives or cilantro

Steps:

  • Combine the garlic, ginger, red pepper flakes and star anise in a small bowl. Combine the soy sauce and wine or sherry in another small bowl.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic, ginger, pepper flakes and star anise. Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Cover and cook over high heat for one minute until just wilted. Uncover and stir-fry for another 30 seconds, then stir in the chives or cilantro and remove from the heat. The cabbage should be crisp-tender. Serve with rice or noodles.

TOMATO SAUCE:
1 large onion, chopped
1 medium head cabbage, coarsely chopped (about 8 cups)
1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup water
1/4 cup lemon juice
1/3 cup raisins
MEATBALLS:
1/2 cup uncooked long grain rice
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground beef (90% lean)

Steps:

  • In a large skillet, combine sauce ingredients. Bring to a boil; reduce heat and simmer. , Meanwhile, in a large bowl, combine the rice, Worcestershire sauce, salt and pepper. Crumble beef over rice mixture; mix lightly but thoroughly. Shape into 36 balls, about 1-1/4 in. in diameter. Add to simmering sauce. , Cover and simmer about 45 minutes or until the cabbage is tender. Uncover and cook for 15 minutes longer or until sauce is thickened.
