Quick and Easy Bacon Granola- the most over-the-top delicious combo of sweet and salty!

2 tablespoons coconut oil
3 tablespoons pure maple syrup
1 teaspoon vanilla
1 teaspoon cinnamon
1-1/4 cups old fashioned oats (gluten-free, if needed)
1/2 cup almonds (coarsely chopped (I used Blue Diamond Oven Roasted Dark Chocolate Almonds))
2 strips cooked and cooled bacon (crumbled or finely chopped (I used a variety of turkey bacon with no nitrates or antibiotics))

Steps:

  • In a large skillet over medium-high heat, cook bacon until desired doneness.
  • Lower heat to medium and in the same skillet, melt coconut oil. Quickly stir in pure maple syrup, vanilla, and cinnamon. Add oats and cook for about 5 minutes, stirring frequently. Add almonds and bacon and cook for 1-2 minutes more, stirring constantly.
  • Remove from heat and let granola sit for 1-2 minutes, letting it cool and become crunchy.
  • Store in an airtight container or serve immediately over warm oatmeal, yogurt, with milk or just alone. Enjoy!

8 slices thick-cut bacon
2 cups unsweetened coconut chips
½ cup ground flaxseed
1 cup rolled oats
1 cup sunflower seeds
½ cup pecans (chopped)
½ cup hazelnuts (chopped)
½ cup sliced almonds
⅓ cup coconut or canola oil
⅓ cup pure maple syrup
½ teaspoon cinnamon
¼ teaspoon kosher salt
1 large egg white
½ cup pitted dates (sliced)

Steps:

  • Heat oven to 325ºF. Cook bacon until done, but not crisp, and chop into small pieces.
  • In a large bowl mix the bacon, coconut chips, flaxseed, oats, sunflower seeds and nuts.
  • In a small saucepan heat the oil, syrup, cinnamon and salt. Pour over the nut mixture and combine. Mix in the egg white and spread granola on a baking sheet. Bake until it is dried out a bit, for 20 to 25 min, then let cool 20 min on the pan. Stir in dates. Store in an airtight container, in the refrigerator, for up to 5 days.

1/2 cup water
4 teaspoons pure vanilla extract
1 teaspoon salt
8 cups rolled oats
2 cup chopped pecans or walnuts, or slivered almonds

Steps:

  • Preheat oven to 275 degrees F.
  • Line 2 cookie sheets with parchment paper and reserve.
  • Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. Remove from microwave, add vanilla extract and salt.
  • In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy.
  • When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time. When granola has cooled completely, store in an airtight container.

2 teaspoons canola oil
6 thin slices bacon
1 cup clover honey
1/4 cup plus 2 tablespoons pure maple syrup
1/2 cup light brown sugar
1/2 cup vegetable oil
1 1/2 tablespoons ground cinnamon
1 1/2 tablespoons pure vanilla extract
1/2 teaspoon kosher salt
4 1/4 cups rolled oats (not quick cooking)
3/4 cup sliced almonds
3/4 cup chopped pecans
1/4 cup hulled sunflower seeds

Steps:

  • Preheat the oven to 300 degrees. Heat the oil in a large saute pan over medium heat, add the bacon and cook until golden brown and crispy on both sides, about 8 minutes. Remove to a plate lined with paper towels to cool slightly, then coarsely chop. Reserve 1/4 cup of the rendered bacon fat.
  • In a medium saucepan over high heat, cook the honey, maple syrup, brown sugar, vegetable oil, reserved bacon fat and cinnamon, whisking occasionally, until smooth and the sugar has dissolved, about 5 minutes. Remove from the heat and whisk in the vanilla and salt.
  • Line a half sheet pan with parchment paper or spray with nonstick spray. Combine the oats, almonds, pecans, sunflower seeds and chopped bacon in a large bowl. Pour the honey mixture over and mix well to combine. Spread the mixture onto the prepared baking sheet (or two sheets if needed) in an even layer. Bake for 20 minutes, then stir and bake for another 10 to 15 minutes, until light golden brown. Let cool on a wire rack for about 15 minutes.
  • Store the granola in containers with tightfitting lids in a cool, dry place. The granola will keep for up to 1 week.

  • Heat oven to 350°F
  • In large bowl, stir together all ingredients.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.

4 cups old fashioned oats
3 tablespoons ground flax seeds
3 tablespoons wheat germ (oat bran, etc)
1/2 cup chopped almonds (substitute as desired)
1/2 cup chopped pecans
1/2 teaspoon salt
1/2 cup brown sugar
1/4 cup honey (maple syrup or corn syrup also work)
2 tablespoons vegetable oil
1 egg white (2-3T in volume)
1 cup dried fruit (berries, raisins, chopped apricots, etc)

Steps:

  • Heat oven to 300°F.
  • Mix oats, flax, wheat germ, almonds, pecans, salt and brown sugar in a large bowl. Wisk to combine the oil, honey and egg white, then pour over the oat mixture. Stir well until ingredients are evenly coated. It may seem too dry but keep stirring.
  • Spray oil on a jelly roll pan and add the granola mixture. Bake 20-30 minutes, until the edges are browned and it smells toasty. To make clumps don't stir during baking. Cool and allow the granola to harden. Break into smaller pieces and add the fruit. Store airtight for two weeks.
  • The dried fruit may hydrate the granola so it loses some of its crunch. If so just pop it back in a 300F oven for about 10 minutes.

"Make sure to press forcefully when packing the granola mixture into the pan; otherwise the bars may be crumbly once cut. If you like, add up to ½ cup of wheat germ and ¾ cup of sunflower seeds to the oats after toasting. And feel free to add your favorite spice: grated nutmeg and ground ginger are pleasant additions to the suggested cinnamon. The bars can be effectively stored in the rimmed baking sheet, wrapped tightly in plastic wrap, or in an airtight plastic container for up to 1 week." I found this recipe on the Cook's Illustrated web site. I haven't made it yet so if you make them before I do, please review and let us all know how they turn out. It sounds really good so I wanted to save it where I can find it later.

1/2 cup vegetable oil
1/2 teaspoon salt

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 375 degrees. Line an 18 by 12-inch rimmed baking sheet with aluminum foil. Combine the oats, oil, and salt in a large bowl and mix until the oats are evenly coated. Transfer the mixture to the baking sheet (save the mixing bowl for use in step 3) and spread into an even layer. Bake, stirring every 10 minutes, until pale gold, about 30 minutes. Remove the oats and lower the oven temperature to 300 degrees.
  • Place the nuts in a food processor and process until coarsely chopped, about ten 1-second pulses. Place ¾ cup of the nuts in a small bowl and process the remaining nuts until finely ground, 20 to 30 seconds. Add the finely ground nuts to the bowl with the coarsely chopped nuts and set aside. Combine the honey and brown sugar in a small saucepan over medium heat and cook, stirring frequently, until the sugar is fully dissolved, about 5 minutes.   • Combine the oats, nuts, and honey mixture in a large bowl and stir with a large rubber spatula until the oats are evenly coated with the honey mixture. Transfer the mixture to the prepared baking sheet and spread in an even layer. Wet the spatula with water and forcefully pack the mixture into a very flat, tight, even layer. QUICK 'N' CRUNCHY GRANOLA

Granola is my family's favorite cereal but we rarely buy it from the store because it's so expensive. So I decided to try and make my own. We will never buy granola from the store again! This is so easy and delicious; everyone should try it! Some of my family members mix in raisins or almonds just before eating (no need to bake them.) But remember you MUST STIR the granola after it bakes for 10 minutes. I didn't read the recipe carefully and burnt my first batch. Enjoy.;)

1 1/2 cups unsalted nuts (sunflower, almonds, cashews)
1 -1 1/2 cup flaked coconut
1/4 cup sesame seeds (optional)

2/3 cup water
1 teaspoon real vanilla extract
1/4 teaspoon salt
2/3 cup honey (I use clover honey)

Steps:

  • Preheat oven to 325 degrees F. In a large bowl, mix together the ingredients for Oat Mixture.
  • In a small to medium bowl, separately mix together the first 4 ingredients for Oil Mixture.
  • Add Oil Mixture (not the honey yet) to the Oat Mixture; blend well.
  • Then add in the honey. Mix well.
  • Spread thinly and evenly on cookie sheets (for ease of preparation, use rimmed cookie sheets).
  • Bake at 325 d F for 30 minutes, stirring occasionally until golden (stir @ every 12-15 minutes).
  • After baking, remove from oven and let granola cool on cookie sheets.
  • Remove granola from cooled pans and it's ready to eat, or store covered for about 2 weeks.
  • Makes a nice food gift.
  • Yield is approximate & depends on amounts used.

But notice how you can't seem to get everything you want in a granola bar without sacrificing the healthy aspects. 1/3 cup peanut butter, melted

Steps:

  • To toast oats spread them on an ungreased cookie sheet and bake at 350F for 10-15 minutes or until just golden.
  • Mix all ingredients.
  • Firmly press into a cookie sheet or jellyroll pan lined with grease parchment paper.
  • Bake at 350F for 15-20 minutes.
  • Cool completely and cut.
