MARBLE POUND CAKE
This Marble Pound Cake is tasty and beautiful! Moist chocolate cake swirled with vanilla cake batter, an easy marble cake baked in just 60 minutes.

Steps:
- Preheat oven to 350 degrees.
- Grease a 9 inch by 5 inch loaf pan and line it with parchment paper; grease the parchment paper as well.
- Melt 3 tablespoons of butter in the microwave, using 30 second increments until fully melted. Mix the cocoa powder into the melted butter until well combined.
- Mix the flour, baking powder, and salt in a separate bowl.
- Using a mixer, combine the remaining 12 tablespoons of softened butter with the sugar. Add the eggs and vanilla and mix well.
- Gradually mix in the flour mixture to the batter.
- Mix the milk into the batter.
- Take half of the batter and mix it into the butter-cocoa mixture until fully combined.
- Pour the cocoa batter into the loaf pan.
- Gently spoon the yellow cake batter into the loaf pan.
- Using a the tip of a knife swirl the batter gently for a few seconds.
- Cover the loaf pan with aluminum foil and bake for 30 minutes.
- Uncover and bake for an additional 30 minutes.
- Let cool before removing from loaf pan.

- Lay butter and eggs out to get room temperature for 30-45 minutes before beginning the cake. Generously grease and flour a large 10-cup tube cake pan. In a very large mixing bowl and using a mixer on medium speed, beat the butter until creamy and pale colored, about 5 minutes. Gradually beat in the sugar until all of it has been incorporated and the texture is light and fluffy and almost white in color. Beat in one egg at a time, mixing just until each egg is blended. On low speed, add the flour to the creamed mixture alternately with the milk, beginning and ending with the flour. (1 c flour, 1/4 c milk, 1 c flour, 1/4 c milk, 1 c flour, 1/4 c milk, remaining 1 c flour). Stir in both extracts* (see note at end first). Preheat oven to 300 degrees F. Pour batter into prepared tube pan and bake on center rack of oven for 1 hr 30-40 minutes, or until center tests done with a long wooden toothpick or skewer. Cool in pan on a wire rack for 15 minutes then remove cake to cool completely on the wire rack. Store covered at room temperature. Serve with whipped cream/whipped topping, chocolate syrup, fresh berries, or my favorite, vanilla ice cream! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ For the optional chocolate batter: *Omit the almond extract from the cake batter above. Remove about HALF the batter to another mixing bowl; then whisk in 1/4 cup cocoa powder just until combined. Alternately add the two bowls of batter to the prepared tube pan and bake as directed above.
FABULOUS MARBLE POUND CAKE
This fabulous classic pound cake is anything but boring. Moist and delicious, the way pound cake should be. Adapted from Montreal pastry chef, Marcy Goldman. MAKE AHEAD: Wrapped in foil the cake will keep in the refrigerator for 1 week or frozen for up to 2 months.

- Preheat the oven to 350°.
- Spray an 8" X 4" bread pan with non-stick cooking spray and line the pan with parchment paper. Spray the paper.
- Mix flour, baking powder and salt in a medium mixing bowl. In a separate bowl, combine the melted butter with the cocoa and blend until smooth.
- Using a food processor, mix the softened butter with the granulated sugar. When combined, add eggs and vanilla and continue to process until creamy. Add the dry ingredients and pulse until JUST combined. Finally, add cream and process until smooth. Add 1 cup of this batter to the bowl with the cocoa and stir until smooth.
- Pour half of the remaining batter into the prepared pan and smooth the surface with the back of a spoon. Spread the chocolate batter in the pan and then top with the rest of the batter. Using a butter knife, decoratively cut 5 swirls in the batter.
- Bake for 25 minutes at 350°. Reduce the temperature to 325° and bake for an additional 25 minutes. Loosely cover with foil and bake 15 to 20 minutes longer, or until the top is lightly browned and a toothpick inserted in the center comes out with moist crumbs attached. Let the pound cake cool in the pan for 10 minutes before removing. Let cool completely on a wire rack. Dust with confectioners' sugar before serving.

- Cream the butter; gradually add sugar, beating at medium speed of an electric mix until light and fluffy.
- Add the eggs, one at a time, beating after each addition.
- Add the flour to butter mixture alternately with the milk, beginning and ending with flour mixture.
- Mix after each addition.
- Stir in almond and vanilla extracts.
- Pour the batter into a greased and floured 10-inch tube pan.
- Bake at 300 degrees for 1 hour and 40 minutes or until a wooden pick inserted in the center of the cake comes out clean.
- Cool in pan for 10 to 15 minutes.
- Remove to wire rack.
- Cool completely.
MILLION DOLLAR POUND CAKE (MY VERSION)
I made this pond cake based on Southern Living's Million Dollar Pound Cake recipe, but had to sub a couple of ingredients so that I could use what I had onhand. It turned out pretty decent, so I am writing it down here before I forget what I did! Just a couple of notes: 1) Since this cake has no baking powder or baking soda, I make sure the butter, sugar, and eggs cream together for quite a while to incorperate air into mixture-- anywhere from 5 to 10 minutes. 2) The bake time is what was indicated on the original recipe, but I find it takes about 10 more minutes in my oven.

- In a larger mixing bowl, cream the butter with the sugar. Add the eggs, one at a time, and cream mixture until light and fluffy-- 5 to 10 minutes.
- Add the flour alternately with the evaporated milk, beginning and ending with the flour. Pour into a greased and floured tube cake pan. Place pan on a cookie sheet and put into a preheated 300 degree oven.
- Bake until toothpick inserted comes out clean, anywhere from 1 hour 40 minutes to 1 hour 55 minutes.
- Let cake cool in pan for 10-15 minutes before turning out of pan to cool completely on a rack. Flavors are even better the next day.

- Preheat the oven to 350°F. Butter the sides and bottom of a loaf pan. Line the bottom with parchment paper cut to fit.
- In the bowl of an electric mixer, using the paddle attachment, beat the butter on medium-high speed until creamy, about 3 minutes. Add the sugar and continue beating until well combined and fluffy, another 2 minutes.
- Combine the flour, baking powder, and salt in a bowl. Break the eggs into another bowl. Add half of the eggs and half of the sifted flour mixture to the butter mixture, beating on medium-low speed until well combined, scraping down the sides of the bowl with a rubber spatula as needed.
- Add the sour cream and continue beating until the mixture is smooth. Set the batter aside. In a small bowl, combine the hot water with the cocoa powder.
- Pour half the cake batter into another bowl and fold in the cocoa-water mixture with a rubber spatula until thoroughly mixed.
