5 plum tomatoes, diced small
1 clove garlic, finely chopped
4 tablespoons good extra-virgin olive oil, plus 1 tablespoon for serving
Pinch of red pepper flakes
1/4 cup fresh basil leaves, sliced into ribbons
1 tablespoon balsamic vinegar
1/2 baguette, sliced into 1/2-inch rounds (about 14 slices)

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the tomatoes, garlic, 3 tablespoons extra-virgin olive oil, red pepper flakes, basil and balsamic vinegar to a bowl. Season with salt and pepper. Let sit at room temperature while you toast the bread.
  • Slice bread and add to a baking sheet in a single layer. Toast in the oven until golden brown about 5 minutes. Top the bread with tomatoes and drizzle with remaining extra-virgin olive oil right before serving.

12 slices (1/2 inch thick) Italian bread
1/4 cup olive oil
2 cloves garlic, skins removed
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 cup shredded Cheddar cheese or Italian cheese blend
1 tablespoon grated lemon peel

Steps:

  • Heat oven to 375°F.
  • Place bread slices on ungreased cookie sheet. Drizzle 1 teaspoon olive oil over each slice of bread.
  • Bake 6 to 8 minutes or until golden brown.
  • While hot, gently rub peeled garlic over each bread slice, then place back on cookie sheet.
  • In small bowl, stir drained tomatoes, salt and pepper. Spoon tomatoes onto bread slices, and top with cheese.
  • Bake 2 to 3 minutes or until cheese is melted. Serve warm topped with lemon peel.

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

1 large eggplant (1 1/2 to 2 pounds)
8 tablespoons extra-virgin olive oil
1 1/2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 shallots, peeled and chopped
2 roasted red peppers, chopped
4 cloves garlic, peeled and grated
1/4 teaspoon cayenne pepper
One 28-ounce can diced tomatoes
Grilled sourdough bread, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Partially peel the outside of the eggplant, leaving 1 1/2- to 2-inch strips of skin intact, creating alternating stripes of flesh and skin. Cut the eggplant into 2-inch cubes and add it to a rimmed baking sheet. Drizzle the eggplant with 6 tablespoons of the olive oil, sprinkle with 1/2 teaspoon smoked paprika, 1 teaspoon salt and 1/2 teaspoon pepper. Transfer the eggplant to the oven and roast for 40 minutes, flipping halfway through. After 40 minutes the eggplant should be very tender and browned.
  • In the meantime, heat a high-sided skillet over medium heat. Add the remaining 2 tablespoons of olive oil and then the shallots and cook, stirring frequently, until the shallot has softened, about 5 minutes. Next, add the red pepper and garlic and stir to combine. Add the remaining 1 teaspoon smoked paprika, cayenne and 3/4 teaspoon salt. Stir to coat the vegetables in the spices. Add the tomatoes and bring the mixture to a boil. Turn the heat down to low and simmer for 25 minutes.
  • Add the cooked eggplant to the tomato mixture and stir to combine, slightly mashing the eggplant into the sauce. Transfer the mixture to a bowl and serve with grilled sourdough.

6 roma tomatoes, diced
2 cloves garlic, chopped
2 cloves garlic, peeled
3 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
8 slices Italian bread, cut about 1 inch thick
2 tablespoons grated parmigiano-reggiano cheese

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.

1 large ear of yellow corn, husked
1 small red onion (about 6 ounces), peeled, halved through root end
Olive oil (for grilling)
1 1/2 pounds medium tomatoes (such as cluster or vine-ripened; do not use heirloom; about 5)
1 small country bread, sliced
1 garlic clove, minced
1 tablespoon fresh lime juice
1/8 teaspoon hot smoked Spanish paprika*
1 tablespoon olive oil
*Spicy smoked paprika, sometimes labeled hot Pimentón or hot Pimentón de La Vera; available at specialty foods stores and from tienda.com.

Steps:

  • Prepare barbecue (medium heat). Brush corn and onion with oil; sprinkle lightly with salt and pepper. Place corn, onion halves, and tomatoes on grill. Cook until corn is charred, onion is just tender, and tomato skins are blistered and loose, turning often, about 12 minutes for tomatoes and 15 minutes for corn and onion. Transfer to foil-lined baking sheet and cool. Brush bread with oil; sprinkle with salt and pepper. Grill until crisp, about 2 minutes per side. Core tomatoes and cut in half horizontally. Gently squeeze out or spoon out juices and seeds. Coarsely dice tomato flesh and place in medium bowl. Cut corn kernels from cob; add kernels to tomatoes. Chop onion; add to tomatoes. Mix in garlic, lime juice, paprika, and 1 tablespoon oil. Season to taste with salt and pepper. DO AHEAD Can be made 3 hours ahead. Cover; let stand at room temperature. Serve with grilled bread.

1 cup fresh tomato, chopped
1/2 cup carrot, grated
1/2 cup thinly sliced white onion
1/4 lb smoked salmon

1 teaspoon lemon juice
8 -10 slices French bread
2 tablespoons butter

Steps:

  • Mash the avocados together. Add the chopped tomatoes, grated carrots, crushed fennel seeds, salt and pepper, and lemon juice. Mix well.
  • Thinly butter each slice of French bread, and toast it in the oven for 2 minutes.
  • After taking out the French bread slices, add one piece of smoked salmon to each slice.
  • Top the French bread and salmon with one or two slices of white onion, as desired.
  • Adding as a third layer of topping the tomato-avocado mix.
  • Serve one or two per person.
