CROCK POT MEXI-MEATBALL RICE SOUP
A simple and comforting crock pot soup. It's so easy that the only work you have to do is chop the onions and cilantro; the rest is a "dump and go"! Recipe is very adjustable to fit everyone's diet preferences: if you're watching your fat intake and/or are watching carbs, use cooked turkey meatballs, omit the rice and use low fat or fat free toppings. You can also use low sodium broth and tomatoes, if watching your salt intake.

I have not made this recipe yet, but it sounds so good I want it here for safe-keeping. It sounds so simple, too; just combine everything in the crockpot and cook. Recipe from Sandra Lee.

MEATBALLS MEXICANA AND RICE
I got a basic recipe for this from a friend many years ago. Since then, I've tweaked it to fit my family's taste. It sounds like a lot of work, but it really isn't. We find that this is one of our favorite recipes.

MEXICAN MEATBALL SOUP - ALBONDIGAS
This is a great savory meat and vegetable soup with Mexican spices. I usually throw in some Spanish rice and serve with warm tortillas to dip in. My 4yo DD says it's Go Diego Go Soup. :)

MEATBALL & RICE SOUP
This recipe came from the TACA website and is gluten-free. It is also low in sodium. Very easy to make meatballs in advance and freeze them. Sometimes I only use half the meatballs from this recipe, and freeze the other half for another soup recipe. Great way to use the left over rice from Chinese take-out!
